Only made this because I am a HUGE fan of Wendy Richard (MBE) who played &amp;quot;Miss Brahms&amp;quot; on &amp;quot;Are You Being Served&amp;quot; and she also played Pauline Fowler on &amp;quot;EastEnders&amp;quot;.  She recently passed away and printed her famous chili recipe on the back of her funeral program. (You can see a photo of that in here! Check out the photos for this recipe)  I've had chili all over Texas and the South - I even made both recipes from &amp;quot;Throwdown with Bobby Flay&amp;quot; (both were VERY good) but I will tell you - hands down - THIS WOMAN'S RECIPE IS THE BEST CHILI I HAVE EVER HAD IN MY WHOLE LIFE!  And when I say &amp;quot;THE BEST&amp;quot; I mean: &amp;quot;I am SO STUFFED I might explode - but I can't STOP eating this chili because it tastes so AMAZING&amp;quot;.  Ok?  I tried to put it in the freezer - and ended up taking it out 10 minutes later and eating it again.  Today I had it for breakfast on eggs, and lunch and dinner!  Can't wait to have more tomorrow! I'm NOT sharing this batch with ANYONE! But I will share the recipe!

VERY URGENT/IMPORTANT: THE WHOLE SECRET OF THE RECIPE IS IN THE SCHWARTZ BRAND CHILI MIX!!!!!!!!!!!!!!!  Use any other brand and it will only be a 2-3 star recipe!     If you are in the USA the &amp;quot;Schwartz&amp;quot; brand chili mix in this recipe can be ordered online from  www.Distantbrits.co.uk or any other British food sites. PLEASE ONLY use &amp;quot;Schwartz&amp;quot; brand if you want this to come out a 5 STAR recipe- if you use any other brand, like &amp;quot;El Paso&amp;quot;, &amp;quot;Chichi's&amp;quot; &amp;quot;Ortega&amp;quot; or &amp;quot;McCormicks&amp;quot; it will be disappointing because those 4 brands I just named are nothing but salt and chemicals with very little spices.   I HAVE MADE THIS RECIPE WITH THOSE 4 OTHER BRANDS, JUST TO COMPARE -WHICH IS HOW I KNOW, IF YOU USE ANYTHING BUT SCHWARTZ - IT'S GOING TO BE A DISAPPOINTMENT.   PLEASE TRUST ME - IT'S SOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOO  WORTH IT TO SEND AWAY FOR THE SCHWARTZ BRAND, YOU CAN GET THE SCHWARTZ CHILI MIX IN 2 DIFFERENT HEATS: MEDIUM/MILD AND HOT.   I PROMISE YOU - IF YOU ORDER THE SCHWARTZ AND DON'T THINK THIS WAS A 5 STAR CHILI - SEND ME AN EMAIL AND I'LL PAY YOU BACK FOR THE COST OF BUYING THE SCHWARTZ.  OK?

If you can't find the British &amp;quot;Schwartz&amp;quot; brand, send the lady at distantbrits.co.uk an email requesting it.  Tell her which kind of heat you want., &amp;quot;McCormicks&amp;quot; brand in the USA is very disappointing - even the &amp;quot;hot&amp;quot;, it's not spicy and the taste really is missing something important.  I even tried adding more cumin, and fresh Jalepeno's but McCormicks - it's just NOT AS GOOD as Schwartz, so - if using McCormick's- please know - you've been forwarned: it's not going to be a 5 star chili. If you're in the UK - you should have no problem finding this product.

ALSO - careful when ordered because the recipe calls for 4 Schwartz chili.  That means chili MIX - NOT 4 bottles of chili powder!!!!  (I say be careful because Schwartz also makes chili powder, and you don't need 4 bottles of chili POWDER for this LOL!)

I used the HOT Chili Mix, but Wendy specifed &amp;quot;Mild&amp;quot;.  Get whatever heat you are comfortable with. Be FOREWARNED: If ordering the &amp;quot;Hot&amp;quot; - just because it's from England doesn't mean it's not as hot as you think.  While it is the most delish chili mix, It is 5 ALARM  Texas hot!!!!!  And this is coming from a gal who drinks &amp;quot;Franks Red Hot&amp;quot; straight out of the bottle whenever I have a craving! The mild is &amp;quot;mild&amp;quot; and also extremely delish.

Menier's Chocolate is VERY hard to find if you live in the USA.  I could only find 1 place online that sells it (Distantbrits.co.uk) Otherwise, use a VERY DARK (Swiss is preffered). When you open the Menier - the actual chocolate says &amp;quot;Nestle&amp;quot;, so I guess you could get bittersweet or semi-sweet Nestle.  Just don't use Hershey (ugh!)

When it smells ready - eat it.  You don't HAVE to simmer for 3 hours, as directed by Wendy. (Personally, I couldn't wait that long, it smelled too good)  It even tastes amazing room temp hours later!

I promise you - if you make this recipe EXACTLY as is - with NO SUBSTITUTIONS ON THE CHILI MIX (you CAN make substitutions on the chocolate)- Your tastebuds will think you've died and gone to heaven.  I can see why Wendy would leave such a fantastic Chili recipe on the back of her funeral program - people were probably begging her for years for this recipe. 

When I make this for the next Texas chili cook-off - this WILL win 1st place - and I will give Wendy Richard all the credit since it is her recipe.

