So I came up with this meal- it has the flavours of Mexican food without the majority of the calories and if you have extra points, you can even add a little guacamole or sour cream on top! It's worth using fresh salsa, not the jarred stuff for this recipe- it adds a lovely fresh bright flavour. 			<description>This is an easy, delicious, and simple recipe from &amp;quot;Essentials of Classic Italian Cooking&amp;quot; by Marcella Hazan.  You just mix all the ingredients on the stove and come back and hour later.  The onions get meltingly soft and sweet.  It'salso great with some crumbled blue cheese. 
If you use homemade pasta, which is more absorbent than spaghetti, you should start with 1 tbsp more butter when making the sauce.
TO MAKE AHEAD : You can cook the sauce entirely in advance up to the point where you add the parsley. 			<description>This can easily be adapted to whatever you happen to have in the house, since that's how I made it up tonight for dinner.  I'm sure it would also work with ground beef (omit the olive oil).  Most people will probably have to add some salt, but we've been on a low sodium diet for so long that what came in the canned goods was more than plenty for us. 			<description>This is a PHENOMENAL recipe from Fine Cooking.  I have made it for company and everyone raves over it.  It's labor intensive but SO worth it.  It either makes one huge pan or two smaller ones.  I have found that making the ragu the night before makes the preparation a lot easier. 

Two minor substitutions I have made:  (1) I use the already prepared ground chuck and ground pork from the meat section of my grocery store. 			<description>I first was introduced to this recipe when I was reading the book, &amp;quot;Belong to Me&amp;quot;, when the main character &amp;quot;would have sold her soul&amp;quot; for a plate of this. I had to do further research and hours later, found a recipe that I was happy with sharing. There are American versions of this and Italian versions of this. The Italian version has you begin by reducing the anchovies into a paste, reducing their fishy taste. It also has you cook the sauce longer, mingling the flavours and reducing the tomatoes into their own paste. Although excellent the 1st day, it is even better the second so plan ahead to make more! And please, RESIST the urge to cover this with cheese!
