Chocolate Walnut Biscotti

I love biscotti of all sorts, and this recipe, packed with walnuts in a double chocolate dough, is just delicious. Adopted from Mean Chef in September 2006, I have left the original directions intact, but added my comments and notations in parentheses. As presented, this yields about 30 six inch long cookies. If you want smaller biscotti, divide the dough into 3 logs, and reduce your baking time accordingly. -- posted by justcallmetoni

Chocolate Hazelnut Biscotti

Biscotti is used to describe a long, dry, hard twice baked cookie with a curved top and a flat bottom designed for dunking into wine or coffee. The name biscotti is derived from 'bis' meaning twice in Italian and 'cotto' meaning baked or cooked. These are very nice glazed or dipped in white chocolate. Enjoy. Don't let all the steps bother you. -- posted by Barb Gertz

Chocolate Biscotti (No Butter)

This recipe is given in grams; it's from a BBC food show. The dough can feel a bit crumbly but it's no problem. These are really good and chocolaty. I like to roast my hazelnuts in the oven.
Spring Biscotti

Another web find. This biscotti has a fresh taste with orange zest, dried cranberries, white chocolate, and pistachios. Very light and tasty. The combination of flavors is perfect. You may want to add some orange extract or doubled the vanilla extract, or even use some lemon extract. You may need to adjust your oven temperature depending on what type of oven you use. Use an electric knife, it cuts through these biscotti like butter. -- posted by kcdelong

Chocolate Chip Cookie Sticks

These chocolate chip cookies are like biscotti--twice baked. Everyone says they are DELICIOUS, some people used milk chocolate chips. For a more crunchy cookie bake a little longer on the second baking. Cooling time not included in time.
Make-Ahead Tip: Bake cookies as directed; cool completely, place in a freezer container or bag and freeze up to 3 months. Before serving, thaw for 15 minutes.
Fantastic Double Chocolate-Pecan Biscotti

Since biscotti is a huge favorite at my house I am always searching for good biscotti recipes, this one is fantastic! --- if you make biscotti and love chocolate, then this is a recipe you should try! --- since the batter is quite stiff this dough is best prepared on a heavy-duty stand mixer, the recipe can be completely doubled to make four logs, they will keep tightly covered at room temperature for one week, or frozen for one month, feel free to use any other chopped nuts that you desired, walnuts work great with this also :) -- posted by KITTENCAL

Chocolate, Cherry and Chile Biscotti

If you like biscotti, expand your palate a bit with these deliciously spicy cookies. Chocolate and chiles are old friends, and the cherries add sweet contrast. Candidates for dipping include full-bodied wines like Zinfandel and Cabernet Sauvignon, port, and espresso, and just plain old coffee, tea or milk! -- posted by Nana Lee

Christmas-Flavoured Biscotti (Chocolate-Coconut Biscotti)

These are adapted from the King Arthur Flour Cookie Companion, and I'm really glad I tried them out, as they were perfectly coconutty and crisp.

Dipping it in not simply chocolate, but melted peppermint bark, really gave it that Christmas flavour. If Christmas tastes like decadence, that is. Perfect for gift-giving. -- posted by s'kat

Chocolate-Cherry Biscotti

Biscotti are a wonderful treat. Not a sweet as a more traditional cookie, they work well as a midafternoon snack along with a cup of tea or coffee or as a light ending to a great supper. In addition, these double baked cookies are easy to prepare and store rather well. In this recipe the delightful flavors of chocolate and cherry are paired together. Found this on the Internet and storing it (with my inteneded tweaking) for safe keeping. -- posted by justcallmetoni

Christmas Low Fat White-Chocolate Walnut Brownie Biscotti

These festive low-fat biscotti are another twist on Julie Van Rosendaal's low-fat biscotti recipe. With only two tablespoons of butter for the entire recipe, you can enjoy your favorite treats this holiday without feeling guilty. Don't forget to divide the dough into two separate loaves or the cookies won't cook evenly. Also, the dough may be more crumbly than traditional biscotti dough. Just use your hands to work it into a log, but be careful not to compact the dough too much. These can be made year round by replacing the colored sugars with white sugar and using plain white chocolate chips. Also try adding peppermint candies and peppermint extract in place of the white chocolate and vanilla respectively. ENJOY! -- posted by Chef-girl-OV

Passover Chocolate Mandelbrot (No Flour, Better Than Biscotti)

Modified from a Canadian newspaper - this is AMAZING stuff! The best description of texture I can give is that this is not totally dry, but it's still crunchy.
You will be questioned if it's really Kosher for Passover, you will be questioned how this is possible to make without flour. It's possible AND it's delicious, just try it! Don't half this recipe, it makes a lot, but they will fly off your table!
Try variations like cranberries and your favorite nut or dried cherries and almonds instead of the chocolate chips and walnuts. -- posted by AniSarit

Mochaccino Biscotti Dunkers

Perhaps my favorite biscotti recipe; crisp chocolatey goodness with a hint of espresso, while being relatively low-fat to boot! Easily lasts for a month in an airtight container, and tastes best as a dessert or a breakfast goodie dipped in coffe.
For lactose-free variations, select semi sweet chocolate that is made without milk, such as ghiradelli or valrhona. *TIME INCLUDES REFRIDGERATION*

Nutella Almond Cookies

My take on Giada De Laurentiis' recipe for Chocolate Hazelnut Biscotti. Delicious cookies that are guaranteed to have people asking "What's in here?" These cookies where my first foray into baking, and they were very easy for a beginner. My family, who knows my cooking inabilities, thought they were slice and bake!

Suggestion: I use a Silpat silicon baking sheet on my cookie sheet. It keeps the bottoms from getting too done. -- posted by Mrs. H

Brownie Alpine Biscotti

"I love visiting with friends over a pot of coffee, so I developed these crisp, chocolaty cookies to munch along with each cup," comments Jeanie Williams of Minnetonka, Minnesota. Brownie mix makes them easy to stir up, and a white chocolate and almond topping adds a festive look.
From Taste of Home 25 top favorites! A reviewer said she love them but makes them without the white chocolate because they store better. -- posted by Sharon123
