No-Yolk Chocolate Fudge Cake

This is being posted in response to a request for a Passover cake. The recipe is originally found in the Let My People Eat cookbook. The description indicates it has a lot of flavor and little cholesterol. Cake may fall a little as it cools. The cake may also be prepared 2-3 days in advance and glazing should be done on the day the cake is being served. Cook time includes refrigerator time. Actual prep and cooling time are unknown. -- posted by Ducky

Passover Chocolate Torte

Passover recipes are always full of beaten egg whites. The first few Passovers I was married I didn't have an electric mixer kosher for Passover, and I would beat those egg whites by hand. It gave me a really good workout each year, considering how many egg whites you can beat over the 7/8 day holiday. After a few years I got smart and finally bought an electric mixer. I stopped getting my workout, and started baking more cakes. I always gain weight over the holiday, sigh... -- posted by Mirj

Chocolate Espresso Torte

This is a flourless, rich, dense cake which is as creamy as cheesecake- so serve tiny slices. It is a passover recipe (just make sure to dust the pan with Passover cake meal instead of flour) but would be delicious year round. Enjoy! -- posted by Miraklegirl

Lemon Chiffon Cake with Strawberry Sauce

This is a wonderfully easy cake to make for Passover. It has a nice light lemon taste and the strawberry sauce is a great compliment. However, feel free to use the sauce of your choice or other accompaniment. Serve the sauce warm or at room temperature. The sauce can be made several days ahead and brought to room temperature to serve. The sauce makes 2 cups. I let each person apply their own sauce rather than pouring over the entire cake. This recipe was originally found in the "Let My People Eat!" cookbook. -- posted by Ducky

Aunt Ida's Passover Sponge Cake

Credit is given to Sandra Levine for her Aunt Ida's Sponge Cake. I came across this recipe that was posted on another site in March 2002 and it received great reviews. This cake is said to be good enough to be enjoyed all year long and I can hardly wait to bake it for seder #1. Now it can be said - since I made this cake for the 1st seder, I would not hesitate to make it again. The cake had a great light texture and tasted great; it was MOIST, it rose up quite high and everyone raved about it. Next time I make this, I will cut out and add a piece of parchment paper on the bottom of the pan, since it did stick ever so slightly. And also very important if you are making an additional 8" or 9" cake, only bake it for 25-30 minutes. -- posted by Jodi B.

High Voltage Chocolate Orange Dessert (no Flour)

Chocolate, Cointreau, almonds, what more could you ask for in a dessert? I found this recipe in the New York Daily News, have adapted it to what makes me happy. I use soy milk and margarine so the recipe is not dairy at all, but you can use milk (or cream) and butter instead. -- posted by Mirj

I love chocolate cakes (so does my hips......)This cake is rather rich, slightly decadent but sooooo yummy. Note re powdered sugar: If kosher-for-Passover powdered sugar is unavailable, you can pulverize granulated sugar in a blender. -- posted by coconutty

Torte Bohème (Kosher for Passover)

A chocolate-walnut cake with bittersweet mocha icing that has been one of my favorites for many years. The cake will be fragile when it comes out of the oven, so it is preferable to freeze or refrigerate it for a day or so to firm it up. This cake freezes very well. -- posted by coconutty

Adapted from Chuck Williams Collection, Simple French Cooking, by Chuck Williams (Time-Life Books, 1996). With the onset of Valentine's Day this recipe sounds like a "chocoholics" dream! Served with fresh raspberries and whipped cream topping, how could anyone complain? Diana's Desserts is where I found this yummy-looking & sounding dessert. This is also great for Passover.
I'm not a fan of any of the desserts my family has always made for Passover, but this one I like. I've found that it doesn't make enough batter to really cover all of the apples on the top layer, but it still works for me.
Fairmont Empress Hotel Chocolate Italiano Cake

The recipe for this sinfully decadent cake was graciously given to me by Chef Takashi Ito, Executive Chef of The Fairmont Empress Hotel in Victoria, BC, Canada. I went on a hunt for my friend, Chef # 777765, affectionately known as "Seven" in the Kid's Cooking Forum. The story, as I understand it, is that Seven and her husband visited the Empress more than 10 years ago and ate at Kipling's Restaurant in the Hotel. Seven is not a sweet eater, but she tried this dessert anyway, and has been dreaming of it ever since. Kipling's Restaurant has since been closed and re-opened under a new name. Seven mentioned the Chocolate Italiano Cake in one of the forums and I decided to try to get my hands on the recipe for her. -- posted by J.
Mock Chestnut Torte (Passover Cake)

This recipe is from the wonderful cookbook, "A Treasury of Jewish Holiday Baking", by Marcy Goldman. This pareve Pesach cake tastes like a rich but light chocolate cheesecake. It's wonderful with or without the glaze. If you don't mind a dairy cake, it's also excellent with a regular ganache (with cream, etc...). Kids will LOVE this and won't even know they're eating a vegetable (you cannot taste the sweet potatoes). Enjoy!

You can also serve this in squares, as French-style "petit fours." The glaze slicks this up but is not necessary — a dusting of cocoa is just fine. -- posted by blucoat

Passover Banana Bread

This year I finally figured out the secret to converting a regular cake recipe to a Passover cake recipe! The secret is that when you replace the flour in the recipe with matzo meal, you sub 40% of it with something else, like shredded coconut or ground nuts. This way you avoid baking a brick (like the ones our ancestors made during the slavery in Egypt!).
The bananas in this recipe also help to moisten the cake. -- posted by GalicioBocharit

If you want to keep the cake pareve, or if you intend to serve it several times, leave it unfrosted. -- posted by Chef #1298498

This is an unusual one layer cake. It can be used for Passover or as an intriguing dessert or coffee cake at any time. I got this from my friend Irene Lawrence, and artist who always knows exotic things. -- posted by Chef Elaine C.
