Lower Fat Chocolate Cake in a Mug

This is a composite of several recipes in hopes of making a version that is less fattening, but still satisfying. There are other versions that use 2 tbsp fat free sour cream instead of the banana. There are many types of flour that have been cited, including rice flour for gluten free. Also different sweeteners available such as sucanat. Egg beaters can be substituted, and oil can be left out all together, substituted with apple sauce. -- posted by Chef #1450658

Tender and Spicy Molasses Cookies

This is a highly modified version of Old Fashioned Ginger Cakes by Rachel-Snachel . It is interesting because it uses no milk or eggs, and is devoid of refined sugar.

This recipe's flavours are equilibrated for Blackstrap molasses, if you use regular molasses you might have to reduce the spices.

This is a very nutritious, flavorful and comforting recipe on cold winter nights. Perfect if you are nervous, not too good if you feel agressive. -- posted by Blueberries and Mortar

Spiced Baked Pears

This is a perennial favorite for Thanksgiving! It's adapted from a recipe for Spiced Baked Apples by Lorraine Chausse on allrecipes. The pears make a really lovely presentation for dinner parties and can cook while you eat dinner.
The recipe states 6 servings, but you can also halve them and just ladle the sauce over the half. These are yummy served by themselves or with some vanilla ice cream. -- posted by Heidigal

Shoofly Pie

honest to goodness shoofly pie- so simple, so flavorful and chock full of molasses....from my roots in Lancaster county, PA, this pie is always welcome on the board. An everyday pie with 'in the cupboard' ingredients, it fits with every menu as it is deliciously light. Serve with whipped cream or ice cream, it becomes a smash dessert.
Sunday's Best Rice Pudding (Traditional Style)

In memory of my dad who used to take me to Pickwick Restaurant for rice pudding every Sunday afternoon. This is the closest recipe I could find to that which was served at the restaurant: Creamy with a hint of cinnamon and nutmeg. Delicious whether served warm or cold with a sprinkle of cinnamon on top. Also, if prepared ahead, rice pudding makes a quick breakfast in case you're too much in a hurry to make oatmeal. -- posted by Rachael Potter

( I made my Recipe #192327 and used Pecan Cookie Pieces, which are more coarse chopped pecans) Served warm with a dollop of ice cream. Oooohs and awwwhs all around.
Lemon Curd pie with a sweet biscuit base, This was my Nanna's Mums recipe, Nanna used to make it for me every school holidays when I would go and stay with her. It was a real treat. Be careful not to stop stirring the curd whilst over the heat as if it begins to stick it will change the taste completely.
Crazy Eee Coconut Puffs/ Loaves

I used ingredients from a contest..but missed the deadline to post, no electricity for awhile and today no water, Such is life! Easy Preparation and delicious! This was for a potluck entry. Rich buttery taste on the outside, soft coconut taste inside. I have one large pan with 8 mini loaf slots. You can also use a 9 X 13 pan and make one large cake. Bake about 10 minutes longer.
The puffs are piled high on a plate and a bowl of whipped topping is served with the puffs. Note: Let loaves set a while and use a serrated knife. or,, you can wrap and freeze when cool and take out to thaw before giving as gifts or before serving. -- posted by Montana Heart Song

Gluten Free Pumpkin Chocolate Chip Muffins

I have tricked several wheat eaters with this recipe. Very tasty and not gritty like typical gluten free recipes. Our normal grocery store carries soy flour and shouldn't be too hard to find. Definitely worth using! Adds protein and fiber and I think it helps with texture. You could probably get away with omitting the teaspoon of guar gum, but I have it on hand and use it.
I've used both milk, lactaid and soy milk for this recipe without any problems. I have also used pure pumpkin and pumpkin pie mix (this will make the batter more watery, so bake a little longer). You don't have to use the chocolate chips, they'll still be quite tasty! -- posted by Zizek

Killer Banana Bars

Absolutely addictive! These bars are moist, light, and fluffy like a quick bread (rather than dense like a brownie). They have a slight sweet/salty thing going on that takes them to the next level. Make a pan and watch them disappear! These are a huge hit at potlucks.

You can double this recipe and bake in at 13x9-in. pan.

