Yummy Dessert the Kids Can Make Themselves!

Here is a 'recipe' for a quick & yummy dessert that kids from the age of 5 can make by themselves. You can use any combination of yogurt / custard & fruit, below are my sons favourites. -- posted by Um Safia

Gordon Ramsay's Chocolate Fondant

A gooey, decadent dessert-a hot pudding with a molten middle--irresistible! This is perfect for entertaining, as it can be made way ahead of time. They will sit happily in the fridge overnight, or in the freezer for up to a month (baking from frozen, add 5 minutes extra onto cooking time). I strongly advise you to make some extras as an 'insurance policy’ to allow for any errors. I can assure you that they won't go to waste if all goes to plan.
Once you have mastered this recipe, feel free to experiment with flavourings--add Baileys, Cointreau or finely grated orange zest to the chocolate—the possibilities are endless! Try serving it with recipe #353546.
Gordon claims that this is the best selling dessert in his restaurants! -- posted by Noo

Caramelized Bread Pudding With Chocolate & Cinnamon

This is a layered custardy bread pudding from the James Beard-nominated LA chef, Suzanne Goin. She has been making it for 20 years. "Use just a single layer of brioche, which creates a crispy crust but won't absorb all the rich, silky custard underneath. Once you break through the caramelized, toasty top layer and dig down through the luscious custard, a treasure of melted chocolate awaits you at the bottom." Recipe was printed in her excellent cookbook, "Sunday Suppers at Lucques: Seasonal Recipes from Market to Table" -- posted by blucoat

Instant Chocolate Mousse

If you're looking for a sweet surprise for your Valentine, or just because, this will fit the bill! This can be made the day of, but encourage you to not make it any earlier. This is a fantastic dessert! It only takes about 15 minutes from start to finish! Go for it! Try a small chocolate bowl that you can get at specialty stores and most bakeries. They also have small chocolate cups, which works great as well.If you can't find the bowls or cups, try putting it in a pretty wine glass or a martini glass. -- posted by FLUFFSTER

This recipe is from Mark Bittman's new book, "Food Matters: A Guide to Conscious Eating with More Than 75 Recipes". "Somewhere between a cake and pudding, this lovely dessert is served warm, with a simple raspberry puree that balances its richness.
Classic Chocolate Pudding

For anyone whose experience ends with My-T-Fine, this recipe should be a revelation. Made with quality ingredients, American chocolate pudding can easily rival mousse au chocolat. The pudding may seem too runny while it's cooking, but the chocolate thickens after refrigeration to a velvety cream with a rich, full-bodied flavor. Use a high-quality chocolate with full cocoa-butter content (like Callebaut or Lindt), not chocolate chips. -- posted by R. L.
This recipe hails from Austria, the use of chocolate with whipping cream and cinnamon is typically Austrian. Even though there is no gelatine used, it firms up nicely and has a creamy, silky texture. 2 hours of cooling is included in the cooking time. -- posted by gemini08

Kathi's Ode to Almond Joy Haupia Pie

I hope you enjoy my version of this traditional coconut milk-based Hawaiian dessert, which is often found at luaus and other local gatherings in Hawai'i. Key differences include a dark chocolate layer of coconut-flavored gelled-pudding (in addition to the regular white layer), and almond flavored whipped topping. So easy to make and like the recipe says, BEST IF REFRIGERATED OVERNIGHT to let the layers set up and the flavors develop - in the words of Alton Brown: "Your patience will be rewarded!" (This pie also freezes well - I would say easily keeps for 6 months in the freezer. If you want to make more than one at a time, use regular 8" instead of deep dish pie shells, and then split the coconut mixture and chocolate coconut mixture each into equal halves after step 12 & proceed w/the rest of the steps for each pie shell. You will then have one to share, and a spare!) -- posted by Kathi Ann

