Cranberry Baked Pancakes-Arsenic and Old Lace B&b Inn

This is a very quick and simple breakfast dish but looks very impressive. The apples, cranberries, cinnamon and maple syrup are wonderful together. Toasted pecans would also be good sprinkled over the apple slices with the cranberries. Serve with with warm maple syrup or fresh apple butter.
Easy Cran-Raspberry Sauce

This simple but elegant twist on cranberry sauce comes from Stephanie Jaworski by way of her website, joyofbaking.com. I came across this when searching for a good cranberry sauce that didn't include orange juice as a primary ingredient. I have a medical condition that requires me to severely limit my intake of citrus, which means that the usual cranberry sauce recipes just don't work for me. This yummy alternative can be used many ways, but is especially wonderful over ice cream. Cooking time is approximate. -- posted by Lynne the Pirate Queen

Quick Christmas Pudding - a 'lite' Version of This Favourite

We always seem to be in the Christmas festive season again without even thinking. Where does the time go. Here is a great recipe that I have made every year for the more than the last 10 years and has been enjoyed by both my family and friends alike. After having the full Christmas meal sometimes a very rich and heavy Christmas pudding can be too much so some so this is the perfect alternative.
This is a ‘Lite’ (as is lighter in density and not in the dietary sense) version of a traditional Christmas pudding that does not need to be made way in advance of the day to get the best flavour but can and should be made on the day before or on the day it is required.
There are a couple of traditions that I always follow when making this recipe.
• The first is I always use my Grandmother's Denby stoneware mixing bowl as I am convinced that this gives the pudding a better flavour;
• The second is always get everyone who is at home when I am making the pudding to give the mix a gentle stir just before putting into the pudding basins so that they can individually make a wish.
This recipe will make 8 individual or 1 large Christmas pudding. -- posted by Chef #274732 (Duncan)

Healthier Carrot Cake

With Easter arriving, I was searching for recipes that were relatively healthy, compared to my normal Easter recipes. I came across other "healthy" versions of carrot cake, but tested them and they turned out skimpy and did not quite satisfy me. Therefore, I went into my kitchen and came up with my own little concoction that is moderate in fat, but not absolutely low fat. Hope you enjoy! -- posted by Carmen128

Gingerbread Christmas Ornaments

These look and smell like real gingerbread, but are not edible! They are extremely cute ornaments for the tree, and can be decorated with acrylic paint once they are dry! They harden up very well, and will last for years if cared for. I have so many good memories of taking out the tin of these on Christmas, and having the house smell like gingerbread instantly while trimming the tree! Note: Prep time includes cooling time before baking, as well as hardening time after baking. -- posted by Vicki in Houston, TX

Colorado Mel's Apple Cranberry Crisp

This recipe is delicious. Our family really enjoys tart fruit desserts, so the recipe below reflects that. If you prefer yours a bit sweeter then you should use a sweeter apple or add another half cup sugar to the fruit. One thing I love about this recipe is how versatile it is! I'll switch out what fruit I'm using just based on what I have on hand. Yummm! This is also a healthier "Crisp" recipe than the average. There is more fruit and less crisp... I enjoy the taste of the ratio as well as the lower fat content of the ratio. ;) Try it- I bet you'll enjoy it! -- posted by Colorado Mel

Caramel Apple Egg Rolls (Excellent for Christmas)

These are wonderful for the holidays! They're fun to make, something that the kids can help with, and they're so good! You don't need to wait for a holiday to make and enjoy them. I've made them a few times now, I took some to a Monday night football party and they were gone before I even got settled! The smell alone is enough to remind you of apples, spices, parties and people you're happy to be with. Enjoy!
Note: Times vary, depending on if you are doing it alone or with help. I will "guestimate" for the sake of the computer. I add chopped walnuts to mine. You may try them or not, totally up to you. -- posted by FLUFFSTER

Bill Yosse's White House Apple Pie

Came across this in The Seattle Times. Pie without an exquisite crust is simply not the real thing. They said, "White House pastry chef Bill Yosses' light, flaky pie crusts have earned him the nickname "The Crustmaster" from President Barack Obama." This recipe is adapted from Bill Yosses, White House Pastry chef - hope this version is as good as the one being served in the White House. Note it makes use of lard, the secret of all great pastry. Just in time for prime pie making!
1958: Eggnog

A Craig Claiborne classic from The New York Times. One just can't do any better than this one. Cook time is chill time for the alcohol to remove any raw egg taste. I don't make it unless it gets really cold - so, for those who have snow ... make a batch of this & put another log on the fire.
Super Spritz Cookies

I got this recipe from the Super Shooter Idea Book. After trying different recipes, this one's my favorite. I think the rich flavor comes from the three egg yolks. I recommend using butter rather than margerine. It really gives the cookies that special flavor. -- posted by Linda N

Ruth Reichl's Sweet Potato Pie

A simple and delicious pie from Ruth Reichl's memoir, "Comfort Me with Apples". It's great as is and is also a very flexible recipe that you can adjust to your preference. You can substitute brown sugar for white, omit the rum or use bourbon instead, or increase the vanilla or spices.
Recipe can be doubled for a deep-dish pie. (The cooking time will be nearly doubled as well.) -- posted by blucoat

Truly British Brandy Butter: for Festive Figgy and Plum Pudding!

Make your own brandy butter to smother over delicious, homemade Christmas Figgy or Plum pudding, and in only 5 minutes with this easy recipe,..........no Christmas table would be without this "naughty but nice" accompaniment! This is also wonderful when served with hot mince pies......prise open the pastry lids and dollop some brandy butter inside, preferably when they are warm, so the brandy butter runs through the pies! This makes a great gift - pack the brand butter into an attractive pot and add serving instructions. . -- posted by French Tart

Almond Hot Cocoa / Hot Chocolate

I've been making this since I was a kid. I was taught it by my Grandmother, who learned it from her mother. It's a very old, very easy recipe. I craved this drink constantly while pregnant. I usually use Hershey bars or Kisses to make this. I like to use leftover chocolate from Christmas and Halloween to make this. I have used every chocolate imaginable for this and I've never had a complaint yet. Also, you can use water instead of milk, though it will taste different then intended. I use milk to make sure my daughter drinks enough during the holidays. It has a kick to it, because of the Cayenne and Cinnamon. If you taste test throughout, you should have no problems. Besides, that just means you have an excuse to have more chocolate. : )

Note: You can also make this into Peppermint Cocoa. See directions below. -- posted by Bekahbv

From "Celebrating Christmas," by Pamela Westland. Made it last Christmas, 2009--delicious, and not too "fruity." People who don't like fruitcake loved it. It has the most delicious scent when you unwrap it, that remains until the last slice is eaten. I believe it took mine no more than 2 hours to bake.
