			<title>Country House Fudge- Martha Dixon</title>

			<description>My Mom makes this amazing fudge every year at Christmas.  It's very smooth, creamy, gooey and rich- not all dry and hard like alot of recipes I've tried. It's unlike any recipe I've found.  You'll love it.  You'll blow everyone away when you serve this!  It calls for 4 cups nut meats but you can substitute those for whatever goodies you like (my all-time favorite is cherries). You can also add different flavorings to make your favorite!  My Mom has made this with crushed cookie crumbs, nuts, coconut, peanut butter, caramel, cherries, raspberry flavor, mint flavor, rum flavor marshmallows... there are so many I can't remember them all. The recipe comes from a cookbook called &amp;quot;Martha Dixon's Copper Kettle Cook Book&amp;quot; from 1963.  Martha Dixon was quite well-known at that time and had a cooking TV show that was really popular back then.  There was no Food Network back then.  It was Julia Child and later the Galloping Gourmet... remember them?  Anyway, her show was on TV for several years. I am posting this as it appears in the original book, which was written as a tribute to her father Stuart Macdonald (Montgomery's son).  The recipes were written with precise instructions, geared for young cooks.  All recipes were apparently tested by a 12 year old cook, with perfect results.  Quote from the book: &amp;quot;I had one chocolate caramel once to years ago and it was simply delicious. What a joker!  Although she was famous for her fudge we never caught on that it was the recipe on the back of the Fluff jar!  So this reminds me of my MIL and I will miss her very, very much. 			<description>A soft fudge flavoured with golden syrup an vanilla. Itnstead of golden syrup you can use corn syrup or honey. Or mix in melted chocolate before leaving to set. I've been trying to make a soft fudge for ages now, and this is the first that worked! It's all in the technique of cooling. A sugar thermometer is advised, as it makes things alot easier.

The time on this recipe is guessed..i don't time myself when i make things. Even better, they shared it with all the girls in their youth group that night. Everyone loved it. We can't wait to make it again. Although the recipe instructs to let them sit overnight, we found they didn't reach the soft, creamy, melt in your mouth butter mint texture until they had sat for two and half or three days - perhaps because we live in humid Florida. I casually sprinkled the thick-cut Hemplers bacon with cayenne before frying to a nearly blackened crisp. Once the caramel had reached its perfect molten temperature I stirred in a handful of the bacon then reserved the rest to get sprinkled on top. The caramel set beautifully. Some were cut and served as is while a select few were covered in tempered dark chocolate. All of them were devoured.

This is my mum's recipe for Coconut Ice, little coconut squares which are coloured pink and white, and used to be popular in old-fashioned British sweet (candy) shops. 			<title>Monastery of the Angels Peanut Brittle</title>

			<description>The monastery is located in  the Hollywood Community of Los Angeles at 1977 Carmen Avenue, where the nuns prepare candy and other food products to sell, with the proceeds going to charity. One can visit the monastary by doing a google search to find the hours when they are open to the public.   Their heavenly candies are exceptional, which is no surprise because candy making was taught to the nuns by the former owners of Juliet's Candy Shop in Pasadena.  When the shop was closed, the couple donated their equipment and recipe collection to the monastery.
The nuns make their peanut brittle only once a year, around Christmas time.  This recipe has been published in the Los Angeles Times many times, usually around Christmas.  Some cooking notes and comments which were provided to the Times by the sisters; raw peanuts are the key to making their brittle. Cooking the peanuts  in the syrup gives the candy it's outstanding flavor.  The nuns have also stated that this recipe which they have provided to the Times comes as close as any one can come to in duplicating their recipe in a home kitchen.  Because the nuns use commercial ingredients and equipment, the end product will not be exactly the same.   Note, all recipes which are published in the Los Angeles Times are first tested in the Times test kitchen, (where residential cooking equipment and techniques are used) before the recipe is published in the newspaper.
