Sweet soy sauce, also called ketjap manis should be available in most large stores or Asian stores. If you can't find it, just use dark soy sauce mixed with a little clear, runny honey instead. -- posted by English_Rose

Sweet Dairy Free Potato Leek Soup

Dairy free potato leek soup with a special twist. This is full of flavor and with not much hand chopping. Quick to make, nutritious and filling. If you have beef bones to make your own stock, it really comes out with a full flavor. Adjust salt to taste. There is no pureeing in this soup, rather finer chopping helps it to be on the "creamier" side. -- posted by RussianMama

Tasty Cheddar Cabbage Gratin

I modified a recipe in The Joy of Cooking to make this, which suited our tastes better (and used things I actually had in the house!). I think this would even be a hit with people who don't usually like cabbage.

For the "milk or light cream" I used 1/2 cup skim milk and 1/2 cup fat-free half-and-half. I actually used a bag of cole slaw mix (shredded cabbage and carrots) for the cabbage, so this was REALLY quick to make! -- posted by mayness

Creamy Leftover Chicken Surprise

I invented this recipe a long time ago and make it when I have leftover chicken. It's quick and made with simple ingredients. Feel free to make substitutions and experiment with it. Fresh or frozen broccoli. Cream of chicken soup or cream of mushroom. Any type of cooked chicken will do, but I prefer breast. If the leftover chicken has been marinated or seasoned, it will be a bonus. Any type of small pasta. Cheeses are flexible as well. I often use a combination of whatever I have on hand. Just be sure its sliced or shredded so that it melts quickly. It's a great all in one meal to keep on the stove on nights when family members are coming and going at different times. -- posted by veggienut

Accidentally the Best Baked Chicken Nuggets Ever

Accidentally discovered this while playing around with Chinese restaurant classics. My nugget-expert daughter loved them. I use the marinade from http://www.recipezaar.com/Sweet-and-Sour-Pork-43587 (minus the extra salt) and the flouring and baking technique from http://www.recipezaar.com/Baked-Lemon-Chicken-With-Chinese-Lemon-Sauce-194890.
Mennonite Soft White Cookies

A sugar cookie that is not too sweet, but deliciously soft! I was served cookies like these by a Mennonite couple, and searched desperately for the recipe until I found this one on a Mennonite cooking website! They've been a big hit wherever I've taken them, and they're a family favourite! I've modified the recipe to have coconut on top, like they were first served
to me. If necessary, add an extra 1/4-1/2 cup of flour to keep the dough from being too sticky, and if you don't have buttermilk, use 1 cup milk + 1 tsp. vinegar and let stand for 5 minutes before use. The measurements for the icing are approximate, as I don't usually measure the amounts exactly and they aren't given on the recipe site; make more if you need/like more! Enjoy! -- posted by Nimmireth

Individual Berry Crisps

This is an Alton Brown recipe that is sooo simple to make. It was definetly a crowd pleaser at our house, everyone gobbled these down after dinner ^.^. I used Special K pecan cinnamon cereal in my topping(it's what I had on hand), but next time around I think I'll try the gingersnaps! The serving says 4 but I had tons of extra topping so I ended up with 5 small ramekins of the berry mixture, and one larger one with an apple filling for the hubbs. -- posted by Chef #488454

Bisquick Chocolate Chip Cookies- Just 6 Ingredients!

Classic comfort food. I remember making these in home ec back in the day. God I hated junior high and would never want to relive that torture: but those cookies were good! That good to make me want to remember it. And we didn't keep Bisquick in my house so it was an especially great delight for me. Makes about 16-24 cookies depending on how big you make them. They may not taste as fine as pure from scratch cookies, but they still taste good and are a time-tested kid pleaser. Can sub vegetable oil or shortening for the butter but the butter tastes better. And to make these a tad fancier, I suggest using 1/2 tsp vanilla and 1/2 tsp almond extract. -- posted by the80srule
