Bek's Spiced up Spaghetti Sauce

This does NOT qualify as made from scratch - but each time I've tried to do that, my family revolts and says "We like yours better!" I've been asked for the recipe many times, too, so what the heck - here it is on Zaar in all it's glory.
Don't get me wrong, this takes a lot more time than opening a jar, and it makes enough to feed an army. It does freeze very well, though. The best part is, you can use any or all of the veggies and really pack a nutritional punch. I've even added finely diced carrots and it still turned out great. I will say that, imho, the HOT italian sausage really makes the sauce. I *suppose* you can use sweet, if you really need too... -- posted by Gatorbek

Sausage Tortellini Alfredo

A wonderful combination of rich alfredo sauce and three cheese tortellini -with veggies and Italian sausage to make matters worse (or better!). This is not for the faint of heart for calories, but that's why they invented the "just a garden salad for me" lunch! :)
This recipe looks fancy enough for company but uses pre-made sauces and pasta for convenience. I have used Buitoni refrigerated pasta and sauce as well as those listed in the recipe. Using homemade versions could only make it tastier! -- posted by Ma Field

Grandma's Minestra

I loved this soup growing up- such a heartwarming, nourishing soup. Now, there were some things about this soup that I didn't like when my grandmother made it, so I've tweaked the recipe (what I can remember from childhood), and it comes pretty close. This is very much a 'dump everything into the pot' soup, but it works. -- posted by KVasanth

Spicy Stewed Sausages With Three Peppers a La Mario Batali

This recipe is so good! The heat was a little too excessive for me - however I loved it! ""This is my take on the Little Italy classic," says Batali of the sausage and peppers that's a mainstay of the iconic Manhattan neighborhood and its annual street festival". Stewing the bell peppers in red wine gives them richness; so does a generous garnish of grated pecorino cheese. The stewed sausages and peppers are also delicious tossed with pasta!
Freshly roasted peppers give this dish a smoky taste, if you want, you can substitute bottled red peppers, but it won't taste the same!! To skin the peppers char them and then cover tightly with plastic wrap or put them in closed brown paper bags - this wil produce steam and make the skins come off easily. -- posted by Manami

Minestrone With Chicken and Sausage

I adapted this recipe from a book called Pure Poultry. I wanted a soup that was hearty, yet still felt fairly light. This really fit the bill. The pesto really adds to the flavor of the final dish, so I highly recommend using it. Serve with a loaf of italian bread to soak up the remaining broth. If you have homemade chicken stock, use it here- the flavor really comes through. When you are prepping your ingredients, remember to cut them in small pieces, so they will fit on your spoon. -- posted by IngridH

Three-Cheese Tortellini With Creamy Italian Sausage Marinara

This is a dish I invented to try and get my picky-eater son to eat something other than macaroni and cheese, hotdogs, or hamburgers! He always thought regular marinara sauce was too "strong tasting"....I think it is just too acidic for him. However, he loves cheese and loves italian sausage. Much to my surprise, I have found that I love this dish as well. I prefer to make the sauce myself, but if you are pressed for time, substitute your favorite pre-made sauce and just add the italian sausage and cream. If you aren't a fan of italian sausage, substitute 1/2 the sausage for ground beef or ground turkey. The rosemary is optional. I like it, but some don't like the taste. If you don't have a picky eater, I would add some mushrooms and possibly some bell peppers. I think those would be nice with the dish. -- posted by breezermom

Bolognese Sauce - Bulk Freezer Recipe

This recipe makes a HUGE amount of sauce. I usually make a batch once every two or three months, and freeze it in 2-cup serving size increments (each 2-cup serving feeds 2 to 3 people, depending on how much you like sauce). Then I can defrost & enjoy yummy homemade pasta sauce at least once a week, with little to no effort involved!

It's super simple to make this super tasty sauce. I pour the sauce over our pasta of choice, sprinkle a generous serving of Parmesan, Asiago & Romano cheese blend over the top, and pair it with hot, crusty Italian bread! -- posted by MiscMarci

Bolognese Sauce - Traditional Italian Meat-Based Sauce for Pasta

This full-bodied Italian meat-based sauce is a staple of northern Italy's Bologna. It includes a small amount of tomatoes in a rich sauce with meat and other flavorful ingredients. Serve it on gnocchi or your favorite thick pasta (we prefer penne in our family) and dress it with freshly grated Parmesan cheese. Be sure to have plenty of French or Italian crusty bread on hand to sop up this delicious meat sauce, and don't forget a great bottle of red wine.
Italian Meatballs

These are real meatballs. If you were only using ground beef in your meatballs before, then you were doing them wrong! Pork and veal is where the real flavor comes from. I also use a tiny bit of mild Italian sausage just like the old country. To make them nice and moist, have them cook in a big pot of homemade red gravy for 1 to 2 hours. Make them as big or small as you like. They should serve about 4, could be more or less depending on the appetite of your family. Rubbing your hands in olive oil helps make perfectly round meatballs. Fresh herbs and produce make all the difference in the world with the flavor. Laziness results in a whack in the head from your nonna's wooden spoon! Lastly, all Italian cooking should have the love, so you better be using your hands when mixing the meat, don't be afraid of good cooking! -- posted by Chef #1163492

Papa Roberto's Spinach Lasagna

This is a combination of several recipes I've experimented with from different sources. I think I've finally perfected it. I think the fennel seed is critical, giving the sauce a unique flavor. Slowly cooking the sauce is key in my book. Take your time, and you won't regret it. I like my lasagna rich and a little more dense than typical so I skip any sort of egg mixture and I go light on the ricotta. I think spinach is a must for lasagna, and makes you feel less bad about eating it. There is really no need for a side dish here. You will need six, 12 inch metal skewers for this recipe. This is fantastic served over a platter of my recipe #299645 with a nice big wedge of room temperature Smoked Gouda, a bottle of red Wine and a jug of Apple Cider. -- posted by Karen's Krazy Kitchen

Vendange Harvest Sausages With Grapes, Thyme and Wine

A traditional Italian or French dish--called 'Salsiccia all'Uva' in Italian-- typically served from large vats at Vendange autumn grape harvest celebrations. Quite popular here in the Southern California Wine Country, as well! Preferably use a meaty best quality pork sausage which is lean and not highly seasoned (allow 1 or 2 sausages per person). I like to use a mixture of sweet and hot Italian sausages or local smoked chicken and apple sausage, but any good meaty sausage will do. Serve piping hot with potatoes or pasta, assorted cheeses, a good baguette or rustic peasant bread, and a bottle of the year's new vintage Beaujolais Nouveau or Gamay Beaujolais wine! -- posted by BecR
