From Southern Living, May 2009 (recipe by Shirley Wood, San Antonio, Texas) this versatile and hearty dish makes a great one-bowl meal. You can substitute one 12-ounce can rinsed and drained albacore tuna for a "Tuna Tortellini Salad", or serve this as a side dish by preparing without any meat.
Smart Chicken Lasagna (Outstanding!)

I purchased 2 packages of Smart Chicken to try out as it was buy one, get 1 free. Wow...really great ground white meat chicken! The taste is so fresh due to their method of air chilling and minimizing the use of water in their processing. This recipe is on the back of the package. It makes the most marvelous and healthy lasagna! I am going back to get 2 more packages just to make this sauce and freeze! The only changes I made were: grated the carrots, added 1/2 tsp. Accent plus freshly ground black pepper to taste.I also used 1 box of frozen creamed spinach as that was what I had on hand. This doubles well. If you are trying to eat healthier, this chicken recipe is for you! -- posted by Debaylady

Spinach Lasagna With Chicken

I found this recipe on a can of Del Monte spinach. I used fresh spinach instead of the can, chicken instead of beef. It turned out to be a big lasagna, but it was very good. I made it in a 4.5 quart casserole dish. It seems like you could substitute and add a lot of things. I added some zucchini to the chicken. I also used low-fat ricotta and low-fat mozzarella. -- posted by 2bFeChef

Red Wine Pasta, Broccoli Rabe & Grilled Herb Chicken

This has rich red wine flavors but with fresh broccoli rabe and herb chicken done in advance and then just sliced on a bed of the pasta topped with Romano cheese. If you don't like the tang of romano use Parmesan. And for that matter if you can't find broccoli rabe, use regular broccoli.

QUICK TIP: My tip for the day, pick up from your local grocery store some olives. This goes great with a big bowl of olives, or artichoke hearts, just in a can (without oil). Hit the artichokes with a little balsamic and olive oil, salt and pepper and put in a bowl next to the olives. And what a great side dish. Salad. Buy a bag of greens. Add a very simple (even store bought if time is difficult) vinaigrette your favorite, some fresh heirlooms and good red onion sliced thin. Very classic salad but always good.
But the spaghetti and the chicken is the star.
I have to admit that I have made the spaghetti for years, but the addition of the broccoli came from FN, Michael Chiarello. My Italian friend first turned me on the the "Red" spaghetti many years ago, however I loved the addition of the broccoli rabe thanks to the FN. So I can't take all the credit for this, but definitely worth sharing. -- posted by SarasotaCook

Frozen Baby Meal 3 of 6 (Chicken Soup)

This is one of six frozen baby meals I used to make for my son. A friend gave me the combination and with minimal preparation you save yourself time and money. All six are really pretty good and I've made them for myself in a pinch. I would either try to use leftover meat from other dishes I'd prepared or intentionally make extra to use for these meals. My son used to have a three-compartment baby tray with lid and I'd put one or two frozen cubes in the first slot, a little baby vegetable in the second slot and a little baby fruit in the last slot and he was set for lunch. I'd have his tray ready the night before or in the morning and by lunch the frozen cube(s) had almost thawed and just needed a little warming in the microwave. The serving sizes are difficult to determine since it is dependent on the age of the child. -- posted by Queen Puff

My Kids Favourite Pasta Meal.

Sarasota's Light Version of Pasta Caesar Salad With Chicken

This originally came from a cookbook which I sold. I think Cooking Light or Prevention Magazine, but I just copied the recipe on a index card so this is all I have. Besides I think I changed a few things along the way.
Well, regardless, I loved this because it combines all the flavors of a caesar salad without the calories. The arugula bumps up the flavor and the dressing on this is light and simple but still full flavored.
Now originally it didn't have chicken but one day I had 6 or so chicken tenders and decided to pan saute them and add it to the salad. I love the extra flavor of the breaded chicken to the salad. -- posted by SarasotaCook

This is comfort food to me! It looks so nice and tastes deeelish! Your family will love this and your guests will love you for it! Note: I don't know why this recipe states "no boil, oven ready" lasagna noodles, I bought the required pasta as stated, but I boiled it as that's the only way it would be done! lol I believe it is an error. The only no-boil lasagna I know of is fairly thin which is what you're looking for. You may use any thin pasta, such as very thin noodles. I made it as is and the next time I made it with a wide noodle and it was perfect. -- posted by FLUFFSTER

This is one of those recipes that can be made quickly with what you have in the kitchen!
Cider Sauteed Chicken over Pasta

This was a one-off experiment that needed to be remembered. Flavorful chicken breast, sweet onions, and tender pasta. It has all of the makings of a hearty, yet healthy meal for the family! The preferred pastas are either rotini or angel hair, as both tend to hold the delicate flavors of the sauce better.

Read the recipe before cooking, as some steps are slightly out of order for ease of writing the recipe. -- posted by Obsidian468

This is my version of my husband's favorite casserole. It is a great way to use up the leftovers from the holiday turkey. You can also use the meat from the ready to eat rotisserie chickens availabe in grocery stores.
Chicken Noodle Soup over Mashed Potatoes

If you haven't tried chicken noodle soup over mashed potatoes, I am sorry! You will never go back. It makes a creamy, delicious meal. I always make my recipe #407601 they really make a difference in the soup, 1 1/2 this recipe as you need more noodles. I also use recipe#404067 for the potatoes, cut back a bit on the butter and milk when using in soup because all the liquid already gives it great flavor. Hold the meat, and you have a delicious side dish. If you want to make it vegetarian, use a vegetarian Worcestershire sauce. This is also good with extra-firm tofu. -- posted by Meguin

Chicken Cacciatore

This is out of the 2002 edition of KCTS Chefs cookbook. It was sent in by Executive Chef Chris Tess from Mama Stortini's Ristorante Restaurant. I decided to make this a 2 serving dish instead of 1 based on the calorie and fat count along with the huge restaurant amounts that are normally served. My only change was cutting the 8 oz chicken breast into 2-4 oz size. The rest of the ingredients stayed the same. -- posted by TeresaS
