It's a quick and easy tummy-satisfying dish on a warm midday when the last thing I want to do is turn on the stove.  The juicy tomatoes, sweet onions and rich-tasting Kalamatas are dressed simply with olive oil, red wine vinegar, fresh herbs, salt and pepper.  If desired, add whatever other garden veggies you enjoy - our family loves cucumbers; or add a slice of feta and some sliced green peppers and you've got a Greek village salad! 			<description>An elegant and sophisticated salad that makes good use of verjus (verjuice) in the dressing. I use a local blue cheese, such as Roquefort in this salad; however, please do use a local blue cheese of your choice - any creamy or robust blue cheese will marry well with the pears and tart dressing. Verjuice, or verjus, is the juice of unripe grapes. This staple of French provincial cooking, a key ingredient in Dijon mustard, has the tartness of lemon juice and the acidity of vinegar, but the harshness of neither. Its delicate flavour is ideal for everything from stocks to sweet syrups - as long as you know what you're doing. Verjus was also a common ingredient used in English cooking throughout the Middle Ages. I try to make a batch of verjus every year with the green grapes from my non-dessert grape vine - as I love cooking with it. This recipe came from an old copy of Bon Appetit magazine from 2005. I'm not a fan of balsamic vinegar, I'd probably use red wine vinegar or a different kind of dressing, but posting as is for those who like it. BTW, you'll need at least 6 grilling skewers for this. 			<description>This is the result of many years of trial and error...as well as the generous base recipe donated by a girlfriend about 27 years ago when we went on a girls' weekend to Mendocino and tried to out-cook each other.  Her salad was a huge hit and eventually evolved to this recipe, which has been a family favorite ever since.  The croutons are boxed/purchased but made special by sauteeing them in butter just before adding them to the salad.  The dressing is mixed up in a blender in a matter of just a few minutes.