Huh!  Who'd have thunk the best recipe for Chili would come from ENGLAND!?????!!!!!!

R.I.P. Wendy - and I thank YOU for all the years you've made me laugh and cry and for the gift of this AMAZING Chili recipe!  I will be entering it into contests in your memory! I made this for my own chile verde cookoff. My DBF chose this one as the winner, and I went with recipe #369095 as my favorite. I  mixed the two together and shared it with my colleagues who eagerly ate some for lunch and then brought home little bowls to share with their families. I'm happy they thought it was good enough to share- I hope you enjoy it too! Chile Verde always tastes better the second day! 			<description>I concocted this on getting acquainted with the taste and texture of a roasted spaghetti squash (also known as a calabash squash). It's an alternative to the idea of treating the squash as a substitute for spaghetti noodles. The roasted squash really has slaw-like texture--soft yet crunchy. Spaghetti squash is an ancient New World food source in Central and South America, so I decided to try making something that combined an ancient native trio of ingredients: corn, beans, and squash. The tortillas get will be soggy after sitting in the refrigerator. 			<description>I first had this at a pot luck at work.  Got the recipe from a friend but decided it needed some tweaking.
You may add as much heat as you like or keep it toned down.
Add taco toppings too if you like when serving.
It does take a little work but in the end it pays off.
Note:  You won't use all the reserved broth.  There is a large amount saved just to make sure you have enough.
The chicken soup in this recipe is the creamy color one not the yellow.
In place of the chips you can use taco shells broken in halves.
Or you can use the Corn tortillas, omit softening them.
Using the chips give more corn flavor.

I came up with it when I had bought corn tortillas without a definite plan for them and then we had leftover rice from supper the night before.  You could use a lb of ground beef instead of chicken, add chopped bacon to the rice mixture, or instead of tomato sauce, pour a can or two of cheese soup over the meal. 			<description>I live in southern New Mexico.  Our cuisine is far different than that of northern New Mexico (ie, Santa Fe, Taos, etc.).  Las Cruces, or Hatch really, is the chile growing capital of the world.  Whenever we have pot lucks at work or partys, my green chile enchiladas are always requested.  If it is going to be an especially large group, I leave out the chicken and just make several trays of green chile cheese enchiladas.
Just for clarification, &amp;quot;CHILI' is that soup dish made with hamburger meat and beans that is popular in Texas, while &amp;quot;CHILE&amp;quot; is the spicy vegitable that makes mexican food so great.
Green chile and red chile come from the same plant.  Green chile is harvested when ripe, and red chile is from chile left on the vine or tied up in RISTRAS to dry out and become red chile.
When I was in college in Odessa, they didn't have descent green chile, they used tomatillos instead.  I did not like that at all, so I substituted fresh jalapenos instead. 			<description>I used to go to a local Mexican restaurant all the time for this soup.  I finally decided I needed to learn to make it because eating out was costing me way too much ;)  I looked through several recipes for the soup, combined some, and then tweaked until I came up with a recipe that was close to that of my favorite Mexican place.  This is quick and easy and I usually get rave reviews when I make this for a crowd.  I hope you enjoy it! :)

PS. This soup has a mild heat.  If you like it spicier, add a can of chopped chilies or a diced jalepeno.  I've also substituted the Rotel tomatoes with a really good chunky salsa when I couldn't find them. I created this recipe when I needed to make dinner in the crockpot because my husband was redoing the floors in the kitchen and I had no stove to use.  Thanks to him a new chicken recipe was born.  I use my homemade canned salsa but any salsa will do.  Also, we mostly eat chicken breast, but you can use any type of chicken.  The cooking time will need adjusted longer for dark meat or chicken on the bone.   update; This was amazing!  Just like I remembered! I made this today and used 1 jar of the salsa and 1 cup of chicken broth. I also bought a package of refrigerated corn tortillas. I cut into 9ths pizza style, and fried them in oil. I used 18 tortillas. I used a mexican queso fresco, a mexican crumbling fresh farmers type cheese for the garnish.  Totally delish! Cooked chicken is mixed with smoky, hot chorizo sausage and folded through a chipotle chilli tomato sauce..........sounds too hot?! I then added some sweet corn, sour cream and a jar of mild salsa to calm it down a bit, but please DO use hot salsa if you like a little spice in your life! I topped this with a dollop of sour cream and dressed it with chopped jalapeno peppers, parsley and a little chopped coriander (cilantro) for a perfect cold weather lunch. I devised this recipe especially for the Two for One Leftovers event in the Cooking Photo's Forum. Please adjust the chilli powder to your own requirements. Its very simple to make and warms them up on a cold day. The left overs
are just as good if not better than the day you make it. Instead of using the
canned tamales, I started using the fresh or frozen ones. That really makes
the difference. The canned ones are a bit oily to use but you can use them.

			<description>This is a great recipe that a friend of mine has been bringing to office pot-lucks for years.  I just got the recipe from him and made it myself.  It's a unique and pretty decadent twist on traditional enchiladas.

You can adjust the amount of green chiles and jalapenos to your particular taste.  This recipe carries a little bite, but is not particularly hot (even using green chiles rated HOT).  To pep it up, use 3 cans of green chiles and 2 cans of jalapenos.
