I have done the recipe with chicken not cockerel but it was great; everyone else thought so. Try using freshly ground cumin &amp;amp; coriander for most excellent taste. Coriander seed really loses its flavor fast when ground; I was amazed at the flavor difference the first time I ground coriander seed myself - totally different from the bottled ground stuff. Reduce the fat by skinning the chicken parts if you wish though a bit of fat off the thighs is a nice flavor in the stew. 			<description>Gumbo, the ultimate Cajun food. It's really just a thick stew served with rice, and isn't nearly as difficult or exotic as some TV chefs will make you think it is. Here's the simple, home cooking version my family actually cooks in Louisiana. This recipe uses chicken and sausage, but you can use anything that swims, flies, walks or crawls. Shrimp, alligator, turkey, ham, anything you like. This one is also a fil&amp;eacute; (sassafras powder) gumbo, which means no okra. If you prefer okra, you can add some, I just don't really like it that much if it's not fried. It is in fact gastronomic encyclopedia with some recipes. I have changed the recipe a bit because I could not find cockerel blood to thicken the meal at the end. Bouqet garni mention in the recipe consists of bay leaf, thyme, parsley, rosemary, sage and cloves. I have done the recipe with chicken not cockerel but it was great; everyone else thought so. 			<description>Some people think that New Orleans cuisine is Cajun cuisine.  It isn't.  It's Creole cuisine, where most sauces and gravies are prepared with tomato.  To delight in true Cajun cuisine, one must travel west of New Orleans into Acadiana, where, in my opinion, the food is much better!  Just be sure that you like spicy, because most of it is highly seasoned.  My mother taught me how to make Gumbo.  I usually make enough to freeze in portions so that I'll always have some on hand. I'd have his tray ready the night before or in the morning and by lunch the frozen cube(s) had almost thawed and just needed a little warming in the microwave. 			<description>This is a recipe I adapted from Martha Stewart's Everday Food. It is a stovetop version of a classic southern casserole. I am usually suspicious of so called &amp;quot;quick&amp;quot; versions of classics and even more so of &amp;quot;light&amp;quot; adaptations, but this one was right on the money. The texture and flavor are reminiscent of Boston Market chicken pot pie. There is no cream of chicken soup and you can have dinner on the table in about 45 minutes. The original recipe called for whole wheat biscuits, but I made Bisquick biscuits with melted butter generously brushed on top (makes a golden brown crust). This recipe would be delicious with turkey and can be made with cooked chicken or turkey as well. 			<description>When I was growing up, one of my favorite comfort foods was my maternal  grandmother's chicken and dumplings. &amp;quot;Nana&amp;quot; would stew her chicken and debone it, strain the broth (seasoned with fresh rosemary from her garden), roll her own biscuit dough, then drop hand-cut, flour-rolled dumplings into her broth. It was a lot of work, but she always seemed to have it on the table in minutes! She usually made it when I was sick or not having a great day (my mom too). This recipe is my adaptation of Colonel Harland Sanders' personal gravy and dumpling recipe, which I've brought a little closer to Nana's... made a lot easier! PLEASE NOTE: THIS RECIPE HAS BEEN REVISED SINCE THE ORIGINAL POSTING, AFTER CHEF #1523855'S REVIEW.  DOUBLING THE BROTH WAS MY SOLUTION (AS I'VE DONE HERE).
