			<description>This started out as a mediterranian classic, but I didn't have the right ingredients, so I wound up inventing these cuties with what I had on hand!  They're quite good, especially if you let them sit for a few days.  I'm thinking about substituting a cup of dates for one of the cups of raisins to give it a deeper flavor, but really anything works here!

A note about ginger: If you're using the power found in the spice aisle, you'll want to use a bit more as it's known for being a smite underwhelming.  Likewise, if you use dried ginger (like Chinese #1 cracked), you might want to use a bit less as it can be quite potent. They were everyone's favourite, so I used to zoom around beforehand, with my pocket money burning a hole in my pocket, to make sure I bought some before they all went!! A fun name with delicious layers of shortbread, caramel and a chocolate topping. This recipe has the added surprise of adding stem ginger pieces, which was not usual in my Mum's orginal recipe. These do keep for up to a week in an airtight tin or container.....I have never known them last more then 24 hours however - you WILL have to HIDE them!!! 			<description>Every year around Easter and Christmas while I was growing up I can remember my (ex) stepmother's mom making these &amp;quot;cookies&amp;quot;, and everyone used to fight over them. About a year ago I got to craving them again, but she has since passed away. There are a lot of peanut butter ball recipes out there, but none quite like this one. This one uses quick cooking oats (like I remember) instead of just peanut butter or rice krispies, and I, myself, like the oatmeal taste better than the others. This recipe was put together using several different recipes, but I have adjusted the ingredient amounts and directions to my liking. Dipping the balls in chocolate and paraffin wax is up to you, but I think it adds to the flavor. I know there are a few other recipes out there for these cookies - most use almond or candy bark... these use the &amp;quot;candy melt wafer discs&amp;quot; from craft stores, candy shops, or Walmart Craft Dept., I also microwave the candy melts instead of using a double boiler.  Plus, these candy melts come in many colors to suit your needs - think pink candy melts with pink M&amp;amp;M's for October Breast Cancer Awareness, white on white for Bridal Showers...  They are so pretty for the Holidays - you can decorate these with any color sprinkles, candy M&amp;amp;M's, I've even used Hershey's Hugs mini-morsels.. the possibilites are endless, just make to suit your occasion... great with bright sprinkles for birthdays, or pastel M&amp;amp;M's for Easter, etc. - have fun!  Also good for bridal or baby shower take-home goodie bags.
