			<title>Ukrainian Kutia (Kutya) Made With Cracked Wheat Cereal (Bulgur)</title>

			<description>This is usually made with whole wheat berries and is served for Christmas Eve.  This requires soaking for many hours and cooking for a long period of time.  With the cracked wheat (bulgur) it takes less time and is very good indeed.  I make this for my sister every week because she likes to eat it all the time as a dessert.  I also have made it without blending the cracked wheat cereal into a paste and I have left out the almonds.  I do like to grind my drained poppy seeds in the blender.  I used the coarse grain bulgur.  I also toasted my walnuts or pecans.
 
Bulgur is the Turkish word for cracked wheat berries.  It is made by cracking kernels of partially cooked or roasted wholewheat berries. Bulgur is known as the rice of the Middle East. It usually comes in three grinds: coarse, medium and fine.  Medium and fine grinds are used in salads; the coarse grain is used in pilafs. 			<title>Traditional Buttery French Croissants for Lazy Bistro Breakfasts</title>

			<description>I do not profess to make these all the time; living in France gives me access to wonderful croissants and other French breakfast pastries, However, these are even BETTER than MOST I can buy at the boulangerie, really! It is a time consuming process to make them, but the results are well worth the effort. The butter-enriched dough can be made the night before and stored in the fridge, and it can also be frozen. Once you have the hang of adding the butter to the dough and turning and rolling it to trap the air in between the layers, you are nearly there with the technique. This is my own recipe for croissants, and the quantity yields between 8 and 12 croissants, depending on how accurate you are with the measurements of the triangles before they are rolled. I usually start my dough off in my bread machine for the mixing, kneading and proving - it just gives me more time in the kitchen to get on with other things. I have also given the traditional method by hand, and the dough can also be mixed with a dough hook in a food mixer - choose whatever method is best for you! These croissants can also be frozen - before being baked; defrost overnight in the fridge before baking as normal. I'm new to the idea of pudding cakes, and if I hadn't made them myself I wouldn't believe they work!  This one's great when it's cold outside, it really warms you up. I'm giving the recipe as it was finally given to me.  However, I'm going to try it using some really good cinnamon-raisin bread instead of the regular bread and see how that turns out. 			<description>David Lebovitz was asked to remake Maida Heatter's wonderful popover recipe. They are the best the day they're made; leftovers can be stored in a container and snacked on the next day(they are still good). You could freeze them in zip-top bags as well. these work well in standard muffin tins.
