Kfc Macaroni and Cheese

A favorite among kids and kids at heart is the Colonel's Macaroni and cheese which was originally made fresh daily. Now it comes premade and is cooked in an oven like it originally was when it was made fresh.
Lamb - Rib Roast Dijon

When selecting Lamb Racks (rib roast), allow at least 3 ribs per person. Racks are usually sold 6 to 8 ribs per roast. This recipe will have to be adjusted logically to accommodate more than two people. Serve with roasted root vegetables, rice pilaf or mashed garlic-potatoes. Suggested wines - Sauvignon-Shiraz or Sauvignon-Blanc (or both). For dessert, I would recommend a lime gelato, to aid digestion; or skip dessert and have another bottle of Sauvignon-Blanc and a selection of cheeses and fresh fruit. -- posted by TOOLBELT DIVA

Very Moist Banana Nut Bread

This is a very easy, "no mixer" bread to make. It is very moist and a little heavy type banana bread. The really important thing to remember is using all black bananas to get my same results. I always use 5 medium sized bananas and this recipe makes 2 loaves. Also, I've never used buttermilk, but sour milk instead..a little vinegar added to regular milk. I've used this recipe since 1972 and last year made 32 loaves to give away for Christmas! It's truly a wonderful bread. I only bake it until the toothpick comes out almost clean, as we like it really moist. If you over bake it, or wait til the toothpick is completely clean, the bread will be a lot dryer. I realize some like it this way, so thats why I've given this hint. My family and friends would rather have it a little under done than over. It's so good with coffee, butter/jelly or I like mine just plain. I bake it in tin foil pans and it freezes wonderfully. I try to always have one or two in the freezer for company, or a little gift. This recipe came from a ladies club cookbook. The kind where everyone contributes recipes, they are made into a recipe book and sold to make money for charities. All the cooks are just plain "down home" country gals that produce miracles in the kitchen. It's my favorite cookbook and I've almost worn it out and it can't be replaced. I know there are many banana bread recipes here, so thanks for trying this recipe. I hope you enjoy it! -- posted by peppermintkitty

Fresh Peach and Nut Cake or Cobbler

Cake or cobbler depends who eats it! I just bought a bunch of the juiciest peaches! Eat a couple then came up with this sweet, fragrant, doughy cake. I used walnuts but pecans would be great too. This is easy to bring for picnics just bake it in a foil pan. I leave the skin on the peaches for the nutrition. But you can peel them but it real is good with the skin. -- posted by ~Rita~

Whipped Ricotta With Honey and Mixed Berries

Cool, refreshing, pretty and wonderfully appetizing. Originally, Bon Appetit - 2001. We added cream cheese to the ricotta to make this a smooth, luscious dessert. Why not use this with cranberries for Thanksgiving? Haven't done it as yet but why not? If you can find fresh ricotta, which is less grainy, then use it and omit the cream cheese. Can be made 1 day ahead, keep refrigerated and stir before using. It is very easy - time involved is refrigerator time. Update...03/2006 Serve with Amaretti cookies, coarsely chopped and add 3 tbsp. Amaretto liqueur. -- posted by Manami

Kittencal's Buttermilk Poultry Brine (For Chicken or Turkey)

You may never grill, fry or bake chicken again without using this brine first, it will produce the most flavourful juicy moist chicken you will *ever* have, it's a must for chicken and turkey breasts, and makes the best fried chicken on this planet! Plan ahead the chicken needs to marinade in the buttermilk brine for a minimum of 8 hours or up to 24 hours. This brine is enough to cover about 4 pounds chicken pieces. You can double the recipe and use it on a small whole turkey also, the cumin is only optional, if you are not a lover of cumin then you can omit but it really brings out so much extra flavor without being overpowering.... you will *LOVE* this brine! also see my recipe #225220 and recipe #148225. -- posted by KITTENCAL

Rotisserie Turkey

To properly grill a turkey using a rotisserie the unit must be positioned so the heat source is never directly under the bird. The indirect heat will allow the interior portions of the meat to cook thoroughly before the exterior becomes overdone.
Preheating must be done before rotisserie grilling your turkey.
A 12 to 14 pound bird is the maximum weight that can be accommodated on a standard rotisserie unit.
The turkey must be attached securely to the spit assembly making sure it does not slip on the spit as the rotisserie rotates.
The turkey must be trussed properly so the wing and legs don't get caught as it turns.
The turkey must be balanced on the rotisserie unit for if not it will not turn and burn out the motor.
A turkey intended for rotisserie grilling can not be bread stuffed. The slower cooking time may not kill harmful bacteria as rapidly as with oven roasting.
Check for doneness with a meat thermometer before removing the turkey from the heat source. -- posted by ~Rita~

Penzey's Tomato Basil Green Beans

This recipe is from a Penzey's catalog from several years ago. It is also very good with dill instead of basil, and I plan to try with oregano next time. Be sure to use plum (roma) tomatoes which are meatier than other types. Also, the cooking times are for whole green beans; I buy a big bag of frozen whole tender young beans at a warehouse club or Trader Joes.

I have reduced the amount of oil to 1/4 cup from 1/2 as originally written, based on a review and my own preference also. -- posted by appleydapply
