Bacon-Wrapped Cream Cheese Chicken Breast

This is not at all difficult to make --- although you can use uncooked bacon strips I prefer to semi-cook the bacon in the oven first just to release some fat but do not cook until crisp or wrapping it around the chicken will be impossible --- the chicken may be prepared up to one day in advance, which makes this great dinner party food, just cover refrigerate and mix up the sauce when ready to bake :) -- posted by KITTENCAL

I have been living in Southern Missouri for the past 5 years and am amazed that people here have not ever tasted, let alone heard of wild rice, and you can't get it here at the local stores. I have my MN. people mail it to me. I could live on it!!!In our family, we call it "Mom's Wild Rice" I don't know where the recipe originally came from, but every person that I know that has tried it, makes it a part of their Holiday meals!!!Get the real "natural" wild rice. It is rather expensive, but goes such a long way!!!DEFINATELY COMFORT FOOD!!!!Tell me what you think! -- posted by coljohn

Heavenly "chicken" (Frichik) Casserole

A great vegetarian comfort food that also makes a great holiday dish. This recipe is a favorite among many that have discovered the deliciously tasting Worthington FriChik. You can also use real chicken, mayonnaise, milk and even add some cheese if you're not vegetarian. Before becoming vegetarian I made a casserole very similar to this one regularly. I got this recipe from a good friend that got it from another friend's cookbook. Worthington FriChik has egg white in the ingredients and there is cream in the mushroom soup, so its not vegan. I've been trying to use as little dairy as possible so I use soy milk and vegenaise (the yummiest soy mayonnaise). -- posted by Enjolinfam

Quick and Easy One-Bowl Cheesy Onion Rice Bake

This dish takes no more than 5 minutes to throw together and when you taste this rice you will eat the whole dish, it is *that* good! you could throw in 2 cups cooked chicken or turkey for a main meal, my family loves spice so I add in some cayenne pepper --- because of the high sodium content in the dry soup mix do *not* to add in any extra salt to this, you could add in the complete package of dry soup mix but for my family's taste we found it to be a little too salty --- all ingredients may be doubled --- this is *delicious* -- posted by KITTENCAL

Christmas Brunch Casserole

This is some kind of good. Perfect to bring to potlucks too. Make it the night before to save on some work the day of. Since it makes more than a 13 x 9 pan holds, I make a disposable loaf pan full too (and bring along with me in secret) and give it to the person who loves this brunch the most! I love that! -- posted by Caryn Dalton

Zucchini Rice Casserole

I don't know the original source of this recipe. My mother started making it probably 15 or 20 years ago. It is a Thanksgiving staple at our house. I will usually make a full recipe and split into two pans. The first we will have with dinner that night, the second will be cooked and once cool is wrapped in foil and frozen. To reheat, place back into the oven until warm. -- posted by Erindipity

Fluffy Carrot Souffle

This is a delicious easy side to serve at a Thanksgiving or Christmas dinner, it may be doubled if desired and may be made well in advance and refrigerated until ready to bake -- the first time I made this I used 3/4 cup sugar, that was too sweet for our tastes, start with 1/2 cup and add in more until desired sweetness is achieved, white sugar may be used in place of brown but I find that brown is better, Splenda may also be used if desired :) -- posted by KITTENCAL

Homemade Giblet Stuffing for Turkey or Chicken

In my photo you will notice a darker portion of the stuffing; this was the bit that was stuffed into the turkey itself and after roasting it has a crispy outside coating. This is a delicious savoury stuffing that I make every year for Thanksgiving. During the year I love to make it with a whole chicken minus the giblets as I can't find chickens that come with giblets in the UK. It's fantastic and whatever doesn't fit in the bird you can bake on the side. Note: I sometimes like to use a mixture of white and brown bread in this recipe. NOTE: Since the giblets will take a while you can do everything else while they are cooking. -- posted by Summerwine

Vegan Breakfast Casserole

I got the idea for this from a recipe in Vegan Planet, but I tweaked it quite a bit. You can either prepare this the day you eat it, or put it together the night before. If you do that, you'll want to let it come to room temp before baking it. Also, I was going to make some hashbrowns and mix it in with this, but I didn't have time. Just bake a potato, peel it, grate it, fry it in a pan with some veggie oil and layer it on top of the bread. My Chicago Diner gravy recipe goes really well with this. -- posted by tendollarwine

Kittencal's Four Cheese Lasagna

I strongly suggest due to the large amount of cheese filling to use a pan with higher sides or a lasagna pan however you definitely could use a 13 x 9-inch pan but it will be very full, I make this in my lasagna pan --- you will most likely have some sauce left over so just freeze for another time, this sauce freezes very well --- the secret to great lasagna starts with a great sauce and lots of it, so don't be shy to use lots of sauce --- this sauce *must* be made a day ahead which not only allows the flavors to blend and improve but also is a big time saver, it may even made up to 5 days ahead the longer refrigeration time the better the sauce will be, also to save some time an to blend the flavors I suggest to mix up the cheese filling a day ahead, so all you have left to do is boil the pasta and layer the lasagna --- although the recipe states to use only 16 noodles but will depend on the size of pan you are using, I always cook more just in case some of the noodles happen to crack while boiling --- the complete recipe may be layered in the pan, covered and refrigerated for up to 24 hours in advance --- since the tomato sauce is spread on top of the mozzarella cheese, I strongly advise to use only sliced for the layering, if you use shredded you will need to dollop the sauce on top then carefully spread --- prep time for this recipe does not include making the sauce --- you may adjust the noodles to the size of your pan, and also the sauce amounts may be adjusted to taste, the spinach may be doubled if desired, also one pound fresh sliced mushrooms may be added to the tomato sauce :) -- posted by KITTENCAL

