Picante De Huevos (Guacamole)

This recipe has some good kick to it so beware spice lightweights! The mango does do a great job of complimenting the spicy and makes for an excellent partner to this twist on guacamole. Perfect for Cinco de Mayo celebrations! -- posted by Banriona Aeval

Old Fashioned Chicken and Dumplings (Made Easy)

When I was growing up, one of my favorite comfort foods was my maternal grandmother's chicken and dumplings. "Nana" would stew her chicken and debone it, strain the broth (seasoned with fresh rosemary from her garden), roll her own biscuit dough, then drop hand-cut, flour-rolled dumplings into her broth. It was a lot of work, but she always seemed to have it on the table in minutes! She usually made it when I was sick or not having a great day (my mom too). It's one of those ''little things" my mom and I remember fondly. This recipe is my adaptation of Colonel Harland Sanders' personal gravy and dumpling recipe, which I've brought a little closer to Nana's... made a lot easier! PLEASE NOTE: THIS RECIPE HAS BEEN REVISED SINCE THE ORIGINAL POSTING, AFTER CHEF #1523855'S REVIEW. DOUBLING THE BROTH WAS MY SOLUTION (AS I'VE DONE HERE). IT GIVES MORE BROTH TO COOK THE DUMPLINGS IN (Thank you, Chef # 1523855). YIELDS ABOUT 5 SERVINGS. -- posted by Bazaar®

Finally, I can have my cake and eat it too, so to speak, with a luscious chocolate fudge shake that's low-calorie, low-fat and sugar-free, plus quick and easy!

A recipe from the Healthy Heart Cookbook from the American Medical Association. It's a very good side dish. / The simple additions of fresh herbs, grated lemon zest, and toasted nuts turn an everyday vegetable into something elegant. Use dried figs in place of the raisins, if you like, for a new flavor dimension. -- posted by Boomette

Best Homemade Rice Pilaf

Mixture of rice and vermicelli slightly browned with a buttery flavor. I love this with ribs, salmon, or barbecued chicken. This recipe is from my mother-in-law, takes about 1/2 hour to prepare, and you need 2 sauce pans. Don't sub with brown rice because it doesn't taste as good. You can cut the butter a little if you want but the more you reduce butter the drier the rice. Use real butter! I suggest make it as is written the first time around. -- posted by Chef #1537226

Chili's Restaurant Salsa Copycat (Todd Wilbur Top Secret Recipe

I love clone recipes. Making it myself and controlling the ingredients yet having familar taste is so much fun. This is for a red salsa recipe that is a copy cat of the Chili's Restaurant Chain found here in the west and around the country. It is super easy to make and fun to eat. You make it fresh at home and save money while having it whenever you want. Perfect for football parties, games, events, holidays etc This is the real Todd Wilbur Top Secret Recipe from his book "Top Secret Restaurant Recipes 2" that I own. Other recipes can be found but they lack one ingredient or another. Todd says "If you want to double it, use a 28 oz can diced tomatoes and double the other ingredients. If you need more heat tweek the amount of jalalapenos you use." I hope it adds a kick to your menu. Enjoy!
Chocolate Peanut Butter Soymilk Smoothie

I got this from yellatyourfat.com. Yell At Your Fat is a podcast by Wendy, she has lost 139 pounds, and is doing 139 podcast sharing about her weightloss journey. She's a crazy cat and fun to listen to. She likes to sing too. hehe

You can add banana to this, or strawberries, get creative.

For frozen soy milk, measure one cup, and freeze in an ice cube tray for blending ease.

If things get stuck while blending, stop the blender and move around the frozen bits with a spoon. If you still have trouble blending, add more soy milk.

Prep and cook (blend) time are estimates, and do not include freezing time for the soymilk. (; -- posted by MoxiePurple

Crockpot Yogurt

Make your own yogurt at home in your crockpot! Cheaper than storebought, and healthier than the chemical-laden stuff on the shelves. Lasts 7-10 days in the refrigerator. It will be somewhat thinner than the commercial stuff; see note at the end. You can also thicken it with skim milk powder, I'm told, but have never tried it. -- posted by DrGaellon

The Easiest and Best Crock Pot Chicken Tortilla Soup

A friend of mine made this soup for a baby shower that I recently attended and everyone loved it! Fritos or tortilla strips and cheddar cheese are optional topping's as well as the sour cream. I like it the best with only sour cream which make it HEALTHY which is alway a major plus! You do not need to pre cook the chicken, just put it in raw OR frozen, which makes it super easy. For spicer soup, get the spicy RoTel tomatoes and/or Medium or Hot Tostitos Salsa but you will find that it has a lot of flavor and is quite spicy for not having to add any extra spices -- SO easy!! I like it the best with one jar of medium and one jar of mild tostitos salsa. -- posted by S.H.E.

