It started as a Cuban-style collards soup that included bacon fat, short ribs, Cuban sausage and ham hocks. Eventually Ms. Cooper decided to &amp;quot;de-fat&amp;quot; and change some of the ingredients to typical  southern ones. The results are both aromatic and hearty, perfect on a cold day. It's most popular in the Caribbean around the holidays and can double as an adult beverage with the addition of your favorite alcohol (namely rum or guinness). It has a milk base with spices like vanilla and nutmeg, so it's definitely not a carrot juice for those looking for health, but hey, there are carrots involved!

			<description>I discovered a recipe in Joy of Cooking and tweaked it a bit.  I'm not sure it's worth the trouble of stuffing the squash.  Personally, I'd just peel and dice the squash while it's raw, then roast the squash while sauteeing the rest of the filling, then toss the whole mess in a baking dish and be done with it. If you use homemade pasta, which is more absorbent than spaghetti, you should start with 1 tbsp more butter when making the sauce.
TO MAKE AHEAD : You can cook the sauce entirely in advance up to the point where you add the parsley. 			<description>While this recipe calls for summer vegetables, my brother and SIL prepared it for Christmas dinner 2009 and I loved it.  Good as a vegetarian main dish or a side.  It's not quite the same as other vegetable gratins already on RecipeZaar.  Personally, I would make this with less olive oil, the amount of which I specified in the ingredients, but you can use the original amount if you prefer (just convert teaspoons to tablespoons).  This can also be made ahead after assembly and before baking.  Just pre-heat the oven.  Try to buy the zucchini and squash of roughly the same diameter.  I might serve this with bread to soak up the juices.  To make this vegan, omit the parmesan cheese. 			<description>I had these cinnamon sweet potatoes at a Thanksgiving lunch. I thought these were so yummy and I had to ask Bobby Smith how to make them. Bobby says these are alot of work but the pay-off is so sweet. When I made these yams I used to much nutmeg I'm gonna cut back on this during the tasting of the grease/syrup. I did use a good amount of cinnamon and will use a bit more next time. My future hubby thought these were good but a bit to sweet so next time I'll go more easy on the brown sugar and sugar. I did use Splenda for both. It is a very tasty, not too hot chili that is just right for these cold winter days.  I added little cubes (less than 1/2-inch) of 3 uncooked chicken breasts to this chili about half way through the cooking for a little more protein, as though it needs it.  It didn't hurt one bit!  The author says this is a soupy chili but I did not find it so.  It has great flavor.  She cautions that the beans sink while the corn floats. 			<description>I first had this at my aunt and uncle's, had never heard of split pea soup with anything other than ham in it.  Loved this, I definitely prefer spareribs to ham in this soup!  Boiling the ribs in the soup and then letting it simmer for hours leaves the meat more tender than the crockpot!  As written, it was a bit bland for our tastes, we added an extra tsp of the hickory salt and will try adding more peppercorns next time (I couldn't even taste the pepper this time). I try to utilize as many &amp;quot;convenience&amp;quot; items as I can in order to help spend less time in the kitchen and more time relaxing. I like to keep the condiments from takeout and fast food places if I think I can use them for something else. I like to experiement with recipes and make them simple. This has to be one of the easiest recipes I make. The only thing that might be a problem for some people who want to make it, is you need to be near a Chick-fil-a. I use their spicy dressing. I don't normally like typical coleslaw dressing, so this is my little spin on it. I also like to double and even triple the recipe up for family bbq's and potlucks at work. Feel free to add your own items that you like....diced red onion, julienned bell peppers, etc. That's what is so great about recipes, you can make them your own. I don't like vegetarian dishes and I don't like complicating recipes with too many fresh ingredients, so I simplified this and made it meaty.

Consider adding 1-2 tablespoons chopped fresh cilantro or some diced jalapenos to change up the flavor.  You can serve this with warm tortillas, cheese crisp, cheesy jalapeno bread, corn bread, whatever. 			<description>Take two frustrating attempts to make a different stuffed green pepper soup and a wonderful blizzardy day and you end up with a soup that mirrors a stuffed green pepper, exactly! There's nothing like dogged determination and lots of time to get something right. I wanted a  rich sweet pepper soup that had the delicate flavour of tomatoes and the ability to bite into a meat/rice mixture, just like a real stuffed pepper. This recipe is two parts: first, the Porcupine Meatballs, which can be made a day or two ahead. Then, the Tri-Colour Pepper Soup, which is a stand alone soup that I've been making, and enjoying, for years. 

If you enjoy a lot of meat, you might want to double the meatball recipe; for our tastes, this is perfect, with 4-5 meatballs served in each bowl. The taste of this soup is quintessential 1950's style Stuffed Green Peppers. If you can tolerate more heat, then jazz it up to your hearts content! This way, you won't find the recipe &amp;quot;too bland&amp;quot;, which is how we like it---pure comfort food straight from Leave It To Beaver. 

Enjoy the meatballs or enjoy the pepper soup, or, enjoy them blended together for the best of all worlds with this stuffed pepper soup!