I made this for the first time for Thanksgiving 07, and my aunt said before we left that I had to make it again for Christmas dinner (at her house). Don't be scared by the amount of ingredients or work - it's really quite easy and quick to make, and the taste is so much better than making it with pre-made ingredients. I doubled the recipe in the picture. -- posted by JsBride

Turkey, Vegetable and Roast Potato Pie

This delicious pie is always a huge hit with our family. This comforting casserole pie is filled with vegies and turkey in a creamy mustard sauce which is complemented by the cheesey crisp potato topping. Its perfect to make if you have any leftover turkey and roast potatoes from Christmas day or dinner the previous night. I got this recipe from a "Christmas leftovers" special in a magazine and have adapted it to my family's likings. You could also use leftover ham or chicken in place of the turkey. -- posted by Brittney_xo

Grandma Louise's Sweet Potato Casserole With Praline Topping

This is my Grandma Louise's recipe for a sweet potato casserole. I swear it is the best thing I have ever eaten. She makes it every Thanksgiving, Christmas, and Easter. If you are bringing this to a party, it can easily be reheated by covering it with aluminum foil, placing it in an oven at 350°F, and heating it for about 20-30 minutes or until just bubbling. Enjoy!

This lasagna is easier than most as there is no pre-cooking the noodles, do not use the no-boil noodles for this just regular lasagna noodles, the no-boil with become too soft with the addition of the water --- this was tested using Classico Tomato and Basil Pasta Sauce, any meatless Classico pasta sauce will do fine or you could use your own favorite brand --- I suggest to prepare the meat sauce up to 2 days ahead this will not only save you time but the flavors will ripen and intensify for a better tasting sauce --- cooking time does not include the meat sauce. -- posted by KITTENCAL

Buffet-Style Fluffy Oven Scrambled Eggs for a Crowd

This is the method that restaurants use to serve eggs for a buffet brunch --- for cheesy eggs mix in 1-1/2 cups shredded old cheddar cheese or you may sprinkle the cheese on top after removing from the oven --- 2-1/2 cups half and half cream and milk will produce ultra fluffy eggs, for a firmer texture reduce to 2 cups--- NOTE this recipe was tested using large eggs I cannot promise the same results using small or extra large eggs --- if you are serving these eggs at a buffet some side ideas would be salsa, green onions, cheddar cheese and soft buns :) -- posted by KITTENCAL

Fabulous Dairy and Soy Free Green Bean Casserole!

I have been really allergic to both milk and soy for years, as well as lactose intolerant, so I've been missing out on this holiday favorite for quite some time. Inspired by the recipe "I can't believe there's no lactose in this green bean casserole!" I made a version that is a little simpler and took it a step further by eliminating soy. My family thought it was even better than the traditional recipe!

Additional allergy/diet options:
To make this recipe totally vegan/free of lactose, use margarine instead of butter.

To make it gluten free, use gluten free all-purpose flour mix, available in most grocery store natural or allergy food sections. Caramelize some onions and put them on top instead of the french-fried variety. This is also a delicious option for those who want to avoid egg.

To make sure this dish is soy free, be extra careful when you check the labels for french fried onions, as some brands use soy protein or soy flour in their batter.

Enjoy! -- posted by Chef #1049909

A decadent recipe from Melissa Clark of the New York Times that combines the cheesy gooiness of a casserole with the custardy richness of a soufflé. Makes a satisfying vegetarian main dish (for 10) or a delicious side (for 16) for Thanksgiving or another special occasion. Recipe can be halved or even quartered.
Dish requires at least 4 hours resting time. -- posted by blucoat

Christmas Eve Baccala (Salt Cod With Potatoes & Tomatoes)

Traditionally, Italians dine on seven different fish and seafood dishes (symbolizing the seven sacraments) on Christmas Eve. (By the way, you don't have to wait for Christmas to make this wonderful dish.) This recipe is typical of the Calabrian region of Italy. Have plenty of crusty Italian bread available to scoop up the sauce. And, remember to buy your dried, salted cod (baccala) three days before cooking, so you can prepare it.
Mushroom Green Bean Casserole

A french-style green bean casserole minus the fried onions and using homemade white sauce with fresh mushrooms and onions. This is very similar to Kittencal's Recipe #128905 , but mine does not use water chestnuts or almonds, and mine uses Cheez Whiz process cheese instead of shredded cheddar. You can use two 16-ounce packages of frozen french-style green beans instead if you like. Use more or less cream depending on how thick you like your sauce. Yum! -- posted by Laura70
