			<description>This is an amazing chili recipe passed down from my family.  I would suggest mixing up different chili powders and adding them at different times to the crock pot.  Also experiment with making your own chili powder - Recipe #97816 - that's what I always use.  I also use good lean quality steak instead of regular stew meat, but please feel free to customize however you want! 			<description>I am not a big lover of chili but growing up I always loved my Dad's chili.  I didn't have the recipe when he died and after lots of digging in my memories and trial and errors I finally figured it out.  It's a 'sweet' chili rather than a spicy one but could very easily be spiced up.  It always gets rave reviews whenever I make it. I came up with this recipe based on what I had on hand at the time. I've attempted to alter it, and got nothing but complaints! Apparently this combination just works. Of course, with all chili, you can substitute ingredients in or out of the recipe, but I recommend trying this one &amp;quot;as is&amp;quot; first. 

Unfortunately for some, my cooking style is very free, and I don't often measure spices. Everyone is a little different, so this is mostly &amp;quot;to taste.&amp;quot; Sorry to those cooks out there that like clean measurements.

I sometimes make this is a small 3 qt crock-pot. I just alter the amount of beef broth and water used so it will all fit. 			<description>Who says you have to cook all day in a crockpot. I use mine to simmer dishes such as this one so I don't have to watch the stove. 
If you like the flavors of green chili chicken enchiladas you'll love this recipe. I use shredded Rotiserre chicken, Northern Beans and green chiles with a few of my favorite spices to make this hearty chicken chili. What's better than smelling sauteed garlic and onion to start, infusing with red pepper and cumin adding all into a crockpot only to simmer while you do other things. In no time you have a family-pleasing main course. Adjust the heat to your tastes! Add a kick with preprared Salsa for a more intense flavor. If you like soups/chilis or stews thicker, add the cornstarch slurry. Serve with cornbread, tortillas or crusty french bread. ;) V's family favorite! 			<description>This is the cover-page recipe for the Jan/Feb 2009 Cooking Light Magazine.  I made it for dinner tonight, letting it simmer all day on low in my slow cooker.  It is definately my favorite chili recipe I have tried so far.  The flavors are wonderful!  I'm definately going to try it out with both beef and chicken too.  Just beware, the prep is a little more time-consuming than your average slow cooker recipe.  But it's well worth the extra effort when you open the door after a long day at work and have the wonderful smells greeting you! You can add some heat by adding some crushed red pepper flakes (yes, the ones at the pizza parlors in the shakers). I always serve sour cream and some grated cheddar and jack cheese (grated together)  with this meal.

I believe it has been tweaked until absolutely perfect.  there are 2 distinct seperate groups of chili fanatics in the world that differ greatly in their opinions of the perfect chili.  some like it sweet, some like it spicy. I've made it for years without a recipe, but now I'd like to start perfecting it.  This last time was the first I've used dried beans, but because we know that it takes more energy and fossil fuels to ship canned beans, my husband and I are learning how.  In order to capture what we ACTUALLY did in order to perfect the recipe, I'm including the days between initially boiling them and cooking the chili... this was necessity, and I'll edit the recipe when I make it next.

			<title>'rough Cut' Slow Cooker No-Beef Chili</title>

			<description>This is a simple, hearty comfort recipe that was based on whatever I had in the pantry last night.  It's called 'rough cut' because it is meant to be just a &amp;quot;rustic&amp;quot;, simple, easy, hearty, filling dish.  There is to be No tedious MINCING!!  :-)  Just put the ingredients in the cooker. ;-)

It's really easy!  Just put the ingredients into the cooker in the order listed, ending with the chicken.  You don't want to taste it after adding raw meat to it so adjust your seasoning as nearly as you can before the chicken goes in.  You can adjust the flavors further after it's finished.

Ours came out with a LOT of juice so, if you don't like it that way, consider draining the tomatoes, cutting the stock and using bouillon cubes instead.  Or cook as directed and removing excess juices to reach the consistency you prefer.

I ladled off about 4 cups of the liquid after all the seasonings married in the cooking process.

I served it over rice.

I thought about adding ground cayenne or red pepper flakes after cooking for a little added heat.  Or just having them in ramekins on the table for those who'd like it.

Consider substituting 2 LBS of ground turkey or chicken for the thighs.  I'm going to try duck or venison this winter.

I truely think the quality of your spices will determine the quality of the finished product so buy the best spices you can afford.  I've found that the local health food stores often sell really good spices in bulk.  This is not a terribly spicy chili but does pack a bit of a kick - adjust the spices to your taste.  I did end up winning 1st place - over 42 other teams - not bad for less than a week's notice! It is a very tasty, not too hot chili that is just right for these cold winter days.  I added little cubes (less than 1/2-inch) of 3 uncooked chicken breasts to this chili about half way through the cooking for a little more protein, as though it needs it.  It didn't hurt one bit!  The author says this is a soupy chili but I did not find it so.  It has great flavor.  She cautions that the beans sink while the corn floats.
