			<title>Pure Tzatziki Sauce of the Gods</title>

			<description>I guess it has been almost 20 years since I worked at Zorba's restaurant in Fort Worth.  Zorba's had the BEST gyros I have ever had.  Zorba's in the North Hills Mall is gone now.  The North Hills Mall is even gone now.  But I think I have a little treasure from the past that you are going to love.

Gyros that you get at a stand or restaurant usually have the same basic ingredients.  Pita bread, gyro meat (probably a cone from Kronos), onions, and tomatoes.  This is all turned into an unbelievable delicacy with a strange condiment called &amp;quot;tzatziki sauce.&amp;quot;

There are lots of tzatziki sauce recipes on the Internet.  But they don't quite match the creaminess of the tzatziki from Zorba's.  I also see tzatziki sauce recipes with dill, mint, lemon juice, and other strange things in them.  None of that was in Zorba's tzatziki.

Now, I have to admit that they never showed me how to make the tzatziki.  That was all done by Tula in the back kitchen.  Tzatziki was a complete mystery to me the whole time I worked there.  But I did happen to see the two things that made their tzatziki so special.

I remembered that one of the ingredients was sour cream.  Another one of the ingredients was something that sounded similar to sour cream, but it was different.  It was something I had never heard of before.  Years later, I kept thinking &amp;quot;what was that other ingredient?  Sour...something?&amp;quot; 

Now that we have the Internet, I am able to put together the last piece of the puzzle.  It was not &amp;quot;sour...something.&amp;quot;  It was &amp;quot;something...cream.&amp;quot;  It was, in fact, yogurt cream.

			<description>My DH came up with this recipe after much trial and error.  This is always a HUGE hit with family and friends.  He cooks fresh salmon on the smoker, which makes all the difference in the world.  You could also use canned salmon, but I doubt it would be as good.  This is a toss as you go recipe, so the measurements aren't exact.  We serve it with plain saltine crackers and a slice of canned jalapeno pepper on top. 			<description>The Auld Alliance is the historic friendship between Scotland and France, as well as a traditional cheese and whisky recipe. Here is a modern version of my Scottish grandmother's recipe for Auld Alliance. I have used Scotch whisky and a lighter French blue cheese, Fourme d'Ambert, instead of the usual Roquefort, which I find very salty. This makes a fabulous appetiser or an alternative cheese course. Choose a blue cheese and Scotch whisky of your choice; blends are better than malts in this recipe.   A Potted History!  Scotlands most famous connection with Europe was the Auld Alliance with France. First agreed in 1295/6 the Auld Alliance was built on Scotland and Frances shared need to curtail English expansion. Primarily it was a military and diplomatic alliance but for most of the population, it brought tangible benefits through pay as mercenaries in Frances armies and the pick of finest French wines! I decided to stay with this name but if anyone knows the Arabic for 'eggplant onion dip', I'll happily rename it. 			<description>This is a recipe for guacamole that I created after discovering that I actually like guacamole after 42 years!  Since then, I have been making it at least once a week without fail.  I am addicted!  I love my recipe because I like my guacamole with some texture, spicy, and with some cilantro and lime flavors.  It doesn't take long at all and I don't measure out my ingredients, so you will just have to make yours to suit your own taste.  The number of avacadoes is tricky...the sizes of them vary greatly and it also depends on how much you want to make.
