Brussels Sprouts in Soy Sauce

My wife and I love Brussels sprouts and this is our favorite way to prepare them. It's our own creation and so good that I'm amazed I have never seen a similar recipe anywhere. The flavors of the sprouts and the soy sauce seem made for each other. The recipe is quick and so simple that it can be thrown together as a side vegetable any time sprouts are on hand. I always use Tamari soy sauce, but anything you have on hand will do fine. And I always use olive oil, but butter or another vegetable oil would be fine if you prefer. -- posted by Cowshill

Memory Lane Black Bean Soup

I was so sad that Campbell's discontinued Black Bean Soup, so had to attempt a clone. Please note that there are no Southwestern spices in this version. Also no butter, oil, or meat. Most of the Black Bean Soup recipes one encounters these days are Southwest inspired. Not this one. Cubed avocado on top of each bowl is tasty and pretty. Or you could float a lemon slice on top. -- posted by Heirloom Tomato

Sweet and Spicy Roasted Turnips

A Cooking Light recipe. Not too sweet, not too spicy. Use light or dark brown sugar, as you prefer. The original called for just a dash of allspice, but I like a bit more. If using small turnips, cut them into quarters rather than sixths. If you think you don't like turnips, give this a try! -- posted by Zeldaz

Loch Lomond Rumbledethumps

During Christmas, we were on holiday in Scotland. I asked my mother-in-law, "Have you ever made a dish called "rumbledethump? They're talking about it on a website. (Zaar)" She laughed and said, "That old thing! We ate it as kids and when newly married! I haven't made it in years!" She explained that if you asked a 100 Scottish women to make this dish, you'd come up with 100 variations.

Some use onions, some use chives. Some boil their cabbage, some fry it. Other's add turnips or parsnips or carrots. But however you make it, this is Comfort Food at it's highest elevation. I watched her make it from scratch, took notes and asked questions. The end result is her version, which comes from the Loch Lomond area of Scotland.

What I love about this variation is the great contrast between the tangy tomato topping and the incredible richness of the cabbage/onion/potato filling. Top it with cheese and you have some of America's favourite flavours: tomato, cheese and potato. I should know: I ate three pieces the first time that I ate her version!

So, from Scotland to America, here is my Mother-in-Law, Mary McFadden's, Rumbledethump recipe. ****I have changed the measurements from metric to U.S. sizes and also used potatoes and cheese that are easily found in the U.S. -- posted by The_Swedish_Chef

Peach Freeze

This recipe is from the side of a large can of SPC Peach Halves in natural fruit juice. The can is 825g (roughly 30 ounces) and the fruit content is labelled at being at least 59% of the can. The original recipe had 2 tablespoons of sugar....but I dont think it's necessary with lovely sweet fruit.
Creamy Coconut and Rum Baked Pineapple

I came up with this as a solution to leftover coconut milk and a fresh pineapple. And even on Weight Watchers, it was worth saving points for this dessert. The whole recipe has a total of 8 points. The rum for this dessert should be golden- a light rum will not produce the same depth of flavour. Number of servings will depend on the size of pineapple used- increase the sauce if using a large pineapple. -- posted by Shuzbud

Creamy Butternut Squash and Spinach Gratin

I just got back from a quick trip to Miami, Fla. and had something very similar to this at a restaurant called Captain's Tavern. It was so good, I had to try to find the recipe. Here's one gleaned from Gourmet magazine, Nov. 2006 via Epicurious. Enjoy! This is one big casserole, but at the restaurant it was in individual dishes. You may add the cheese between each layer or just use it to top, or leave it out if you prefer! On the website, this has 92 wonderful reviews! this is even better the next day. You can half this recipe and cook in a 9x9" pan. This is so good, serve to company and for the holidays. This recipe calls for slicing raw squash but to make it easier to cut, microwave for 3-5 minutes, or lightly steam or bake and then cut in pieces. The recipe says it will serve 8-10 people but some said it served 12! -- posted by Sharon123

Make Your Own Single-Serve Vanilla Yogurt

Although it lacks the portability of something like Yoplait, Dannon, Stoneyfield Farms, etc. it's a good alternative if you like a cup of yogurt with breakfast. Most are 6 oz instead of a full cup, so I decided to use that measurement instead. Except for when I can get them really cheap or need to carry them to school or work, I think I'll use this method to make vanilla yogurt from now on.
Loosely based on a recipe from a country club. It looks especially pretty if you garnish each serving with a strawberry fan.

Cabbage With Caraway

This is my mother's recipe - I don't know where she got it from. It is a great way to cook cabbage, which leaves it slightly crunchy and tasting delicious. Nothing like the awful boiled cabbage you remember from school!

Cabbage is very good for you, as it contains anti-oxidants, vitamin C and all sorts of other things.

Try this as a vegetable with chops or burgers and plain boiled potatoes. You can use leftover cabbage and potato to make Bubble and Squeak. -- posted by SarahEmmm

Kadhi Pakora / Pakoras

At the local Indian market, they have a small, vegetarian "cafeteria-style" lunch/dinner counter that we go to as often as we're able. One of my favorite dishes there is a yogurt curry with pakoras swimming in it. Pakoras are a snack made with, in this case, veggies dredged in a chickpea (besan) flour batter and then deep fried. I've been on the hunt for a good kadhi pakora recipe and found this keeper. Just don't use thick, Greek style yogurt like I did; you want more of a soupy consistency rather than what my photo shows. You can vary the veggies you use here. Try onion strips, spinach and even paneer, Indian cheese. Adapted from a recipe at http://www.indianfoodsite.com/.
Fennel Ratatouille

The addition of fennel seeds and bulb fennel in this ratatouille gives an extra Mediterranean flavor. It goes perfectly with grilled meat, especially lamb.
Veggie Chowder

I may be wrong in calling this a chowder, but this experiment came out great. I threw together my own concept after looking at three or four recipes for creamy soups. A friend of mine brought me an entire gallon of milk, which we will never drink, so I have been attempting to be inventive to use the milk up.
Cauliflower and Potato Gratin (Russ Parsons)

A simple, satisfying vegetarian recipe than can be served as a holiday side dish or a or as a main the rest of the year. Do be sure to cook the cauliflower well to mellow the flavor. And make the white sauce a little thicker than you might think appropriate -- the cauliflower and potatoes will both give off some moisture while they bake.
