Marinated Balsamic Bean Salad

Not Your Grandma's Three Bean Salad

This isn't even remotely like the usual sweet and sour salad... this one has feta cheese, tomatoes and yes, three types of beans, in a light lemon juice vinaigrette. It's from one of those "bargain bin cookbooks" at a big chain bookstore and it makes a great vegetarian main-dish type salad. -- posted by EdsGirlAngie

The cold left-overs (if any) the next day are FABULOUS! TRY THIS WITH CHICKEN!! Grill 4 Chx breasts 4-5 min ea side, then finish in 350 degree oven in covered pan with butter & olive oil for +/-20 min. OH!
Danielle's Mexican Layer Dip

This dip is so easy to make and everyone loves it! At every potluck, if I don't bring it, my invitation is immediately revoked! A good friend made this one night for a 'girl's night' at her house. I adjusted the ingredients a bit, and the rest is history. I like to make this the night before so the flavors have a chance to develop.
Mexican Pasta Salad With Salsa

Very different from the other pasta salads already posted here. Got this from makesameal.com. Very simple to make with few ingredients. You could get creative and add more ingredients like corn, beans, and olives but this is a good base. Nice for the warmer weather. We loved this. I used Miracle Whip, which I like better in this salad, and 2 cloves garlic for mine. Mild salsa goes down better with my kids but use a stronger one if you like. -- posted by Oolala

Artichoke Potato Salad

This potato salad is a nice change of pace from the ones containing mayonnaise. This goes really well with BBQ'd foods and the nice thing is you don't have to worry about it so much in hot weather because of the lack of mayo.
Red, White and Blue Jello Shots

EDIT: I've edited this to improve the coconut shots. Also, Jello has started to make "Limited Edition" Pina Colada flavored jello which is perfect for the white ones.
Cherry-Red Raspberry Pie

I watched the National Pie Championships held by the American Pie Council on TV last night and had to look this recipe up today! It was torture watching the judges eat this delicious looking pie! They raved about her crust as well. This pie won "Best of Show" for Phyllis Bartholomew. In fact she pretty much cleaned up in all the categories. It looks pretty simple and clear-cut, I guess this is a good example of less is more. Her recipe uses canned sour cherries, but if you wish to substitute fresh sweet cherries, you can always reduce the amount of sugar and add a little lemon juice to taste...it should work fine with this recipe. This pie is extra pretty with a lattice top. -- posted by NcMysteryShopper

Sweet Tea Chicken

I'm from the South. Plain and simple, I love all Southern food. When I came across this recipe, I had to put it in my files because it just sounded Southern. I will admit, I haven't tried it yet because I just came across it not too long ago, but it is on the docket for the next time I have an important dinner guest. This was the introduction on the site (and I can't remember which one it was) where I found this. "John Fleer is a thinking man's chef, a onetime doctoral candidate in religion who chucked it all for a career in the kitchen. One of the best ideas to spring from his mind is this brined chicken, which manages to pay tribute to the traditional South of days past and the multicultural South still on the horizon." -- posted by Redneck Epicurean

Cucumber Dill Pasta Salad

There are lots of pasta salad recipes here but I don't see this particular variation. I love dill in most anything and combined with cucumbers and pasta, it's tart/creamy comfort food to me. For even more color & crunch, radishes could be added for another twist. You may need to adjust the mayo and sour cream amounts - I don't really measure it so I've guessed. I start with a large dollop of each then add till I get the texture and taste that I want. Update: Thanks to the first reviewer for finding my typo with the salt; it has been corrected. -- posted by SusieQusie

Zoe's Feta Cole Slaw

This luscious mix is delicious anytime! Great for showers, graduations, weddings, picnics etc. for finger sandwiches. Also good to spread on bagel or pita chips for a snack or appetizer! Try it. It's sure to please the palate :) Recipe doubles or triples easily for a crowd. You can also add finely chopped onion if you like. The yield on this recipe depends on how full you stuff the rolls, and how big the rolls are. Most people I know use just a couple of tablespoons of spicy or hot sweet mustard, but I just use regular yellow mustard (and more of it) due to personal preference. I also use a lower fat pork & alligator sausage from Winn-Dixie that might not be available everywhere.
I came up with this Chili after trying to match the ingredients in recipe #328352 - an OUTSTANDING recipe! It is so delicious, I figured I would share my version for those who do not have the products for Liza's FABULOUS chili recipe. The different peppers add a number of levels of heat to the chili and the different flavors are discernible. I do believe this is the best chili I have ever put in my mouth! If you do not like spicy foods, keep searching. This chili is spicy, but certainly not over the top torture!
Bacon and Horseradish Deviled Eggs

Come on,you know that sounds good! I developed these after attempting to overcome an addiction to bacon and horseradish dip I developed on my recent trip to the States. You can even make these vegetarian by using the Bacos bacon bits that are made out of soy instead of the actual bacon. The recipe can be scaled up pretty easily for bigger crowds. Also, this is one of those times when I am not totally clear on how to translate an ingredient from UK to US. I used what is called 'horseradish sauce' here in the UK. Which, I remember being somewhere in between prepared horseradish and horseradish cream in the States. So, I put one but you can probably use either. -- posted by Sarah_Jayne

Quency's Pasta Salad

This recipe came from a girl I knew named Quency. She said it was a family recipe. I always make this for bbq's and pot lucks. It is a big hit! This makes a very large quantity of salad. I usually mix it up in a foil roasting pan so I don't have to worry about having a big enough bowl or remembering to bring my bowl home. -- posted by ~Sherry~
