			<title>'rough Cut' Slow Cooker No-Beef Chili</title>

			<description>This is a simple, hearty comfort recipe that was based on whatever I had in the pantry last night.  It's called 'rough cut' because it is meant to be just a &amp;quot;rustic&amp;quot;, simple, easy, hearty, filling dish.  There is to be No tedious MINCING!!  :-)  Just put the ingredients in the cooker. ;-)

It's really easy!  Just put the ingredients into the cooker in the order listed, ending with the chicken.  You don't want to taste it after adding raw meat to it so adjust your seasoning as nearly as you can before the chicken goes in.  You can adjust the flavors further after it's finished.

Ours came out with a LOT of juice so, if you don't like it that way, consider draining the tomatoes, cutting the stock and using bouillon cubes instead.  Or cook as directed and removing excess juices to reach the consistency you prefer.

I ladled off about 4 cups of the liquid after all the seasonings married in the cooking process.

I served it over rice.

I thought about adding ground cayenne or red pepper flakes after cooking for a little added heat.  Or just having them in ramekins on the table for those who'd like it.

Consider substituting 2 LBS of ground turkey or chicken for the thighs.  I'm going to try duck or venison this winter.

			<description>I don't recall where I got this but it's a family favorite that we make often!  We generally use a mix of white and dark meat so use your preference.  All ingredients can be adjusted to taste.  Fish oil can be omitted but it really adds to the flavor!  I highly recommend adding the peanut butter a little at a time and tasting the sauce with each addition as some may like more or less peanut butter flavor.  Rotel is a great substitution for the diced tomatoes if your family likes it.

I've quadrupled the recipe with great results for large gatherings and you can easily scale back the chicken and add more onions and mushrooms to make this even more budget friendly.  Leftovers freeze well and reheat easily in the microwave.

This also works well in the crockpot by throwing in everything except the peanut butter (and rice or noodles) and cooking till the chicken is done. I personally love the meat in a folded and fried flour tortilla w/ cheese, guacomole, lettuce, tomato, and sour cream.

			<description>This is an easy put together dish which has lots of flavor.  I am especially fond of it because of the wine and tomato base vs. soup based. A key to this dish is to pan sear the chicken first, the flavor is just so much better to me. The shrimp is added 30 minutes before serving which will give you time to make a side of polenta with added parmesan cheese, or you could use rice; and a small side salad. 			<description>A mixed meat stew that started out as a sweet and sour way to use some leftover cranberries and ended up tasting like a Stifado - so I was told by the eaters!. 

Appreciated by the fans of the local Greek Restaurant (my family)!

A bit of an experiment (with the cranberries) but a happy accidental result.

			<description>This recipe comes from the book:  &amp;quot;Make It Fast, Cook It Slow&amp;quot; by Stephanie O'Dea.  It is a very tasty, not too hot chili that is just right for these cold winter days.  I added little cubes (less than 1/2-inch) of 3 uncooked chicken breasts to this chili about half way through the cooking for a little more protein, as though it needs it.  It didn't hurt one bit!  The author says this is a soupy chili but I did not find it so.  It has great flavor.  She cautions that the beans sink while the corn floats. 			<description>A friend of mine made this soup for a baby shower that I recently attended and everyone loved it!  Fritos or tortilla strips and cheddar cheese are optional topping's as well as the sour cream. I like it the best with only sour cream which make it HEALTHY which is alway a major plus! You do not need to pre cook the chicken, just put it in raw OR frozen, which makes it super easy. For spicer soup, get the spicy RoTel tomatoes and/or Medium or Hot Tostitos Salsa but you will find that it has a lot of flavor and is quite spicy for not having to add any extra spices -- SO easy!!
