Smoked Bacon and Corn Soup

This hearty recipe is perfect for the BRR months. Developed this during a time when I was in between grocery trips, so ingredients were what I had in the pantry.
Hearty Chicken Soup

A hearty chicken soup recipe that has been fine-tuned over many years to near perfection. It is one of the most flavorful soups due to the inclusion of dark meat, soup base, and a relatively high fat content. Let this be a warning: This recipe is not recommended for those who are on a low calorie or low fat diet. Eat in moderation. -- posted by Mike the Gastronomer

Sausage and Lentil Soup

I found this in an old Good Housekeeping Magazine (Dec. 2005) in my Dr. waiting room. We love it and it freezes beautifully. You can sub turkey Italian sausage for the regular. Don't skimp on the fennel, it makes the dish. I also disregard the amounts of salt and pepper and just season to taste (it does need a bit more salt than stated in recipe). -- posted by Aubergine910

Cream of Potato Soup

This soup isn't like the potato soups you find in resturaunts. This is an old fashioned Cream of Potato soup. I got the orignal recipe in home ec. in high school. This soup is thick and hearty. Perfect for cold days or when you just want some comfort food.

I've given alternate measurements for a smaller portion at the bottom of the recipe along with tips to make thinner and/or chunkier. -- posted by ~Sherry~

Tortilla Soup

This recipe came from my high school Home Ec. class (which I took 19 years ago). I have never seen another tortilla soup like it. I describe this soup as having a taste somewhere between salsa, tomato soup, and spaghetti sauce. It is very simple to make.

I use 2 cups of water and two chicken boullion cubes instead of a can of chicken broth. Also we like garlic so I usually use about 3 cloves of garlic. To make this soup vegetarian don't add the beef and use vegetable broth instead of chicken broth. -- posted by ~Sherry~

Ten Mothers Garlic and Spinach Soup

Found this recipe on Care2 website @ http://www.care2.com/greenliving/ten-mothers-garlic-and-spinach-soup.html

Adapted from The Roasted Vegetable, by Andrea Chesman (Harvard Common Press, 2002).

This delicious broth, redolent with garlic and enriched with the vitamins and minerals of fresh spinach, takes its name from an old folk saying that garlic is as good as ten mothers.

This soup is not only tasty and nourishing, it makes a comforting remedy for winter sniffles and sneezes. -- posted by SassiFras

Perfect Chicken Corn Chowder

I've never had a better one. Been making this for years. Use a chablis, sauvignon blanc or any not-sweet similar white wine; it need not be a great wine but the wine DOES add that certain something. I've even been known to add a tiny splash of dry sherry at the finish. The soup is filling and delicious. Also freezes well. A vintage recipe, from my "olde" recipe file. I'll tell you how old it is: it calls for 17 oz. cans of creamed corn! I have no idea where the recipe came from originally! -- posted by Jezski

Creamy Chicken and Kabocha Squash Shells

Don't be deceived by the lack of added seasonings. It is full of flavor! Adding the squash makes the whole thing rich and smooth, with a color and consistency similar to Kraft Mac'N'Cheese! Delicious! Even my daughters loved it!
Food & Wine Kale and Potato Soup With Turkey Sausage

Cheesy Beer Brat Soup

A cheesy, Wisconsin winter soup utilizing local beer.

As with any recipe there are hundreds or thousands of variations on this basic recipe. We set this cheese/beer/brat soup apart from others with a couple primary distinctions.

Being a beer nerd, when I add beer to a recipe I consider the style of beer seriously. To me beer is not just whatever you happen to have in the cooler/fridge etc. Here we've slected a locally available pale ale from Ale Asylum in Madison, WI. It lends some great color to the soup and the prominent hop presence in this ale adds a great flavor without being overwhelming. To replicate this recipe without Ale Asylum's Hopalicious you can substitute any quality pale ale or IPA. Ask your local specialty retailer for tips or look for anything with "pale ale" or "IPA" on the bottle. Sierra Nevada Pale Ale is probably the most widely available and is a suitable substitute. If you've any other questions, feel free to ask!

Secondly, the brats. Brats should be cooked ahead of time in 12 ounces of the same beer that is being used in the soup. We typically cook our brats in a pan with beer and most of a whole onion until they're just cooked through then I throw them on my Big Green Egg and, using only natural lump charcoal WITHOUT lighter fluid, brown them gently. Then slice and quarter as per the recipe.

Fianlly, I can't recommend enough that fresh ingredients be used whenever possible, especially the fresh-pressed garlic and fresh ground black peppers.

