Marmie's Roasted Garlic and Dill Dip

A really yummy concoction I put together that went over so well!! Some of my guests suggested may want to eat it by the spoonful. I hope you like it too.
Easily made more fat friendly by using fat free sour cream and Miracle whip.
I am totally guessing on the servings.. -- posted by Marmie's

Kat's 7 Layer Dip

This is my summer "Bring a dish" favorite. The way I make it, I only have 6 layers. This recipe is made without beans, but can easily be adapted for those who want to use beans.

I love this recipe. It has a great light taste and is very easy to customize to your personal preferences. It's always a big hit. I got this recipe from my sister, who got it from someone else. -- posted by Chef #1071114

This recipe comes from the 1997 cookbook, Vegetarian Planet & it makes a dip that even I can enjoy, & I don't normally care for this green stuff!
Chicken Fiesta Dip

The recipe got rave reviews the first time I made it...once they tasted it! This dip was not very appealing to the eyes but boy was it good! I made some changes that I think will make a person want to taste it without being talked into it. I decided to reserve some of the shredded cheese and chopped chicken to sprinkle on top of the dip after baking along with some chopped tomatoes, green onions or jalapenos. Much prettier and even tastier! Yum!
You could probably make this in a crockpot, too.
This dip may seem thin when you first take it out of the oven but it will thicken up as it cools -- posted by cookinpossum

Seven Layer Guacamole Dip

This dip resembles a Taco Dip, but is much creamier and flavorful. I received many positive reviews on it, from the attendees at our last party. It keeps on calling to you...you can't have it just once! You can also use 14 oz of ready made guacamole paste from your deli, instead of making your own.

All Purpose Green Tea Sauce

Found on islandteashop.com while I was searching for different ways to use the matcha (green tea powder) I just ordered for myself. The authors of the site suggest brushing it on pork loin or salmon before baking, using it as a dipping sauce for dumplings, or trying it as a salad dressing. I bet it would be great in other things, too. Easy and different, why not give it a try? :) Serving size depends on preference and what you decide to do with it; you'll want more for a dipping sauce, probably, than you would for a brushed-on glaze. -- posted by Lynne the Pirate Queen

Perfect Homemade Mayonnaise (Julia Child)

From "Mastering the Art of French Cooking". JULIA'S POINTS TO REMEMBER :

Temperature:
Mayonnaise is easiest to make when all ingredients are at normal room temperature. Warm the mixing bowl in hot water to take the chill off the egg yolks. Heat the oil to tepid if it is cold.

Egg Yolks:
Always beat the egg yolks for a minute or two before adding anything to them. As soon as they are thick and sticky, they are ready to absorb the oil.

Adding the Oil:
The oil must be added very slowly at first, in droplets, until the emulsion process begins and the sauce thickens into a heavy cream. After this, the oil may be incorporated more rapidly.

Proportions:
The maximum amount of oil one U.S. Large egg yolk will absorb is 6 ounces or 3/4 cup. When this maximum is exceeded, the binding properties of the egg yolks break down, and the sauce thins out or curdles. If you have never made made mayonnaise before, it is safest not to exceed 1/2 cup of oil per egg yolk.

REMEDY FOR TURNED MAYONNAISE:
You will never have trouble with freshly made mayonnaise if you have beaten the egg yolks thoroughly in a warmed bowl before adding the oil, if the oil has been added in droplets until the sauce has commenced to thicken, and if you have not exceeded the maximum proportions of 3/4 cup of oil per egg yolk. A mayonnaise has turned when it refuses to thicken, or, in a finished mayonnaise, when the oil releases itself from suspension and the sauce curdles. In either case, the remedy is simple.

Warm a mixing bowl in hot water. Dry it. Add 1 teaspoon of prepared mustard and 1 teaspoon of sauce. Beat with a wire whip for several seconds unil they cream and thicken together. Beat in the rest of the sauce by teaspoons, thickening each addition before adding the next. This always works. Just be sure you add the turned sauce a little bit at a time, particularly at first.

REFRIGERATION:
After several days under refrigeration, mayonnaise has a tendency to thin out, especially if it is stirred before it comes to room temperature. If it does turn, bring it back using the preceding system. -- posted by blucoat

Pumpkin Fluff Dip

This is a Midwestern classic apparently-- a school chum from Iowa told me about this recipe that's popular around fall and early winter, from having leftover cans of pumpkin from stocking up on sale but not wanting to make any more pumpkin pies-- they're popular for high teas, luncheon spreads, Superbowl parties, Thanksgiving and Christmas, or sitting on your can watching The Golden Girls. :D Since I didn't want to use actual marshmallow Fluff...this is my fluffy adaptation of this recipe that came out HEAVENLY. I could eat a drum of this stuff and not get bored of it! One 15 or 16 oz can of pumpkin works, or you can measure out 2 cups from a 28-oz can. You can also use 2 tsp pumpkin pie spice for the spicing but it tends to be overpowering, the subtler cinnamon and nutmeg is better. -- posted by the80srule

The Bomb Queso Dip!

In my early years, I was known for making a plain old basic Queso Dip. I'm still asked to bring "Cheese Dip" often to parties, campouts, anywhere that certain friends will be. My recipe is never the same and it has evolved over the years....but here goes my chance to put it down on paper (or internet).

By the way....please don't call it "Con" Queso Dip unless you are adding a noun to the name....like "Chili Con Queso"...its not just "Con Queso"....that's my OCD-ness :) -- posted by Melanie B.

Homemade Salsa...

I got this from my friend Staci whose grandmother is Hispanic. Staci made it for us one day and I've been hooked on it since. Just a tip... Unless you can eat about a half gallon of salsa, I suggest you grab a few extra containers to share with your friends and family.PLEASE NOTE that because this is homemade salsa (no added preservatives), it only keeps in the refrigerator for 2 weeks tops! -- posted by Ali-Cat Roberts

Got this from MIL, who got it from the neighbor, who got it from a lady at church and so on. I have eaten it cold with frito scoops, put on potatoes warm, put in the middle of quesidillas. Everyone LOVES this dip.
Originaly this uses regular mayo and sour cream and regular cheese, I tried to make this a little healthier because I eat a lot of this. Also, black beans were not included with the recipe. -- posted by Anjaylah

Southwestern Pimento Cheese

I hate the mushy store bought style of pimento cheese. I prefer it a little drier than the traditional one so I came up with this. You can add more mayo to moisten if you want. This recipe should have texture so don't over mix everything. Serve with crackers or tortilla chips.
Too Cheap to Make Real Pesto. Pistachios are Perfect

Since the Umpa Lumpa's that harvest pine nuts started their own union, I have had to make some changes to my grocery list. $14 a pound is a little pricey for some tiny little nut. Pistachios are an ideal substitue. They taste great and if you buy them salted, (which is the only way I have ever seen them sold) you don't need to add any additional salt. One other thing. Peste freezes very well. I like to put it into ice cube trays and freeze it into portions. Then pop them out and put them in a frezer bag. It's easier to stuff a roast with pesto when it's solid, than when it's a messy goo. -- posted by ROV Chef
