Banana Split Cake

This is from Paula Deen's Food Show. I haven't tried it yet, wanted to post it here for safe-keeping. It got rave reviews on the other site! Some cooks used a pre-made graham cracker crust, others used a chocolate cookie crust. 5 minutes cook time, the rest of the time is refrigeration time. -- posted by Scoutie

Doughnut-Muffins

These are very easy and quick to make muffins with a great fruity flavour. They are a perfect summer´s day treat. Can be adapted to your personal jam/fruit preference.

Edited 3/2/09: In response to Sarah's review I'm posting the conversions into US measurements here as well. However these are naturally a little different from the metric ones. So I'd highly recommend you to check your batter before filling it in and if its too runny add a bit more flour and if its too thick a bit more fluid to get the right consistency. -- posted by Lalaloula

Kathy's Teatime Fruit Cocktail Cake

This is a light, delightful cake that I got the recipe for while visiting Kathy in rural Arizona. Lovely on those hot, dry days and a perfect accompaniment for social teatime gatherings! I couldn't find a duplicate on here, so I am posting it for safekeeping (found the recipe wadded up in my purse upon my return...) -- posted by Pookatron

Coco-Berry Shortcakes

From an old Woman's Day magazine from 1999. Just a nice twist on a standard shortcake recipe. I loved the addition of the coconut to the shortcakes. Feel free to use whatever fruit is in season for the berries - I love a combination of strawberries and blueberries, but raspberries are good too. These take a bit of time but are well worth it. -- posted by HokiesLady

Banana Split Shortcakes

I found an old 1999 Woman's Day magazine pull-out and they had many different variations of shortcakes. I made all but 4 of them at some point. Here is another winner in my family's eyes. Allow time before serving to assemble the dessert as these have to be put together just a few minutes before serving or the ice cream will melt. -- posted by HokiesLady

Rum and Honey Grilled Pineapple on Toasted Pound Cake

From the Summer issue of It's All Fresh.
Barbecuing Tip: Don’t forget to give your barbecue a good brush before attempting to cook any dessert. You don’t want your pound cake to taste like chicken and ribs or olive oil and garlic basted steak. I don’t want you to come knocking at my door with pound cake tasting like chicken fried “whatever” demanding compensation.
If you are a barbecuing enthusiast (like me), you will have lots of grilling toys that will not touch the barbecue grill, still give you beautiful results and not fail to Wow your guests with a Start to Finish Meal, Outdoors. You deserve respect for your efforts.

We started our barbecue party with recipe #307670. Here, then is the dessert. -- posted by TOOLBELT DIVA

Upside-Down Berry Cornmeal Cake

I found this recipe in Southern Living magazine. It sounded so unique, I just had to try it. It's been a hit the 2-3 times I've taken it to a pot luck. It's a lovely presentation and another way to use the fresh basil(yes, basil!) from your garden! Note-the last three ingredients(powdered sugar-lemon juice) are for the glaze. All three berries aren't necessary-just choose a red one and a blue one. Sliced strawberries work fine also. Cook time does not include cooling time. -- posted by nanpie

Peach Upside Down Muffins

I've long been a fan of Peach Upside Down Cake, so when I found this recipe on the web, I had to try it. They're cooling right now and I can't wait to dig in!

NOTE: I halved the butter and brown sugar as an easy way to cut some fat and calories. I had a little trouble getting them out of the pan and some of the peaches slipped off and had to be put back on, but there doesn't seem to be a significant compromise to the muffin. I'm interested if the results differ if you use all the butter and brown sugar that's called for. Also, you could easily stretch more than 12 muffins out of this recipe. -- posted by Amy020

Plum Torte

My friend gave me boxed of Japanese plums from her plum tree and I've been finding ways to enjoy them. This torte can be served for breakfast or dessert topped with a bit of ice-cream. The plums keep it from becoming too sweet. What I especially enjoy about this cake is that it is a perfect cake to freeze and bring out at a later date when you will appreciate a taste of summer. I haven given this cake to neighbors, friends, and family members and everyone loves it. You can also use other stone fruits if you would like. If you do not have a spring form pan, you can line a 9 inch cake pan with foil leaving an overhang over the edges of the pan. Oil the foil generously. Use the foil to "pull" the cake out of the pan when ready.
Makeover Strawberry Cake

This recipe utilizes a cake mix to make a quick easy dessert. It's called a makeover strawberry cake because the recipe was changed to lower the fat and cholesterol. The icing has less sugar and butter and the cake uses less oil. I must confess that I just threw in 4 whole eggs, but I don't think you'd miss the yolks. I also used regular strawberry gelatin instead of sugar-free and fresh strawberries instead of frozen. Recipe from Taste of Home Healthy Cooking June/July 2009.
Frozen Layered Vanilla Raspberry Cake

From Taste of Home site, this was a huge hit when I served it to friends. Everyone loved it, but someone suggested it would be "over the moon" with a little chocolate. So next time, I'll probably replace one of the sorbet layers with chocolate ice cream or sorbet. Either way, it's easy and delicous as it stands. As written, it's 5 WW pts per serving.

Gingered Blueberry Shortcake

I am always looking for ways to use blueberries when they're in season, and this one is a special summer treat! It's old-fashioned comfort food, with the candied ginger adding a sophisticated twist. My family was shocked at how good it was with so little sugar and fat (recipe from Cooking Light). NOTE: I have found candied ginger near the packaged nuts & dried fruits; just ask your grocer if you can't find it. I know they have it at Trader Joes and Whole Foods. -- posted by appleydapply

A delicious not-too-sweet cake. Perfect for afternoon tea, or breakfast, or a summer dessert with cream or vanilla ice cream. It is loaded with fresh fruit! The amount of time it will take to cook depends on the juiciness of the fruit...from 50 to 70 minutes. It is done when the top is firm and golden brown.

Grilled Pound Cake Sundaes

Grilled pound cake with pineapple, fruit, and ice cream. A good no bake recipe for hot weather. If fresh pineapple is not available use canned pineapple slices, drained, 2 per serving. Substitute any fresh fruits in season. For a no-grill option, broil pound cake and pineapple separately on a rack set 6” from heat source until lightly browned, turning once, 1 or 2 minutes per side. Instead of cooking spray, use additional melted butter to coat pound cake slices. The original recipe from Woman's World magazine called for serving with caramel topping and dulce de leche ice cream. I skipped the caramel topping and served it with French vanilla ice cream. -- posted by foodtvfan

Chocolate Zucchini Cake

This recipe came from my high school friend's mother. It is so moist and delicious! My husband didn't want to have at first because of the zucchini, but he couldn't even tell it was in there!
For a more healthy route, my sister-in-law does this: omit the butter, ¼ cup vegetable oil, and 3-3½ cups zucchini.
Lastly, instead of buttermilk, you may use ½ cup milk+ ½ Tbsp apple cider vinegar or lemon juice- let mixture stand at least 5 minutes. -- posted by gnet

I got this recipe from a local gas company cookbook. I'm not sure of the reasoning behind the name, but my kids love it. Its a light and refreshing cake, perfect following a heavy meal. -- posted by mommyoffour