Chocolate Mascarpone Pie

A friend brought this to a dinner party, and it was so wonderful I had to have the recipe. If I make it again, I might strain the orange marmalade first, as I feel it doesn't really fit the texture of the rest of the pie. If you use it as is, be prepared for a very creamy pie with a layer of small orange chunks in between the filling and the crust. For the chocolate cookie wafers, you could either use Nabisco Famous cookie wafers, or Oreos taken apart with the filling scraped out. All substitutions listed in the recipe were suggested by the original chef. -- posted by Vicki in Houston, TX

Chocolate Sticky Date Pudding With Whiskey Butterscotch Sauce

Entered for safe-keeping. From “Super Food Ideas”, September 2008 (#1 Australian food magazine). Leftover cake and sauce can be saved for up to 3 days: store cake in airtight container at room temperature. Refrigerate sauce in an airtight container. Whiskey is an optional ingredient. I have tried to give U.S. equivalents of measurements. Double cream is the name in Britain for a very rich cream — containing 48% butterfat. Whipping cream in this country, by contrast, contains between 30% and 40% butterfat. Single cream in Britain is comparable to American half and half (and may also be called pouring cream), with between 10% and 12% fat. I am guessing that spreadable mascarpone will yield a similar rich creamy taste to finish off this dessert. -- posted by KateL

Milk-Chocolate Cremoso With Espresso Parfait

This is another recipe on my best-friend Judy's list for her summer party. Recipe by Chef Michael Schwartz from "Michael's Genuine Food & Drink" at 130 NE 40th Street, in Miami, Fl where it is a showcase for it's Chef/Owner's cuisine The dessert is listed as: "Chocolate Cremoso with sea salt, olive oil, sourdough crostini & espresso parfait for $9" . Miamians are assumed to be too bikini-conscious to indulge in this dessert - a decadent milk-chocolate cremoso (a silky pudding-like dish) drizzled with olive oil; however, it is one of the best-sellers at Michael's. "Some people are like, - olive oil & chocolate? But the olive oil reinforces the richnerss of the cremoso. Like you really need more richness.!" At least 4 hours chilling time The cremoso can be refrigerated for up to 3 days; the espresso parfait can be frozen for up to a week. From Miami's Got Good Taste in F&W Magazine, published in the December 2008 Edition - this is also a staff favorite. What is NOT to be liked? :) -- posted by Manami

I was making up a box of sugar free pudding and spotted the bottle of creme de menthe on the shelf. It wouldn't let me ignore it and I thought 'hmm, I wonder' and added a bit into the mix. It worked and turned normal chocolate pudding into something lush tasting. I could see it being the base of easy 'grown up' parfaits and that sort of thing too. -- posted by Sarah_Jayne

I whipped this recipe together the other day when I finally got tired of buying ready-made tapioca pudding! Maybe one day I'll actually try it from scratch (if only I can find a really good outlet for scratch)! Pudding servings are usually set at 1/2 cup, but mine are considerably larger than that!
Spooktacular Halloween Pudding Cups

Super fun Halloween treats that the kids are sure to enjoy. Easy to make and look great to!! I got the idea off of another website that used chocolate pudding but I thought using vanilla and dying it orange would be really cool since the pudding and oreos together would be traditional Halloween colors. This recipe can be easily divided in half and so on. For the pudding I used the kind that you cook verses the instant. I think the cooked pudding has a much nicer and thicker consistancy. The amount below for the oreos is a guesstimate because it wouldn't let me put down 1 large package of oreos but either way just one regular package of oreos crushed is what you need. Enjoy! -- posted by mamawheezy

“guilt-Free Ice Cream Wannabe”

This delicious low-calorie dessert is a great way to satisfy your craving for a big bowl of chocolate ice cream without blowing your diet. The thickness of the Greek yogurt provides the creamy texture of ice cream for just a fraction of the calories. Also, by using frozen berries, the yogurt freezes as they are mixed in, giving the cool, frozen texture of real ice cream. The Fiber One cereal sprinkled on top provides a nice crunch and textural contrast - enjoy! -- posted by Chef #1453068