Cheers! -- posted by Zook and Lola

Southern New Year's Day Soup

This wonderfully healthy collards and black-eyed pea soup by Sarah Cooper is a natural for New Year's Day. It started as a Cuban-style collards soup that included bacon fat, short ribs, Cuban sausage and ham hocks. Eventually Ms. Cooper decided to "de-fat" and change some of the ingredients to typical southern ones. The results are both aromatic and hearty, perfect on a cold day. To shorten prep and cooking time, you can use canned black-eyed peas, drained, rinsed and added towards the end of cooking time. Note: the recipe does not include soaking time for the dried peas.
Horseradish Cheddar Beer Soup

This hearty soup is adapted from a recipe by Jenny Levison, owner of Souper Jenny, a Buckhead GA cafe that serves hundreds of bowls of soup a day from a menu that changes daily. Jenny's soup-making tips include "tasting everything as you go, using recipes as a guide. Read through them and substitute if you need to adapt to what you have on hand or your taste, and then try it!" She suggests using a dark beer like Guinness; others prefer pale ale ... but use a lighter beer if you'd like. I especially like the combination of horseradish, cheese and beer in the basic recipe and suggest adding spices, etc., to heighten flavors as desired. I've included Optional Additions that might give you some ideas but are not part of the original recipe. Another Golden Whisk winner as one of "The Best Recipes of 2009" awarded by the Atlanta Journal Constitution. -- posted by ninja

Frogmore Stew -Low Carb

Here is a low carb version of a lowcounrty favorite. Come October in the South Carolina lowcountry, when the shrimp season overlaps high blue crab season, it's time to make Frogmore Stew! Named for Frogmore, South Carolina, a town of about ten thousand people in the low-lying wetlands between Beaufort and St. Helena Island, this stew quite literally seems to have emerged from the marshes: it puts shrimp and crab front-and-center, and it's often served by outdoorsy characters, at hunting stations, fish shacks, and boatyards. And more than any other stew, Frogmore (which is also sometimes referred to as Lowcountry Boil) lives up to the spirit of one-pot dining, with whole, shell-on shrimp, split crabs, corn-on-the-cob, and smoked sausages bobbing around in a richly-concentrated shellfish broth. -- posted by Porfavorcorona

My take on Panera Bread's Broccoli & Cheddar Soup...it's really close, except for the carrot bits! Kept the fat down until you get to the cheddar ( - try and get block cheese and shred yourself, it melts better than the pre-shredded. )! really easy and warming.
Split Pea Soup With Spareribs

I first had this at my aunt and uncle's, had never heard of split pea soup with anything other than ham in it. Loved this, I definitely prefer spareribs to ham in this soup! Boiling the ribs in the soup and then letting it simmer for hours leaves the meat more tender than the crockpot! As written, it was a bit bland for our tastes, we added an extra tsp of the hickory salt and will try adding more peppercorns next time (I couldn't even taste the pepper this time). I added one tsp of pepper to the leftovers and that seemed to help. -- posted by The Wallaces

Tasty, Meat and Condiments Free Vegetable Soup!

Vegetable Soup! If you took away the egg which I myself forgot to add in anyway, it would even be vegetarian and vegan. Completely healthy without the need to add ANY condiments at all, unless you need a stronger taste. In that case you can add pepper/salt/soy sauce/meat/stock but this is for the health conscious who don't mind fresh tasting vegetable soup that is not strongly-flavoured.
Corn Chowder With Chicken & Bacon

This is another custom twist on a recipe from my favorite cookbook. The original recipe is for Sopa de Elote, a sweet corn soup from Central America. I don't like vegetarian dishes and I don't like complicating recipes with too many fresh ingredients, so I simplified this and made it meaty.

Consider adding 1-2 tablespoons chopped fresh cilantro or some diced jalapenos to change up the flavor. You can serve this with warm tortillas, cheese crisp, cheesy jalapeno bread, corn bread, whatever. I suggest garnishing with a tortilla strips, a shredded Mexican cheese blend, or even sour cream -- posted by Chef #1534395

Tri-Colour Stuffed Pepper Soup

Take two frustrating attempts to make a different stuffed green pepper soup and a wonderful blizzardy day and you end up with a soup that mirrors a stuffed green pepper, exactly! There's nothing like dogged determination and lots of time to get something right. I wanted a rich sweet pepper soup that had the delicate flavour of tomatoes and the ability to bite into a meat/rice mixture, just like a real stuffed pepper. This recipe is two parts: first, the Porcupine Meatballs, which can be made a day or two ahead. Then, the Tri-Colour Pepper Soup, which is a stand alone soup that I've been making, and enjoying, for years.

If you enjoy a lot of meat, you might want to double the meatball recipe; for our tastes, this is perfect, with 4-5 meatballs served in each bowl. The taste of this soup is quintessential 1950's style Stuffed Green Peppers. If you can tolerate more heat, then jazz it up to your hearts content! This way, you won't find the recipe "too bland", which is how we like it---pure comfort food straight from Leave It To Beaver.

Enjoy the meatballs or enjoy the pepper soup, or, enjoy them blended together for the best of all worlds with this stuffed pepper soup! Using the three colours of peppers just adds some fun and depth to it. -- posted by The_Swedish_Chef
