Lemon Pistachio Pretzel Cookies

Now fully immersed in the delights available on this site, I rarely buy cookbooks for baking anymore. A recent trip to a gem of a cookbook shop located in the Village, I stumbled on this little chubby book with the most unusual cookie recipes. This one stuck me immediately and alone may be worth the price. Saving this for my holiday trays but may just break down and make them sooner. -- posted by justcallmetoni

Sour Milk Molasses Drop Cookies

Another way to use up that milk once it turns. The result is a pillowy soft cake-like cookie with a delicate molasses and spice flavor. If milk never turns at your house, the you can make your own by placing a tablespoon of vinegar in a measuring cup and filling to level with milk. Let that sit for 10 minutes and you have soured milk. -- posted by justcallmetoni

Kittencal's Buttery Cut-Out Sugar Cookies W/ Icing That Hardens

You will not find a better sugar cookie anywhere you search, this will most likely be the only sugar cookie you will use, not only are these cookies buttery delicious, the dough is an absolute dream to work with, it rolls out easily and is easy to handle, also the cookies hold their shape when baked something many sugar cookies do not do --- make as many different colors as desired in separate bowls with the icing, the cookies must be completely cooled before icing --- plan ahead the dough must be chilled for at least 2 hours before rolling -- since these are topped with icing they are not a sweet cookie if you want a sweeter taste then increase the sugar amount -- posted by KITTENCAL

Crispy Almond Butter Thins (Cookies)

Crispy, buttery and so delicious! -- plan ahead the dough needs to chill for a minimum of 3 hours or up to 3 days --- the success of this cookie will depend on the quality of butter that you use so purchase the best! Since the dough is very thick I suggest to use a stand mixer for mixing --- for *CHRISTMAS* coat in coloured sugar, also haven't tried it as yet but I plan on adding in some finely chopped candied maraschino cherries or dried fruit to the cookie batter for Christmas, so you might want to give that a try! --- servings is only estimated. -- posted by KITTENCAL

Easy Brownie Cheesecake

This makes a 13x9 pan with one brownie layer and one cheesecake layer. Then you can make a pretty swirl on top. It sounds great and easy. I think you could easily sub some melted chocolate chips for the squares of chocolate. It came from a Kraft Family magazine. You could use any brownie mix as long as it makes a 13x9 brownie. -- posted by Margie99

Mint Surprise Cookies

This cookie is a Christmas tradition started by my grandmother. She used to always mail them along with her "Minnesota Bars" (#162331).
I have a note on the recipe card that it was originally a winner in Pillsbury's 1st Grand National by Miss Laura Rott of Naperville, Illinois. (One bite and you'll know why it won.)
The original recipe called for one package of Rockwood Chocolate Mint Wafers. I've never been able to find them in the store so I use Andes Mint Baking Pieces. I'm sure you could also melt regular chocolate chips and add a little mint flavoring as well.
I posted the "refrigerator cookie" method because I think it's easier. You can also chill dough for just two hours, then enclose chocolate in 1 tbsp. of dough. Bake according to directions.

COOKING TIME INCLUDES FOUR HOURS OF CHILLING. -- posted by Empire920

My Divine Rum Balls...gluten Free

I hope these are helpful to some of you out there.

Chocolate & Prune Refrigerator Bars

Made these for a friend for her birthday (she loves prunes) and I guess they didn't last long...easy and quick. From Best Ever Three & Four Ingredient Cookbook. They came out rather thin; adding more chocolate wouldn't hurt, I think. Also I recommend lining the pan with parchment paper or spraying with cooking spray so that the bars are easier to remove. Cooking time is chilling time. I don't know why, but recipezaar insists that the ingredient be listed as "prune", not "prunes." -- posted by Shalabhanjika

The name 'Sablé' is French for "sand", which refers to the sandy texture of this delicate and crumbly shortbread-like cookie. The cookie originated in Normandy hence the 'normandes'. 'À la cannelle' means literally "has cinnamon". So these are Cinnamon Cookies, and they are delicious!

