Raspberry Swirl Cheesecake

I got this recipe from a cookbook called "Ultimate Cheesecakes" from Philadelphia Cream Cheese (Kraft Foods). I've used fat-free cream cheese, and it was just as good as the cheesecake in which I used the original cream cheese. -- posted by NorthwestGal

Basic Cheesecake With Flavor Variations.

This is more template than recipe, and you get to create the flavor you want. Use graham cracker, chocolate cookie, or gingersnap crumbs, try vanilla, almond, rum, or fruit flavorings. The sky is the limit, and you don't have to tell anyone you didn't make up the whole recipe all by your own self. Ingredients listed are for a plain cheesecake, see instructions for variations. -- posted by EmmyDuckie

The Best White Chocolate Raspberry Cheesecake

This cheesecake is not only visually stunning, but is even more delicious! I am the most popular girl at the In-Laws on Christmas Day. I not only place a layer of raspberries on the bottom but you additional berries with mint leaves to make little "holly" decorations on top, perfect for the holiday. I do recommend that you use a very high quality white chocolate. I get mine from a tiny homemade chocolate shop near me, and I usually lean toward a little more than 8oz, probably more toward 10oz. Also, melt the chocolate as directed to certain not to scorch it. Another tip... do not over beat the batter, and be sure to keep it at LOW speed, and add each egg separately. I also make a fresh raspberry coulis and drizzle that as I serve each piece. I use a 10 inch spring-form pan for this. -- posted by Tantric1

Chocolate Orange Cheesecake With Orange-Tangerine Glaze

I love the combination of chocolate and orange and they unite wonderfully in this recipe. We usually make this for Christmas but it would be good anytime of the year.

If you cannot find orange and tangerine marmalade, substitute orange marmalade. I like to drizzle chocolate ganache over the marmalade glaze which creates a beautiful presentation. Make the cheesecake 1-2 days in advance to allow the flavors to bloom.

Weight Watchers Cheesecake

I went into a panic attack when Applebees took their Weight Watchers Cheesecake off the menu. So I'd like to make this when I find them.
Passover Lemon Cheesecake With Almond Crust

This cheesecake has a delicious nutty and crisp crust with a light but creamy citrusy filling. Recipe is from Gourmet (April 2008). Cheesecake can be made 2 days ahead and chilled, loosely covered. You can garnish with berries or julienned lemon zest. The cake needs to cool 2-3 hours before serving. If you don't have matzo cake meal, grind regular matzo meal (or even matzos) to a finer consistency in a food processor or blender. -- posted by blucoat

London Chocolate Chip Cheesecake

This cheesecake is delicious! You bake it in a water bath so that it bakes really evenly, and comes out so smooth and dreamy. I'm not always a huge fan of cheesecake, and it's a little pricey to make compared with an apple pie or something, but well worth it. And practically no effort at all - I think even a completely unexperienced cook would have no trouble with this recipe, and people go crazy about it when you bring it to a pot luck or something. -- posted by candaceshaw

You will love, love, love this cheesecake recipe and best of all, it's no
bake!!! Not only is it easy, peasy to make but everyone will love it! Even my guys asked for another piece because it was not too sweet! Instead of regular, I used light cream cheese, light sour cream and light Cool Whip, and it came out light and fluffy! The Wilderness brand pie filling raspberry premium is out of this world and tastes heavenly on top of this cheesecake. -- posted by SallyCooks

Vegan Spiced Pumpkin Cheesecake

The best vegan adaptation of a cheesecake I've had. I avoid any vegan cheesecakes that call for tofu because the texture turns out funky, and tastes, well, not like cheesecake should taste like. This variation is great for the holiday season! You can make your own crust or find a separate recipe for a cheesecake crust, but I wanted to save time so I just used the pre-made crusts. I would recommend the bigger "extra serving" pie crust because this yields quite a bit of filling. -- posted by J.J.
Cranberry Cheesecake Bites

This is borrowed and adapted from a chocolate cheesecake recipe on the Food Network. Nice and rich, easy to make.

For the cranberries, get some whole berry sauce, and stain off the syrup, or (better) simmer fresh berries in a light sugar syrup.

I have since used an acid reduced cranberry called Berry Bits, from Alpine Foods. These are really great as they are like cooked cranberries, without all the sugar, so you an eat them straight or add them to anything as you would say blueberries. I wish they were easier to find, I know of one place, Brennan's in Madison WI. -- posted by jagret

Fro. Cheesecake... Whatwhat?

Okay so this is just an ordinary cheesecake with a little twist. I remember this recipe because my manager and I was trying to figure out how to make a cheesecake unique and great. Some people uses sour cream and some people don't. Some uses evap. milk and some people dont. We werent exactly sure what would taste better and what would make the cake smooth or etc. So we came up with this! HOPE YOU ENJOY IT!

You will need a Springform pan or if you dont have won, just use a 9inch round pan with foil paper. Make sure to wrap the whole pan with foil!

As for toppings, you may use anything you like.
Whipped cream
Strawberries or blueberries or cherry or any fruits
Strawberry or chocolate syrups. Any syrups to your liking.
Almonds, walnuts, pecans... Any type nuts to your liking. -- posted by BOOMBAMBONBON!

My father's a Chef. We made this the other day and it was great. I asked for measurements (sense he doesn't measure, all he does is pour in) and he gave to me. Hope you guys like. If your wondering what "spread caramel within 1" from the edge. Spread to within 1", means you want to leave a plain one inch border around the edges. Also, How did we cut the squares so perfectly? All we used was a sharp knife (that we dipped and wiped dry, every time) in hot water. Hope this helps, if you have any questions, let me know...
