Easy Spiced Salmon

Adapted from WW Magazine (May 2008). The original recipe included a kind of relish which I skipped, so this was a super easy and delicious way to make salmon. We served this with fruit salad sprinkled with grated coconut. If following the WW flex plan this is about 5 points/serving. -- posted by ellie_

Hoisin Salmon With Bok Choy

This recipe looked like the perfect fast and simple solution to those busy summer nights. Another one from Chatelaine I will be trying this summer.

We don't usually describe a barbecued dinner as pretty, but this one makes a knockout entrée. The light pink salmon offsets the dark green bok choy that we've lightly grilled as well. -- posted by Chef #573036

Lemon Ginger Salmon

Our favourite fish recipe from Johanna Burkard (author of The Comfort Food Cookbook, 300/400 Best Comfort Food Recipes - my favourite cookbooks). I often use steelhead trout instead of the salmon, chives instead of the green onions and bottled ginger instead of the fresh but never omit the lemon juice and zest, or the sesame oil. -- posted by Lille

Lemon-Dill Salmon Patties -- OAMC

These tasty patties are as economical and easy to make as they are delicious. They're fork food hot with fresh lemon wedges to squeeze over them. They make great cold sandwiches on rolls with cocktail sauce or tartar sauce. My big family with teens gets a hot meal and a cold meal from this recipe but a smaller family can freeze them for later enjoyment.
Salmon Fillets Baked in Foil

This is one of my favourite ways to cook salmon now! It's so easy and foolproof... I usually make a whole bag of frozen fillets at a time. Whatever isn't eaten right away gets crumbled up on salads or mixed into pasta later on. Yum! (Measurements are approximate because I generally just eyeball it as described.)

NOTE: Prep time includes minimum marinade duration! -- posted by Foxgirl

Gravlax

This is my friend Adam's mother's recipe... and it is terrific.

Some notes... please do NOT substitute dried dill for the fresh dill, and be sure you buy your salmon fillets with the skin on (take care to remove any little bones with a tweezer). MANY people like to put the soggy onions that you remove at the end of this recipe on their bagels, so bring it along for an extra treat. Also - at the very end, I like to rinse the fillet before I cut it; my dad prefers not to. -- posted by Miss Suz

Low Carb Salmon Chowder

For the most part, we live low-carb; I miss chowders and have found that thickening the soup with pureed cauliflower and neufchatel cheese makes a great chowder. This is an easy soup to make; use either fresh cooked salmon, leftovers, canned, or a combination of them. The amount certainly can vary according to what you have. This method includes poaching fresh salmon with the vegetables. If you like, you can substitute carrot for the red pepper. If you want to cut some of the fat, poach the vegetables in stock rather than sauteeing them first. -- posted by One Happy Woman

Potato Soup & Smoked Salmon Relish With Crispy Brie Crouton

My morning nurse, Barbara made this for me when I went to her home to have a "LIGHT" dinner - who was she kidding? It was awesome! The soup was absolutely exquisite and it had no cream, which is the way I like it! We were a small crowd and the meal was lovely! We had a salad of mixed greens with all their pretty colors & raspberry vinaigrette and cut-up fresh fruit which was absolutely so sweet and everything she put in there was beautiful - she had cantaloupe, honeydew, pineapple, banana's, kiwi's, raspberries, blueberries, blackberries, strawberries and I don't know what else - it was delicious tasting and looking!! I suspect she got some recipes from the Food Network but she said it was a combination of recipes! -- posted by Manami

I love bagels with smoked salmon. This sounds like a great version. From Weight Watchers New 365 Day Menu Cookbook. Update: I've checked the original recipe - and it doesn't give the amount of cream cheese to use . So, I'm guessing that it uses 8-ounces. -- posted by lazyme

Smoked Salmon Rolls

These are a sushi-style combination - pancake with smoked salmon and creme fraiche all rolled into a swiss roll. It sounds complicated, but trust me....it is dead easy - even my hubbie can make it! They can also be made in advance. They make a great starter or canape. The recipe is from the BBC's Good Food Christmas 2004 magazine. My hubbie has demanded these every Christmas and regularly in between ever since I got the magazine in 2004. The pancake recipe is also a great one to keep handy for those pancake moments!! -- posted by keribarr

Easy Risoni Salmon Frittata With Mayonnaise

An easy everyday recipe, ideal for a midweek meal, adapted from a recent issue of the Australian 'New Idea'. Frittata can be made up to two days ahead, and kept covered in the refrigerator. Canned salmon can be used in place of the smoked salmon. Use leftover portions in packed take-to-work or take-to-school lunches.
Maple Garlic Salmon

I love this recipe because it is so easy & yummy for any busy work day. Preparation time includes the minimum marinade time, but the marinade can be done before leaving for work in the morning.