Notes:
Hard-boiled eggs-Contrary to popular belief eggs should never be boiled they should instead be "simmered" for 12-15 minutes depending on the size of the egg
Mixing-I highly suggest mixing using your hands, this will melt the butter and allow the mix to become dough
Buttered Baking Sheet: Yes, you need to use real butter NOT cooking spray
Rolling: I have gotten away with rolling individual balls and flattening them with a cup bottom but if you have time I suggest rolling them out

These are some of my favorite cookies and they tend to disappear fast so I always make double. Plus these cookies can be made into any shape so they are great for holidays! -- posted by MyBentoOfAwesomeness

Michelle's Most Delicious Cassava

"Cassava" is a dessert from Guam. Traditionally served at barbecues these chewy tapioca and coconut bars are sure to be a hit anytime. Cassava is what the root of the yucca plant is called and tapioca is derived from it. It is also the main ingredient in "cassava," the dessert. This is a recipe given to me by Michelle Camacho during my stay on the island. -- posted by WiTay

The Best Old Fashioned Sugar Cookies

This is a recipe for sugar cookies like they used to be! This recipe produces light fluffy cookies, that are slightly crisp on top & soft & tender in the centre. You can play around with the cooking times to get the texture you like.

Eat them plain, with the frosting, the glaze or other icing. These cookies ae easy to make, just make balls & roll in sugar - no need for cutters! They also freeze well & the kids LOVE them!

Our favourite way to make them is by rolling them in coloured sugar & cooking them on a foil lined tray for 8 minutes. If we decide to frost / ice them, we always skip the sugar rolling stage.

Kittencal's Slice N' Bake Refrigerator Cookies

This is buttery tender dough that produces an excellent flavored and textured cookie --- servings is only estimated it will depend on how thick you slice the dough, I get about 12-15 cookies per roll if sliced just over a 1/4-inch thick, you may of coarse slice them thinner or thicker if desired and adjust baking time slightly --- plan ahead the dough needs to chill for about 4 or more hours or until very firm and may be frozen for up to 3 months. -- posted by KITTENCAL

You can use honey or maple syrup in place of the golden syrup or sub with light corn syrup.

Have you ever had those sugar cookies at publix that are really fluffy and cake like? Well hear is that recipe. I think its the sour cream that makes it so fluffy. I also roll them out maybe 1/4 in thick and under cook them a little but thats probably a personal preference. They do take a little work just like any cut-out cookies but this is something that anytime I ask someone in our family what I can bring for dessert they always say this! I use my kitchen aid but before that I would use my hand blender as long as I could and then mix the last part of the flour in by hand. Hope you enjoy. -- posted by 998171

Ingram's Old Fashion Sugar Cookies

This is a recipe from my grandmother's kitchen. My mother has made these for Christmas every year since I was a child (over 30 years now) and every person that has tried these think that are delicious!

Icing the cookies is a family tradition and is one that is fun and can take some time so be sure to set a couple hours aside to do so. Although it can take time to icing these cookies it'll be well worth the work in taste and family fun.
Ed's Sugar Cookies

This is my husband's recipe and it has withstood the test of time. These delicious cookies are light & airy and fun to decorate. My husband is the Sugar Cookie king in our family and our grown kids still anxiously ask each year if Dad is making sugar cookies this Christmas :). Ed prefers using insulated cookie sheets. Yield and baking time may vary, depending on rolled dough thickness, the size of the cookie cutters and oven accuracy. NOTE: Chilling time is included in prep time. Overnight refrigeration is best, but if you are in a hurry, you can get by with chilling the dough for at least two hours. Do not skip the chilling step or the cookies may not hold their shape. -- posted by Kat's Mom

Cream Wafers

These are my most favorite cookies. I bake them for holidays and special occasions. My family absolutely loves them as well. If you read the ingredients, you might not be able to envision how decadent these really are. They are very light and flaky, resemble a puff pastry, and practically melt in your mouth. You can use them plain, or fill them with special frosting. They taste great either way, but of course are much richer with the filling.
