Dress It Up: Deviled Eggs

It's not even Easter, but I boiled a bunch of eggs so I had an excuse to prepare another one of my favorite naughty foods--deviled eggs. This is a simple recipe, but very good. I have to confess, I never bother with a piping bag because deviled eggs never last long enough for me to look at. I don't have the patience to make them pretty--I just want to eat them. It's kind of like, why bother making the bed when I'm just going to get back in it?
Peachy Fruit and Yogurt Shake

I adapted this from Better Homes & Gardens Diabetic cookbook. I have changed a few things. They say in the testing kitchen, they discovered if they added a little vanilla extract to the shake, they didn't need a sweetner. Feel free to add a little honey or sweetner if you feel it needs it. If you partially freeze the banana and yogurt, you can leave out the ice. -- posted by Sharon123

Yellow Turnip Soubise

I don't like many vegetables. I try to find lots of creative ways to make them taste better, so I can have a balanced diet. Rutabaga's( yellow Turnips) are high in vitamins and lower in carbs than potatoes and so make a great substitute in many things. They also combine with onions and rice in this simple recipe to make a rich, creamy soup that is high in nutrients and low in fat.
I found this recipe in "Recipes 1-2-3" by Rozanne Gold. -- posted by Ames0325

An Unusual Borscht

An combination of beets, squash, and yogurt makes a sweet yet savory soup that is quite filling. Slow roasting the vegetables takes quite a bit of time but is well worth it for the intense flavor it gives to the borscht. In a pinch I have substituted buttermilk for the yogurt and it worked well. -- posted by Ames0325

Garlic Butter

This is as simple as it gets. We keep a pot of this in the fridge and also take it camping so we can have easy garlic flavour for all our dishes. Use it in pasta, soups or for super-easy garlic bread. The salt in the butter keeps the garlic from going bad and we have successfully carried this bike touring in hotter climates (up to 25C during the day) for a week. The butter melts during the day in these conditions but reforms at night when it's cooler. -- posted by Sackville

Almost Companion Bread's Baked Eggs

Companion Bread in St. Louis makes the best baked eggs I've ever had. They have several versions in the cafes and have posted the potato version that inspired this recipe at http://www.companionstl.com/baked-eggs-potatoes/. My version came from an effort to lighten it up by not using cream. I also made a few changes based on personal taste and what I happened to have in the house when I decided to give this a whirl. -- posted by Karen67

Grilled California Avocado Salad

Large avocados are recommended for this recipe. A large Haas avocado averages about 8 oz (here in Miami - our avocados have a tendency to be a bit larger). Adjust the the quantity accordingly. This is easy, tastes great, & has that WOW factor! Yes, I know the title sounds odd, but it is actually a great combination.
Fireside Frozen Mocha

In just seconds, you’ll have a frosty, refreshing, chocolate-y coffee drink that will be the envy of neighboring campers!” For one serving, halve the ingredients; for four servings, simply double the ingredients.
I use this basic tomato sauce as a base for any recipe that calls for tomato sauce. I freeze 2 cup batches and defrost them as needed for the recipe I'm making. I then tailor the sauce to my flavor needs for the recipe, adding herbs and spices as needed. This works so well, I haven't purchased jarred spaghetti sauce in months. -- posted by Nicole Neumann

Brussels Sprouts in Soy Sauce

My wife and I love Brussels sprouts and this is our favorite way to prepare them. It's our own creation and so good that I'm amazed I have never seen a similar recipe anywhere. The flavors of the sprouts and the soy sauce seem made for each other. The recipe is quick and so simple that it can be thrown together as a side vegetable any time sprouts are on hand. I always use Tamari soy sauce, but anything you have on hand will do fine. And I always use olive oil, but butter or another vegetable oil would be fine if you prefer. -- posted by Cowshill

Creamy Butternut Squash and Spinach Gratin

I just got back from a quick trip to Miami, Fla. and had something very similar to this at a restaurant called Captain's Tavern. It was so good, I had to try to find the recipe. Here's one gleaned from Gourmet magazine, Nov. 2006 via Epicurious. Enjoy! This is one big casserole, but at the restaurant it was in individual dishes. You may add the cheese between each layer or just use it to top, or leave it out if you prefer! On the website, this has 92 wonderful reviews! this is even better the next day. You can half this recipe and cook in a 9x9" pan. This is so good, serve to company and for the holidays. This recipe calls for slicing raw squash but to make it easier to cut, microwave for 3-5 minutes, or lightly steam or bake and then cut in pieces. The recipe says it will serve 8-10 people but some said it served 12! -- posted by Sharon123

Make Your Own Single-Serve Vanilla Yogurt

Although it lacks the portability of something like Yoplait, Dannon, Stoneyfield Farms, etc. it's a good alternative if you like a cup of yogurt with breakfast. Most are 6 oz instead of a full cup, so I decided to use that measurement instead. Except for when I can get them really cheap or need to carry them to school or work, I think I'll use this method to make vanilla yogurt from now on.
German Onion Pie

My friend Mrs. G., a German lady from Bavaria, used to make a fabulous onion pie. I never got her recipe but I watched her make it a few times. I searched for a similar recipe and found that most German onion pies contain bacon, etc., but hers was meatless and very delicate. I finally found this recipe which I adapted slightly so that it is very close to hers. Posted for safekeeping - I have not tried this yet.
Cabbage With Caraway

This is my mother's recipe - I don't know where she got it from. It is a great way to cook cabbage, which leaves it slightly crunchy and tasting delicious. Nothing like the awful boiled cabbage you remember from school!

Cabbage is very good for you, as it contains anti-oxidants, vitamin C and all sorts of other things.

Try this as a vegetable with chops or burgers and plain boiled potatoes. You can use leftover cabbage and potato to make Bubble and Squeak. -- posted by SarahEmmm

Simple Brandy Cream Sauce for Ravioli

I'm on a cream sauce and ravioli kick right now. This is a simple sauce to make. It doesn't matter what kind of brandy you use; you can also sub gold rum although brandy gives it a richer taste. But it would also probably taste fine if you omit it. This is a good amount for about 4 servings, 700g/1.5 lbs of premade ravioli. -- posted by the80srule