Quick, hearty soup with a bit of a kick. Can be made Vegan by omitting sour cream. Tame the spice down by substituting diced tomatoes for the Ro-Tel. I like to leave the black beans whole, but you can make it creamy by mashing the beans. -- posted by Chef #1540606

Hot Dog Bean Soup

I found this recipe in the 2009 editon of Taste of Home Quick Cooking Annual Recipes. It was sent in to them by Mary Ann Kime of Sturgis, Michigan. After she mixed everything together she warmed the soup in the microwave. Since I didn't want to dirty up alot of dishes, I just decided to heat everything on the stove top. If you want to follow the exact recipe, and have that particular cookbook the recipe is on page 101.Serve with crackers or even a grilled cheese.
Creamy Shrimp and Pasta

From Prevention. This isn't the most attractive pasta sauce I've ever made, but it sure is yummy! It is a great use for cooked shrimp, which I often find on sale. The original recipe calls for snow peas instead of green beans (add to pan with shrimp, don't boil) and roasted red peppers instead of fresh. I was worried at first that there was too much thyme, but it comes out nicely in the end. -- posted by smellyvegetarian

Oysters Mexicana

Oysters make a luxurious first course for a special occasion or as part of a celebration buffet. The simple spicy topping in this recipe gives them an extra zing, without detracting from their special fresh flavor. Serving the oysters on cracked ice keeps them cool and holds them in position as well as looking stunning. If you do not want to use ice and don't have special indented oyster plates, place the shells on a bed of rock salt to keep them steady. -- posted by English_Rose

Crock-Pot Ricotta

Make your own ricotta cheese in your crockpot! The acid you choose will affect the final flavor. Apple cider vinegar will give a sharper tang, a distinct odor, and a subtle golden color; this is probably best for savory applications. Lemon juice will give a subtler flavor and will not curdle as abruptly. For the cleanest, purest flavor, use distilled white vinegar. If you don't like or can't find the goat's milk, you can sub another quart of low-fat cow's milk. -- posted by DrGaellon

Another one of my recipes for the grill! I love grilling outdoors....something about being outside instead of in the kitchen makes me smile! This is an asian inspired marinade for sirloin, cut in to strips and threaded on skewers. I like to grill some zucchini or asparagus with this and serve with rice.
Foolproof Baked Brown Rice

I got so tired of doing brown rice on the stovetop -- messes from sputtery lidsz and boil-overs, burnt or stuck rice in the pot. But I really didn't want another appliance (rice cooker)... But this method is GREAT and foolproof! NO MESS, easy and you don't hav to watch like a hawk. I'm sure this would work for any kind of rice, but you'd have to adjust time and the amount of water. I'll never do brown rice on the stovvetop again! -- posted by Meredith K.

Pancake Messages

I first made these pancakes messages for my son's 4th birthday and then for the last day of kindergarten. Both times the kids loved them and ate up the pancakes. You can write on them even when they're frozen, which I think is actually easier. You can write any messages you want or draw any pictures you want. Now I make a whole bunch to freeze, take out what I need and write the message/picture right then for either breakfast, snack or lunch. The kids don't even eat them with syrup! Servings and yield are approximate since it depends on how much batter you have-I double mine and get about 60 or so pancakes. Cook times are approximate and include preparing the batter, cooling and writing. -- posted by MonsterMaha

Herbed Country Breakfast Potatoes

These are the country breakfast potatoes I cooked at a restaurant I once worked, which were served on weekends for brunch. They are easy to make, and may be prepared with or without tri-color bell peppers -- and of course they are delicious, with aromatic fresh herbs. I've tried making them with dried herbs, but there's just no beating the flavor of fresh rosemary and thyme (you can even sneak a little fresh sage in there too, if you've got it). Enjoy these hearty breakfast potatoes with your favorite eggs or omelet, or serve them the way I do (yes it may seem strange)... topped with my Recipe #363705 sauce!
Alabama Living Soup

This recipe comes out of a local electric company magazine. We love hearty soups on the cold, damp days. This recipe fits the bill. Just place everything in the crock pot, go to work, come home to a wonderful soup. This makes a large crockpot of soup. For thicker soups you can use less broth, for thinner soups, use more. The cups measurement for the broth is up to your preference. -- posted by Jellyqueen
