Parmesan Baked Salmon

This recipe is very easy to make, low calorie and bursting with flavor. I found it in one of my favorite cookbooks, Easy Dinners: Healthy Recipes. I used Miracle Whip instead of the light mayo to shave off a few extra calores. -- posted by Stefanie828

Salmon Piccata Style

Roberto's Restaurant, Friday Harbor, Washington. Faced with only four burners in his restaurant -- no oven or grill -- chef Roberto Carrieri asked himself what an Italian chef might do with a piece of salmon and a saute pan. The answer took inspiration from the classic veal piccata, marrying salmon with lemon, capers, and butter. With this lively salmon dish, serve a rich, opulent pinot gris or chardonnay, such as the King Estate Reserve Oregon Pinot Gris.
Salmon Gravlax

Waterfront Centre Hotel, Vancouver, British Columbia. Traditionally gravlax is served with ice-cold shots of vodka or aquavit. Clear Creek Distillery's pear brandy is a delicious Northwest match, especially if it's used as the brandy in the brine recipe. Be aware that this salmon needs to cure for 48 hours in the refrigerator.
Salmon With Chermoula

This recipe is originally from Williams-Sonoma cook book, "Essentials of Mediterranean Cooking". The Chermoula herb blend is so delicious; it is a blend of cilantro, parsley, garlic, lemon, cumin, and paprika. It has such a deliciously bright and fresh flavor.
Salmon With Honey-Lime Dressing

I got this recipe from Weber's Real Grilling. The original recipe calls for a huge fillet salmon on a full cedar plank, but I've done this recipe for individual salmon fillets on smaller planks. It's a much nicer way to serve them, and easier to do for a smaller group. The proportions here are for the whole large salmon, but I find that about half is enough for 3-4 smaller fillets. -- posted by CoCaShe

Another lovely way to cook a lovely fish! You can use different nuts such as walnuts, hazelnuts, almonds etc. You may also use a different fish such as Chilean Sea Bass, Trout etc. Seafood Magic is a seasoning by Chef Paul Prudhomme. Get his seasonings if you can find them - they are to die for! You may sub Old Bay instead but it wont have the same flavor, though still fantastic! -- posted by Suzy_Q

Easy Peasy Red Thai Salmon Curry

Knocked this up for a dinner party last night, as a mild dish. Tasty and quick!
This will vary tremendously depending on the curry paste you are using. Taste it first. If it's super-hot, you'll need to reduce the amount unless you want a hot curry. If this is the case, you may need to add in come more flavouring. I've tried successfully with a tin of red thai curry soup if you're going for the easy approach, otherwise add grated ginger, cumin, coriander and a splash of fish sauce and rice wine vinegar.
Of course, there's plenty of more complicated recipes out there, and this one's supposed to be easy, so try to go for a curry paste that's tasty but mild. You can always add more chilies to boost the heat! -- posted by Snowbunny Andorra

An indulgent and luxurious champagne breakfast or brunch dish that even those who don't like the texture of smoked salmon will love because it is cooked in with the eggs.
Little Smoked Salmon Cucumber Cups With Peppered Creme Fraiche

Delightful and EASY little smoked salmon and cucumber appetisers, and healthy too, with NO pastry! These are a breeze to make but they tick all the taste boxes, as well as being elegant. Cucumbers do vary in size, and I have suggested a medium cucumber, which is about 10" to 12" long.........however, any size will do!! Adjust the crème fraiche to how many cups you yield from a cucumber, I managed to make 30 cups and used 10 tablespoons of crème fraîche for that amount, 1 teaspoon per cup. Serve these with cocktails and pre-dinner drinks, or as part of a buffet. The cucumber cups and crème fraîche can be prepared beforehand, but these should only be assembled 1 hour before serving (at the most) and covered in cling film to ensure the smoked salmon does not dry out. Allow 2 to 4 per person, depending on what else is served. -- posted by French Tart

Smoked Salmon

This recipe takes time, but is well worth it. Use the freshest salmon you can find. It is best to cut the pieces of salmon all the same size so you get even brining and smoking. Great for canning as well. Note: You may add other flavors to the fish such as garlic powder, pepper, soy sauce etc. if you like. The recipe can easily be doubled. You can use your imagination and try other types of fish as well. Even small whole fish. -- posted by RobinAnn
