I figured I was going to have to learn to make this myself, since Nomi just adores this rice and asks for it every time. It's a little complicated, but gets easier each time you make it (says Debbie). Well worth the effort, I'm a big fan of this rice myself, and EVERYONE always fights over the crust! Perfect for the Festival of Lights, these are scrumptious as is, or with applesauce or sour cream. The 5-minute cooking time is per latkes. Schmaltz is available at kosher delicatessens. MAKE AHEAD: The latkes can be fried early in the day and re-crisped on a baking sheet in a 350&amp;deg; oven. NOTES To make schmaltz, use the large clumps of fat from the neck, body cavity, and from under the skin. In a small, heavy saucepan, cook the fat over low heat until completely melted. Cool, then strain the clear fat into a glass jar and refrigerate for up to 1 week or freeze. The extremely high quality of the kosher ingredients combined with the deliciously unique flavours inherent in this hearty, wholesome food, is so delightfully unlike fancy sauces of French and Italian fare, that the Jewish diner feels at home.  I am fortunate to have inherited a book by Pauline Frankel, (from my mother, GRHS) called simply &amp;quot;The Jewish Cookbook&amp;quot;. My mother loved this little book, because of its simplicity.   While I do not profess to know much about Jewish/Kosher cooking, I happily defer to Pauline Frankel's book, again,  because of its simplicity.  (Jews and Gentiles alike know about Latkes.... but do you know about &amp;quot;Latkes with Chutzpah&amp;quot;?)

It has been pointed out to me recently that this recipe is by no means one of Kosher value, because the inclusion of &amp;quot;Chicken Fat&amp;quot;, a meat product, and &amp;quot;served with sour cream&amp;quot;.  The combination of meat product and dairy product is not Kosher.  Thank you all who were interested enough to point this out.... Changes have been made; you may now enjoy...

			<description>This recipe goes back 30 years or more, my family *loves* these! you can make these ahead of time and then freeze, just cool and place on a large baking sheet to freeze, when frozen stack in a freezer container or pop them into a freezer bag, to reheat and re-crisp, defrost the pancakes then place in a 400 degree oven for about 8 minutes turn over then continue baking until crisp, I strongly suggest to double the recipe these will be half gone before they even make it to the table! I have been told that these can be frozen, partly baked, and then baked for additional time after removal from the freezer. 			<description>I've had many latkes in my life, those made with matzah meal, with flour, all sorts of vegetables, and they're all good but last year I decided to make mine with potato starch and OMG! They were so much better than anything I ever had so try these and remember to stock up on potato starch at Passover time as it has a very long shelf life. I don't give salt measurements as potatoes are never exact so start out by making one latke and add more salt to the next one if needed, just don't skimp on it as the salt and pepper really give it the great taste. If you choose to shred your potatoes instead of grating make sure your flame is on medium low or it won't cook thoroughly. You can also expect a lot of liquid to accumulate.
