Adapted from 'Pasta Cooking' by Parragon....  the original recipe called for spinach, which I didn't fancy, so I subbed zucchini. I get the impression that our zucchini are generally a bit smaller than those in the Northern hemisphere, so balance the amount used with your other vegetables, just feel your way!  You don't want your soup to be over-loaded with any one vegetable.

			<description>****OH DEAR !!  Zaar will not allow me to delete this recipe, but unless you crave BLAND and TASTELESS -- do NOT prepare it !  SO disappointing !  I added a garnish of real bacon, a handful of grated Parmesan, LOTS of S&amp;amp;P, and it STILL had no flavor !  SO sorry !  That's what I get for posting something I had not prepared !  I think no native Italian would serve this either . Need to find more recipes with dried Fava beans !

			<description>This is from the September 2008 Homemakers magazine; takes advantage of all the fresh local tomatoes available at the end of the summer.  The original recipe calls for a total of 1/3 cup of oil which seemed like a lot; I usually use about 3 tablespoons.  I also substituted lower fat ricotta and mozzarella cheese and reduced the salt and the flavours weren't compromised. You can use any small pasta in place of the wheat. I use home canned tomato puree but you can replace that with two 28 ounce cans of tomato sauce and 2 cups of water. 			<description>A yummy recipe from Rachael Ray's Big Orange Book.  She got tired of living half of the year without her ziti, so came up with ziti lovely in flavor! A light tomato sauce with tarragon and basil surrounds the ziti at the bottom and on the top of the serving dish. The pasta is tossed with asparagus  tips, sweet ricotta, tender peas and Parmigiano. 			<description>Spicy goodness! Pumpkin's not just for dessert anymore either-- and this is a fun casserole that has elements of Latin and Middle Eastern cooking.  Best of all, you don't even have to use the stove to make the sauce! It is a very thick and rich sauce. The pumpkin base is very hearty and delicious, and is jam-packed with Vitamin A and lycopene. The garbanzos (chickpeas) are loaded with protein and cold-press olive oil is good for your heart (so it's a good fat instead of bad fats like in vegetable oils and shortening.) You won't believe this yummy casserole is healthy. :) This is a totally vegetarian dish, but if you want to vegan-ize it, you can use soy, hemp or almond &amp;quot;cheese&amp;quot;, skip it altogether, or use some soy silken tofu. Meat lovers might want to throw in ground beef, and/or use chicken or beef stock/broth instead of veggie broth. I made this up myself, and love it! 			<description>Found this in a supermarket checkout cookbook years ago and it's still a family favorite. One important step is getting the water removed from the spinach as much as possible; after I drain it and squeeze as much out by hand I wrap it in a 4 layer pad of paper towels and squeeze it some more. Save the paper towels and use them later to dry off the noodles so they don't slide all over, this makes it a lot easier to spread the filling. I have listed 2% cheese and 1/3 less fat cream cheese but it started out being  made with the full deal, we don't notice any decrease in flavor (I've also made it without the egg a time or two when I ran out and it tastes the same and holds together OK). I also think the filling makes a good spinach dip if you leave out the egg. Made this a couple of days ago. I was really afraid one box of fettuccine wasn't going to be enough, but it turns out perfectly. I used my mandoline thing to julienne the zucchini. Everybody in my meat-loving family enjoyed this hearty, healthy vegetarian dish. Very filling. I also used a big (like 30 oz?) can of diced tomatoes, drained instead of fussing with fresh ones. I also used the Parmesan cheese out of the container, but it would be awesome with fresh! As always, you can adjust the garlic, cheese, and red pepper flakes to your tastes. This recipe freezes nicely and the leftovers are wonderful the next day.  If you want, you can saut&amp;eacute; onions in some butter and serve on the side.  I would recommend using an 8x8 casserole dish and trimming the lasagna noodles to fit, but you can certainly use a 9x13; just add an extra sheet of lasagna to each layer.
