			<title>Kitchen Sink Lentil Burgers</title>

			<description>I had a pot of lentils and only a vague idea to use them to make soup.  Then I took a look at the recipes here for patties and burgers and decided to have a go at it.  Per usual, I had this and that on hand and out came this creation.  It's GREAT with ketchup and is the closest I've come to having something vegetarian homemade that tasted like my Mom's meatloaf.  It makes a fabulous burger too! 			<description>Adapted from How it all Vegan.  This is really easy to throw together, provided you have the beans ready to go (or use canned).  Even if you have to boil some up, dry navy beans and soy beans are pretty quick if you've soaked them for 6 hours or so.  This is a less sweet version of baked beans with only a little molasses, more tomato-ey.  It's satisfying and simple.  If accompanied by a salad and some hearty bread it would probably be enough for 4 people.  For larger portions though, I'd say more like 2 or 3, with some leftovers.  The original recipe only called for 1 1/2 cups broth, I adjusted to 2 1/2, found it was too dry otherwise, but then I really like sauce so you may choose to cut that back down.  I also added 1 tbsp of brown sugar, found it was just lacking a little something without it.  The last adjustment was to the cooking time - originally calling for 40 mins at 350, that wasn't near enough time to even cook the onions, so I upped to 375 for an hour. Serve the wontons in a mild, low sodium vegetable broth (chicken flavor if possible).

You can double or triple the wontons recipe, lay them out on a cookie sheet, and freeze them, then bag them and take them out to make soup in small quantities. I love these kinds of appetizers because they don't take much time, this one is vegan -- so almost anyone can eat it. I like to serve them with Pita Crisps: preheat oven to 375&amp;ordm;F. Split 6 pitas hrizontally into circles, then cut each circle into 6 triangles. Lay them in a single layer, rough side up, on 2 or 3 baking sheets. Use a pastry brush to brush triangles with olive oil, then sprinkle with fennel seeds and a pinch of sea salt or instead of fennel and sea salt use Mrs Dash salt free seasonings. For example: Table Blend, Original or Garlic &amp;amp; Herb, these have a flavor all their own -- try it you might like it.
