Chocolate Hazelnut Biscotti

Biscotti is used to describe a long, dry, hard twice baked cookie with a curved top and a flat bottom designed for dunking into wine or coffee. The name biscotti is derived from 'bis' meaning twice in Italian and 'cotto' meaning baked or cooked. These are very nice glazed or dipped in white chocolate. Enjoy.
The Best Rosemary Focaccia Bread

This recipe is from the site italianfoodforever.com. I found it about a year ago and have made it countless times, for countless occasions. I have messed up many things in this recipe and still it always turns out great. It is very simple--I LOVE it!

*NOTE: Based on some reviews, you may need to add a bit more water. Remember that there are lots of variables in baking, and that making any kind of yeast bread may require adjustment depending on climate, altitude, and your ingredients. Your success comes from sensing the dough and what it needs, not from following a recipe to the letter. So if it feels dry, add a bit more water a tablespoon at a time until it feels more elastic.

For the record, I have never had to add more water. -- posted by spatchcock

Artichoke and Broccoli Frittata / Crustless Quiche

A frittata (also known as crustless quiche) is a perfect palette for colorful vegetables and strongly flavored cheeses. What I love about frittatas is that they are one of the few egg dishes that are delicious at room temperature and can be stored in the refrigerator (or even frozen) for days. This one is not just for breakfast - Try it for lunch or dinner with a salad or steamed veggies. Eat hot or at room temperature - Leftovers can be heated in toaster oven or microwave. I designed this recipe to be gluten-free, using my homemade fresh gluten-free Italian breadcrumbs - But you can use any type of breadcrumbs you like. -- posted by What's Cooking?

Apricot-Almond-Rum Pound Cake

I got this recipe from my Mom's recipe collection. Flecked with apricot bits and flavored with rum and almonds, this is a moist and delicious pound cake. The recipe calls for light rum, but I have used dark rum and it was just as delicious. If you have the willpower, the cake tastes even better if wrapped when cool, and left overnight before cutting. I didn't name the recipe, but I don't know if I would classify this as a Pound Cake as it is quite light, just a bit denser than an angel food cake IMHO. -- posted by Brenda.

Gluten-Free Kalamata Olive and Rosemary Bread

This is a delicious gluten-free olive oil loaf with a more rustic style and a soft, pliable texture. The rosemary and olives lend a wonderful flavor. It doesn't need to be toasted in order to be soft and delicious (unlike most GF breads). Try a slice with butter on it, or as an accompaniment to Southern European and Mediterranean dishes, or try it with any soup or stew. As for me, I ate the entire loaf (not at once, of course) with hummus on top because I loved how the flavors went together. It would also make a killer grilled cheese sandwich with sharp cheddar. -- posted by What's Cooking?

Italian Inspired Potatoes

This was inspired by Chef Potpie's recipe#197754. I went to make it and thought it was missing tomatoes...I realized I had some sundried tomatoes and other flavorful add-ins and came up with this. It turned out very yummy. I love the tangy additions with the salami. To me this is a meal in itself! You could add onion to this also if you like. I might even try it with some capers next time. Hmm...and perhaps feta cheese instead of mozzarella with shredded chicken or no meat for greek potatoes! It's so fun to experiment. This could also be made in the oven or with leftover roasted potatoes or canned potatoes. Enjoy! -- posted by Engrossed

Since I was heating the grill anyway, I decided to grill sliced onions and red peppers, to add to the sandwich.
Kale Salad With Pine Nuts, Currants & Parmesan

In a surprising twist, Tuscan kale is served raw—and makes for a substantial and satisfying winter salad. Be sure to choose bunches of Tuscan kale with small leaves, which are more tender. I adapted the recipe from one I found in this month's "Bon Appétit" (February 2009). It's by acclaimed chef Dan Barber, of New York's famous Blue Hill restaurants. Allow the currants to marinated for at least a few hours. After that, this dish takes minutes to throw together. -- posted by blucoat
