			<description>from Her Sports magazine.  I ran out of rolled oats, so I used 1 cup rolled and 2 cups quick oats.  Also substituted pumpkin spice mix for all the other spices and fresh pumpkin puree for canned pumpkin.  I added only --1/2 cup raisins and added --1/4 cup chocolate chips.  These came out a tad dry (as there is no fat in them) so adding a little oil could go a long way, though I haven't tried it.  I baked for 8 min, rotated, and baked 8 more minutes.  I will do slightly less next time.  Also, they do not grow at all when baking, so the size you make them is the size the will end up. Sometimes she would open her back door and say &amp;quot;Boys, would you like some cookies and all the kids would come running.  She usually made round cookies and put red hots on them.  The original recipe just said Flour enough for stiff dough  I have estimated it at 4 &amp;frac12; c  5 c. 			<title>Pumpkin Walnut Cookies With Caramel Cream Cheese Frosting</title>

			<description>I picked up the latest issue of Taste of Home, Best-Loved Cookies and Bars.  Because of the season, I wanted to make pumpkin cookies.  When I couldn't decide between 2 recipes, I smooshed them together and made it my own, especially the frosting.  A touch of maple syrup adds a hint of the holidays and the cream cheese adds a rich, creamy texture to the frosting and keeps it not too sweet.
These are easy to make and sooo delicious.  Don't be afraid of the thick mixture, especially after adding the walnuts.  This produces a soft, moist, chewy, cake-like cookie.
If you're not a stickler for smooth edges or are in a rush, refrigeration isn't necessary.  It just stays more formed and doesn't create little points after being scooped (especially from a cookie scooper).  These cookies don't spread out much, so you can place them closer together on the cookie sheet to bake more at a time.

The have a slightly crisp edge and a soft, chewy center. When you take a bite and expose the jam, they really do look like theyre bleeding! They are baked at a slightly cooler temperature than some cookies, so they dont really brown during baking. Best if served the same day. It originally called for vegetable oil which I subbed with applesauce as I do with all my baked goods to cut calories and I tweaked a few other things. This is perfect to make when you have only a little bit of pumpkin left! A little goes a long way for this recipe. NOTE: I just modified this recipe because I made it again, and used 1 oz Baker's bittersweet choclate instead of cocoa powder. Came out so much better! Sweeter and creamier. Not really a blondie by my standards, but it passes off as an interesting bar-type dessert. PLEASE NOTE: Because most people are not really used to tasting molasses, it may take a few bites to fall in love with this recipe. I did not like it at all when I first tried it. But, after giving it a second bite, I found I can't get enough of it. This seemed to happen with EVERYONE who tried it. So, please, before giving an unhappy review, try it again. If you find that the molasses is just too much to handle, try cutting the topping ingredients in half. It really does make a lot of topping as it is.
