			<description>These biscotti's are the old Italian favorites, My Daughter-in-laws Mother always made these at Christmas for everyone to enjoy. Now this is my Favorite Biscotti recipe. I have been making them at christmas time &amp;amp; other times for years. My family always looks forward to my making them.They are great served with coffee or wine. These rusk-type cookies are studded with nuts and flavored with anise. You Twice bake them to a toasty crunchiness. They do take time,But,are well worth it. 			<description>I love the honey flavor of these biscotti as much the almond aroma while they bake. Based on &amp;quot;Biscotti Napoletani&amp;quot; from Nick Malgieri's book, Great Italian Desserts, the three flavoring ingredients are just honey-almond-cinnamon. They're wonderful in this pure form but I mention the optional ingredients since they please my American tastebuds.  Since there's no butter or egg, these biscotti are exceptionally light--imagine a crisp, honey almond toast. 			<description>Last year a company called Nonni's put out a Ginger Biscotti with White Chocolate. They were SOOOO additive! Since I don't find them in the store this year I went on the net looking. Here is what I found from Better Baking. My Lemon Almond Biscotti recipe #65536 tells you how to many them in the long flatten log shape if you want to bake them in that shape. You'll have to bake them twice using that recipe. Serving will very. I am a biscotti nut and this was the first recipe (and only) that I used. The results are fabulous and they are so easy to make even though they are triple-baked. I did change the ingredients just a little. Once you eat these you will never go back to store-bought again. This very tasty treat is pronounced 'Pahk-see-mah-THAHK-yah' in Greek, &amp;amp; the original recipe, which I've cut back considerably, made 10 dozen of these little buggers! Because these paximathakia are made without eggs &amp;amp; butter, they can be stored (after cooling COMPLETELY!)  for up to 2 months in airtight plastic containers, &amp;amp; can be frozen. 			<description>I cut this recipe out of the Medford Mail Tribune a couple of years ago.  This is my 3rd Christmas of using this recipe and my family would go nuts if I didn't make at least four different kinds using this basic recipe.  Grated orange peel can be substituted for the lemon peel for a different taste.  Any kind of dried fruit can be substituted for the dried cranberries, and any kind of nut can be used for the pine nuts, pistachios are nice.  I vary the type of chocolate I use  to dip one side of each Biscotti either white, milk or dark chocolate.  I've substituted other flavors of extract for the vanilla also.  This basic recipe is good but if you are a baker who likes to experiment with flavors THIS is the one to try that with!!. I'm not an aniseed lover so I often omit it as it has a strong flavor of it's own that seems to cover other flavors. She notes that anise or fennel can be used in place of the cinnamon, but recommends using only a single pure flavor note, as that's the way her nonna would have liked it.
