			<title>Not so Sweet Fudge-- Microwave Quick</title>

			<description>I am a chocoholic.  But can't eat much in the way of carbs.  So most sweets, including baked goods are out.  I came across a recipe for Chocolate Ice Cream without an ice cream freezer in Cook's Country Magazine.  Looked great, simple, and had my mouth watering.  I have tried 3 different ice cream freezers  (even a fancy gelato maker) and never been happy with the results.  I was so impressed with what looked like a great recipe I had to try it.  Well, I wasn't that happy with it.  Perhaps because I didn't use semi-sweet chocolate.  I used 70% Scharfenbargers.  I have stayed away from Sweetened Condensed Milk, again because of the carbs. Most fudge recipes call for all kinds of sugar.  But I was trying to make ice cream and the only sweetener with a fair amount of cream was the SCM.  So ...to make a long story short.  The base for the ice cream was FANTASTIC FUDGE not too sweet, creamy, with excellent chocolate flavor that was very satisfying. (I know, why not just eat the chocolate?--too bitter, go figure).  So here is the base recipe.  I use instant espresso, which greatly enhances the chocolate flavor.  Cook time is refrigeration time.  I haven't tried variations yet, but that should be pretty easy. 			<description>Ive adapted this recipe from one I found on the Simply Great Meals website. The original recipe uses pistachios; Ive used honey-roasted almonds.  Obviously, you could use whatever nuts you fancy or a mixture of several different nuts.  Once youve melted your chocolate, butter and marshmallows, no more cooking is required.  Great for lunchbox snacks, picnics and potlucks!  For the best results, use top quality chocolate rather than cooking chocolate.  Ive suggested Lindt, and if you choose one with orange or peppermint chips, youll add another subtle flavour.  Ive wondered also about using a fruit juice instead of the water but havent tried this yet. This is a great flavour combination, the chilli is subtle but something quite different. I have also added Amarula Cream, Bailey's and Frangelico on other occasions, the possibilities are endless.

			<description>I can't take any credit for this, and I'm sure this recipe has been made over and over, but, I always like to pass it on. At work, I used to take batches in every Christmas, and I was surprised to see how many people had never tried this simple recipe. For those who know me on Zaar, they know I DON'T like to bake and don't unless I have to. I'll bake cookies or a pie at Christmas, and I do bake these &amp;quot;TWO&amp;quot; cakes; rum and eggnog, and beer bread, but that is about the extent of it. Don't get me wrong, I can when I have to ... I just would rather cook. So I have been making this fudge for some 25 years. A simple mix of Eagle Brand Sweetened Condensed Milk and Morsels (any flavor). So, below is the basic recipe and some of my favorites. The best part is ... have fun with flavorings and added ingredients (extracts or liquors and dried fruits, nuts, coconut, etc). A quick 3 minutes in the microwave and then poured in a square 8x8 pan lined with foil or parchment and let cool.
