			<description>This recipe came from a small cookbook called Patches Cookie Book that came from Patches in Emmaus, PA.  Each year for many years the gift/novelty shop invites locals to submit handwritten recipes for the book.  This came from the 2002 edition my mom picked up for me when she traveled to PA that year.  This particular recipe is credited to Sally Applegate.  I just made these for my holiday tray and learned a few things: the recipe does not make as many as the 60 it says it does, paper liners for the muffin tins are a must (I sprayed my first large batch of muffin tins only to realize that the carmelized sugar makes it impossible for these to come out in one piece.), and that these may not be traditional shofly's but a variation thereof based on a zaar and internet search.  These shofly's (as spelled in the handwritten recipe) have no molasses and also have the addition of cream cheese in the crust.  They are very good though! Yield will depend on how full you fill each muffin tin with the given layers. 			<title>Lemon Drenched Lemon Cake</title>

			<description>It doesn't rise much... the beauty in this cake is its flavor. It made one loaf cake for me and 3 mini loaves. I had planned on bringing the large loaf to my neighbor but decided against it. Not because I wanted it all to myself (which I did)... but because I dropped it half way through the baking time as I rotated it in my oven. Luckily it landed right side up. And lucky for my dogs the whole middle section of the cake shooted out from the pan and landed on my checkered linoleum floor upon impact. I quickly put what remained back in the oven and guarded the hot batter from my dogs until it was cool enough for them to eat. They lapped every last bit up and I was able to present 2 mini loaves (untouched by dogs) to my neighbor and I have a loaf resembling a lemony grand canyon waiting for me for breakfast. I don't know how they would compare to homemade oatcakes in Scotland or Ireland, although in my search for a recipe, I've found that there are many varieties, including sweet or yeast-leavened.  This recipe is based on one I found in a Saturday Evening Post many years ago--which I adapted, lost, and then had to recreate from memory.  However, I am quite pleased with the final result!  Everyone seems to love them.  I think they are traditionally served with cheese, butter, jams, etc. but we just eat them plain. It was the fastest burrito I've ever made, and I'm going to freeze the leftovers individually.  Who needs to purchase frozen burritos when you can make your own with ingredients you have on hand.  The only thing I did differently is I used around 7 ounces of green chilies and instead of the burrito seasoning mix I added my own seasoning (fresh cilantro, garlic, cumin, and chili powder). 			<description>I will admit, this is similar to both the Hershey's and the Ghirardelli cookie recipes - the back of the chip bags are my best sources of inspiration. :) However, I live at high altitude, so I have changed it up a bit for that and for my family/our friends' tastes. I find that they never flatten (once out of the oven) and they stay chewy for several days. They also freeze well. My store-bought chocolate chip cookie-loving nephew even asked if I could make more of these once they had all been eaten. That was awesome. 			<description>I'm not a chocolate fan (atleast not the kind made in the U.S.), but I LOVE peanut butter and chocolate and this hit the spot.  I found the recipe in 2007 Taste of Home Annual Recipes, and I followed as listed except I didn't have unsweetened chocolate.  Joy of Cooking said to use 3 tablespoons of unsweetened cocoa plus an additional tablespoon of butter per ounce as a substitute.  So I used 9 tablespoons of unsweetened cocoa and 3 additional tablespoons of butter which worked like a charm. I have made it many times since then, and it's always a favorite whenever I make it.  The recipe makes quite a bit, so it's one of my favorite dishes to take to potlucks, picnics and other gatherings with large crowds.  The recipe would fit a lot of party themes, as the ingredients represent various continental cuisines, from the Asian inspired chestnuts to the Brazilian cashews.  But it is the smokey Dutch-influenced gouda cheese that adds a wonderful Mediterranean flair to this great picnic salad. 			<description>I found this recipe in Guy FIeri's Diners, Drive-ins, and Dives from Bob Mueller of Louie Mueller Barbecue in Taylor, Texas.  I must admit I thought the ingredients sounded too simple to be so delicious.  This is a potato salad you can't stop eating.  I really liked the idea of mashing the potatoes because I've been told the secret to a great potato salad is small and uniform potatoes.  I'm way too impatient to dice perfect potatoes, but I did partly mash them and loved the creamy texture (next time I'll mash more thoroughly).  Mashing potatoes makes them taste better for some reason, kind of like what happens when shredding cheese (it's just tastier)!  I'll make this one again because it's that good. 			<description>This is the perfect blend of Tangy/Sweetness, it is remarkably mild,  not oily and is hugely versatile!  Wonderful for picnics, lunches to go or just an added side at dinner. I do NOT like apple cider vinegar but in this recipe it is fabulous, especially for bean salad skeptics like me.  I make it in a one gallon ice cream pail and store it in the fridge, when it begins to run out I add a can of what ever bean I have on hand and a few more red onions.  I can do this until the 'brine' runs out.  Then I just start all over again and always have it on hand.  Fresh cooked beans have a nicer texture and are more cost efficient than canned but canned is yummy too, though do contain lots of sodium.  So if you are on a sodium restricted diet, I would suggest cooking dry beans and fresh green and yellow beans for this recipe. 			<description>Although it's called cucumber potato salad, the recipe doesn't even call for cucumbers.  It calls for cucumber dressing.  I think next time this would be good if you threw in a few cucumbers too.  This recipe serves 36 and is designed for large gatherings.  I made 1/5th of the recipe or so and was pleasantly surprised at the flavor of the cucumber dressing.  I must confess that I added a few hard-boiled eggs, used the celery ribs and the leaves, threw in some dill pickle juice, and I couldn't resist a few crunchy garlic dill pickles in the mixture.  The recipe is great just by itself, but I love dill pickles and eggs in potato salad. 			<description>This is a very good potato salad from the folks at America's Test Kitchen.  I must confess that I love dill pickles and prefer that flavor to sweet pickle relish.  I wound up adding a couple dill pickles and some dill pickle juice to this recipe (just a personal preference) and quite a few more eggs.  Here are the tips from Cook's Illustrated:  If you only have celery salt available, use the same amount but omit the salt in the dressing.  When testing potatoes for doneness taste a piece.  If you overcook they will become mealy and break apart.  The potatoes must be just warm or even fully cooled when you add the dressing.  If you find the potato salad a little dry for your liking, add up to 2 tablespoons more mayonnaise. I really like the seasonings--cinnamon, ginger, and cloves.   It makes a nice twist on a classic treat.  Next time I'll skip the shortening and use real butter (just a personal preference).  I'd also dip my fork in white sugar and press them in a criss cross pattern after they come out of the oven instead of before. I make this quite often and serve it with a bowl of my potato soup or my chick pea soup, but you can use whatever you like best. Slice a few good fresh tomatoes or some fresh fruit if you prefer, and you have a great easy dinner. Two (2) nights a week, I really try to eat a bit lighter - and this fits the bill. But, it also makes an amazing appetizer, or a great side dish for any meal during the week. Simply put, it is just really good.  Now whatever you do ... don't get rid of that cheese - Save!  It makes a great spread on baguettes or makes an amazing spread for a sandwich.