This is easily scaled to marinate any amount of salmon. I make this often just for myself with only 1 nice salmon steak. Just use the 2:1 ratio of maple syrup to soy sauce, then add enough garlic and black pepper to suit your personal taste. Goes well with rice, string green beans or peas, too. -- posted by Gaia22

Smoky Tomato-Salmon Chowder

I found this recipe in the February 2009 issue of Better Homes and Gardens. It looks really good - maybe an alternative to chili sometime. I haven't made it yet, but am putting it here until I can. You can use salmon fillets with skin, just bake them skin side down, then leave the skin on the baking pan, using only the meat. Be sure to use gloves when working with the jalapeno as the oils may burn skin and eyes. -- posted by Julie F

This is the way I've made salmon patties all my cooking life: it's quick, easy and tastes great! Similar to pan-fried croquettes, the cornmeal ensures a crispy crust while the inside stays soft and moist. Whenever I'm feeling low, I like to serve these with a quick-cooking leafy green like chard or spinach, and I feel better right away. Feel free to add some onion or other spices (Old Bay or cayenne, etc.) to suit your tastes. -- posted by ninja

Lemon Grilled Salmon With Corn Salad

A recipe for the adventuresome from March 2009 issue of BH&G. The recipe creator's name is Priscilla Yee from Concord, CA and she won $2500 for this recipe!! (The idea of blueberries mixed in a corn salad intrigued me, and love all the ingredients so I made this. DS and I liked it a lot, not DH-think the cumin might have been too much for him so if you have a dislike for cumin you should reduce it.) Priscilla was inspired to create this recipe b/c of "her father's post-heart attack switch to a healthier diet. She created this dish with some of her favorite healthful foods. Dad? He just turned 90." Love that story.:) Feel free to sub in green onion tops for the chives. After reading Chef#1227141 review I agree a bit of paprika on the salmon would be even better! I served with brown rice but a noodle thing would be good too. You could make the corn salad a day ahead, I did and it kept very well but I think it tastes better at room temperature. -- posted by WiGal

Poached Eggs With Parmesan and Smoked Salmon Treats

Dipping a crispy toast finger (the French call it a mouillette) in a soft egg yolk has to be one of life's great pleasures. "When I was a kid, I loved it," says Jean-Georges Vongerichten. Evidently, he's still fond of it because he has created an adult version that's elegant enough to serve as a first course at a dinner party: He wraps smoked salmon around half of the toasts and sprinkles the rest with grated Parmigiano-Reggiano, so it melts and forms a salty crust when baked.
Eli's Asian Salmon

This recipe came from Keith Eldridge, who is the executive chef for Eli Zabar at Eli's Manhattan, The Vinegar Factory, and E.A.T., all in New York City. They shared the recipe with Ina Garten(Barefoot Contessa), she shared it in her cookbook"Bardfoot Contessa at Home", and now I'm sharing it with you! So good hot, and at room temp too. Ina says Keith uses focaccia crumbs, made in a food procssor, but Panko makes a good substitute. Enjoy! I have made a few changes to suit my taste. -- posted by Sharon123

Quick Broiled Salmon With Ginger Mint Salsa

Another great fish & mint combo - this one is from www.whfoods.org who note - "For such a little investment of time you receive enormous nutritional benefits from this flavorful combination tangy salsa and salmon. For starters this recipe provides an excellent source of tryptophan, selenium, niacin and protein as well as 193% of the daily value for those hard-to-find omega-3 fatty acids. Enjoy!"
I think this will be great with salmon, tuna, mackeral, blue fish - plan to use with any of our "catch-of-the-day" successes! -- posted by Buster's friend

Smoked Salmon

This recipe takes time, but is well worth it. Use the freshest salmon you can find. It is best to cut the pieces of salmon all the same size so you get even brining and smoking. Great for canning as well. Note: You may add other flavors to the fish such as garlic powder, pepper, soy sauce etc. if you like. The recipe can easily be doubled. You can use your imagination and try other types of fish as well. Even small whole fish. -- posted by RobinAnn
