Italian Wedding Cookies

Also sometimes called 'Mexican wedding cookie', 'Russian tea cakes', or 'butterballs', can also be shaped into crescents. You can also substitute pecans and they are very good as well. This is the best version of these I have ever seen, it was given me by a friend who grew up in central Europe. -- posted by Tonkcats

Simple Italian Baked Lasagna

Garlic Spaghetti Sauce

I adopted this recipe from Zaar some time ago and finally got round to trying it myself. It's quick and simple and full of fresh flavours. I prefer using basil but the original recipe stated parsley so I left it here for you to choose. Try adding some sliced black olives, fried or marinated mushrooms or sun blush tomatoes at the end. -- posted by -Sylvie-

Mama Iuliucci's FAMOUS MEAT-A-BALLS (Italian Meatballs)

Here it is...my Mom's FAMOUS Meatball recipe! This is THEE most requested of her for anything, anywhere! Whenever there is a shower, birthday, christening, etc. someone is asking for 150 to 200 of her famous meatballs :) Of course, she always says "Yes"! She is not one for "exact" measurements (a little of this, a dash of that), so I tried the best I could to adapt her recipe. Of course, these are best served with My Mama Iuliucci's "Don't Skip a Step" Spaghetti Sauce recipe #26947, but I have used jazzed up jarred sauce and they are still great. However...meat-a-balls like these deserve a homemade sauce, in my humble? opinion! -- posted by Karen=^..^=

Pesche - Italian Peach Wedding Cookies

Years ago, my grandmother and great-aunt went to Italy for their cousin's daughter's wedding. They ALWAYS tell the story of this glorious table full of these delectable cookies shaped like little peaches. My great-aunt, being the baker of the family, asked her cousin for the recipe. She was told that these lovely little cookies were traditionally served at weddings there in their small Italian village. She brought the recipe home, with the hopes for making them for SOMEBODY"S wedding! I was lucky enough to be the one! The recipe itself is quite simple, however, it is the method in which you assemble the cookies that makes these so unique. My great aunt adapted the original filling. In Italy, the peach cookies were filled with cream custard held together at the crease by dark chocolate. Because she needed to make her's in advance, she changes the filling to peach preserves. If you use the traditional cream for the filling, the cookies must be made and eaten THAT DAY. I've left the recipe in her original words. The number of cookies this makes is an ESTIMATE! Will update after I speak to my great-aunt. -- posted by Kozmic Blues

Precious Aunt Lill's Pizzale Waffles

This is a staple in Italian households and are served mainly at holiday time or other important events such as Christenings, graduations, etc. This recipe has been in my family for generations and all my non-Italian friends love them. My Aunt, Lillian, whom we all loved so much was the lady who taught my cousins and I how to make these. She's passed away now, but Pizzale Waffles and Aunt Lill go hand in hand! I like this recipe because they are very easy to make and are beautiful to look at.
Linda's Incredibly Complicated yet Fantabulous Antipasta

This is what we made for our huge family banquets. When my Aunt Nancy and I were teens we were in charge of assembling it on a huge tray which we refilled several times. We stuffed black olives with cream cheese (Philly, of course) and ate more than we served until Grandmom threatened us with a wooden spoon. We made this when our family got together, usually 30 - 40 people. These meals were big events and we cooked for a week. I hope you try this when you have a special occasion with your family. Get the teenagers to help assemble but don't bonk them with a wooden spoon should they eat too many olives! Aunt Nancy and I were faster than Grandmom so we escaped, laughing (most of the time).

I cut the recipe down to feed a smaller crowd than ours. Alternatively, you can make individual servings which are very pretty for a formal table. Please note that a lot of the prep work can be done the day before. -- posted by Secret Agent

A French Country Affair! Elegant Omelette Gateau W/Chive Flowers

This would be a wonderful centrepiece for a special celebratory meal, such as a summer wedding, christening, anniversary, birthday or a bridal shower. Open faced omelettes, studded with fresh vegetables and herbs including chives and chive flowers, are sandwiched together with herb and garlic cream cheese to create a savoury vegetarian gateau! Top the gateau off with parmesan cheese shavings and toss baby salad leaves on and around the gateau to serve. This does take a little time to prepare, however, it is made a day before it is needed, making it ideal for a special event. You could add thinly sliced ham or crispy bacon if this is not required as a vegetarian dish. Preparation time includes the chilling time overnight.
Tiramisu Cupcakes (Uses Cake Mix)

These are delicious tiramisu cupcakes. They are relatively easy to make as they use a boxed cake mix. Read recipe in entirety first - it sounds more complex then it actually is. You can decorate these to be quite elegant & fancy in presentation for Brunches, Bridal showers, or whatever suits your needs. These sell at gourmet bakeries, coffee shops & cafe's for a pretty penny. Note: I do use mascarpone to make these as that is more traditional, but you could substitute with plain cream cheese if needed.
Also, I do use cupcake liners because I think they present better.
Lastly, it's best to prepare mascarpone filling & chill about 4-6 hours in advance or night before.
FYI: You can fill the cupcakes by using a icing decorating (piping) bag filled with the mascarpone filling or use an old fashioned ketchup or mustard plastic bottle with nozzle point tip << yes, those ugly yellow & red things :-)
*** Update: some of you contacted me about skipping the pastry bag step, that's completely fine, what you need to do is leave room when filling cupcake wrappers by not filling all the way, after cupcakes are baked, you poke the holes & do the liquid coffee over top of poked cakes, then just top with the mascarpone layer (make sure it's chilled well as it thickens) then just use the cream cheese frosting on top of that & top with chocolate shavings. -- posted by BlondieItaliana

Kittencal's Italian Wedding Soup

Once the meatballs are shaped this soup takes very little time to put together and to cook, it makes a wonderful soup to serve at a dinner party --- the success of this soup will strongly depend on your quality of chicken broth so use the very best, the meatballs may be prepared covered and refrigerated up to a day in advance and I strongly recommend doing so to blend the flavors --- the complete recipe may be doubled. -- posted by KITTENCAL

The Wedding Bouquet Vegetable Platter or Romanesco Romano!

Thanks to Chef #37636 and Chef #47892 for giving me the zany recipe title ideas! Yes, this beautiful vegetable does indeed look like a wedding bouquet, or maybe even a collection of small Christmas trees.........it is the most beautiful looking vegetable in the world, in my humble opinion! However, never mind its looks - it tastes wonderful, having a nutty and buttery taste and holds its shape better than cauliflower or broccoli when cooked. A little more information on this gorgeous vegetable: Romanesco is an unusual crop. Not quite a calabrese and not quite a cauliflower but with aspects of both. It has a taste and texture exceeding the finest broccoli and is a member of the Brassica family.
Romanesco broccoli was first documented in Italy (as broccolo romanesco) in the sixteenth century. It is sometimes called broccoflower, but that name is also applied to green-curded cauliflower cultivars. Romanesco is best steamed rather than boiled as it will retain its flavour and texture better. Small spears can also be stir-fried or even eaten raw in salads or with a dip as crudities.
This recipe is simple and keeps the full flavour of the romanseco; use any Italian cheese you have to hand - I used Parmesan cheese in the photos I posted, a few toasted hazelnuts may also be a fine finishing touch. One more piece of useless information (!!), the fractal spiral of this vegetable is an example of the golden ratio, which is linked mathematically to all kinds of interesting things, such as the proportions of human faces - I told you it was an amazing vegetable! -- posted by French Tart
