Okay, think of two things off the top of your head that you can cook with cream cheese. I bet that the first two things you think of are cheesecake. Let's face it, it's everywhere, and all-pervasive. There are even upscale restaurant chains that sell little else than these silly desserts.

It fills me with rage. Its a cake, and its made of cheese. And it tastes - sweet?

When I think cheese, I think of these delightfully savoury dishes that take advantage of herbs and great vegetables and delight you with a little richness, and a lot of flavor. I do not think of some spongy sweet filler vehicle for whatever syrupy dollop I might put on top. They should call it cream-colored blob cake or something, so that the issue is put to rest.

I would use something like Granny Smith, Cortlands, Jonathans, Empires, Yellow Delicious, Honey Crisp, Ida Reds or Winesap (Winesap are my favorite and are usually found late season during October). I would avoid such apples as Red Delicious or Macintosh. They are great for eating but fall apart when cooked. And one of my secrets is to make a blend of baking apples, so the flavors are more well rounded and less one dimensional. Its great!
The Cake itself has a wonderful crunchy yet doughy crust and a tasty filling. Its easy to make and quite quick, too.

			<description>This is my favourite type of French fruit tart, even more so than apple tart! Our local Patisserie makes a wonderful Tarte aux Abricots, but they are quite expensive and VERY large, much too big for the two of us when we have no B and B guests! So, I have been tinkering in the kitchen again, and have come up with this recipe. You MUST use fresh apricots for this - tinned ones are too soft and too sweet. Plus, I love the slightly tart flavour that the fresh apricots lend to the flavours of this tart. The ground almonds are scattered over the base of the short crust pastry case to stop it becoming soggy during cooking; they also provide a complimentary flavour to the apricots. A classic French tart that will make a delightful ending to any special meal or for afternoon tea. 			<description>A taste of my childhood, my grandmother made the most amazing Egg Custard, as we used to call it! In the absence of lard, or if you are vegetarian, use a white vegetable cooking fat, but NOT margarine, as the white fat gives the pastry its crispness. Serve this tart at room temperature with cream or just &amp;quot;naked&amp;quot;!  You can buy these delectable little tarts in most British bakeries, but they always taste better when they have been made at home. This old-fashioned custard tart needs a thick, wobbly filling, so I've used a round tin with sloping sides and a rim, which gives a good depth. 			<description>I live in Florida and it is difficult to make a non-runny blueberry pie due to the humidity, but this recipe is perfect.  I got this recipe through trial and error of 5 different published recipes.  The filling is dense enough so that little loose liquid is present, but you still feel like you are biting into whole berries when you eat it.  This fixed my problem of getting a pool of liquid in the bottom of my pie shell.  I recommend using only fresh blueberries.   
Use a 9-inch deep-dish pie plate.  Regarding the crust, the store-bought frozen crusts did not work properly for me.  They either didn't bake on the bottom or resulted in an overflow of pie liquid into the bottom of my oven.   I recommend the Pillsbury brand rolled pie crust dough found in the refrigerator section of the grocery store (by the biscuits/crescent rolls).  These bake nicely, are easy to work with, and have an appropriate amount of moisture. 			<description>This is my great-grandmother's apple pie recipe. It has a delicious crumble topping and just enough spice. The pie is better (obviously) with a home-made bottom crust. I use the &amp;quot;most incredible no fail pie crust&amp;quot; recipe also available on recipezaar. It's really not that hard and you can make it a week ahead of time and roll it out when you need it.