Variation: For outrageously good pumpkin bars, substitute canned pumpkin for the banana and add 1 tsp. fresh grated ginger. Outstanding!

Cinnamon Rolls With a Cream Cheese Dough (Saveur)

Famous Fresh Blueberry Pie

I live in Florida and it is difficult to make a non-runny blueberry pie due to the humidity, but this recipe is perfect. I got this recipe through trial and error of 5 different published recipes. The filling is dense enough so that little loose liquid is present, but you still feel like you are biting into whole berries when you eat it. This fixed my problem of getting a pool of liquid in the bottom of my pie shell. I recommend using only fresh blueberries.
Use a 9-inch deep-dish pie plate. Regarding the crust, the store-bought frozen crusts did not work properly for me. They either didn't bake on the bottom or resulted in an overflow of pie liquid into the bottom of my oven. I recommend the Pillsbury brand rolled pie crust dough found in the refrigerator section of the grocery store (by the biscuits/crescent rolls). These bake nicely, are easy to work with, and have an appropriate amount of moisture. Of greatest inspiration for the filling was from http://www.pickyourown.org/blueberrypie.php -- posted by MerryD

Fried Pie Crust

This is the best recipe I've found for really old time fried pies. This reminds me of the pies my grandmother used to make and they were delicious. Easy, Easy, Easy to make, especially if you use food processor.
Chococonut Pandan Chiffon Cake

This is the easiest pandan cake I've ever made, and best tasting too! I made my husband rank his favourite cakes that I've ever made and I've never been able to outdo the Choco Banana cake until this one!.We're both watching our weight, so I've reduced alot of sugar in the recipe, so it's not too sweet at all.
Whole Wheat Applesauce Cookies

My favorite cookie recipe! These are moist, chewy and delicious.
Double Chocolate Brownie

I found this brownie recipe on the back of a container of cocoa. After trying it, I cut it out and taped it into my cookbook. Unfortunately I don't know the brand of cocoa where this recipe came from.

Quick and easy, this brownie recipe has single-handedly stopped me from buying box mixes.

I've never done the chipotle chili powder with the nuts, but the cinnamon adds a delicious element either way. -- posted by CorianneW

Although decadent to the nth degree, these brownies are actually light because the sour cream leavens that batter, causing them to rise up high in the pan. They will stay fresh for four days.
Bread Pudding Ummm . . . Best Ever

I had never had Bread Pudding before I went to Vegas and had it at a buffet. Well, I fell in love. My obsession use to be chocolate, but since I've lost 52 lbs. I gave it up. NOW, my obsession has become THIS version of Bread Pudding. ( I have to be careful how much of this I make, so I don't gain all of that chocolate weight back!) I found this recipe on the "Momswhothink.com" website and I hope it is ok to post it here. This is true comfort food. Do not over bake or you will lose the eggy texture of the bread. The cinnamon, nutmeg, and vanilla are the key ingredients to the rich flavor of this dessert. I use french bread, and have even used dry bread that has been sitting around a few days. I even used wheat french bread once and it turned out great! The sauce is more a vanilla, butter, cream sauce. I usually make about 4 times (yes, that is what I said!) in order to smother the bread pudding. One recipe of it is just not enough. Ummm. Make the sauce while the pudding is baking and you will save time. You can also use a Hard Sauce if you would rather. (recipe # 102574 sounds like a good one.) Even if you have never tried Bread Pudding, be daring, and try it. I use to turn my nose up at it, and now, I cannot wait for an excuse to make it, again and again. Enjoy! -- posted by terriers2

Bisquick Chocolate Chip Cookies- Just 6 Ingredients!

Classic comfort food. I remember making these in home ec back in the day. God I hated junior high and would never want to relive that torture: but those cookies were good! That good to make me want to remember it. And we didn't keep Bisquick in my house so it was an especially great delight for me. Makes about 16-24 cookies depending on how big you make them. They may not taste as fine as pure from scratch cookies, but they still taste good and are a time-tested kid pleaser. Can sub vegetable oil or shortening for the butter but the butter tastes better. And to make these a tad fancier, I suggest using 1/2 tsp vanilla and 1/2 tsp almond extract. -- posted by the80srule
