Crock Pot Falafel

This is so good and easy to prepare in the crock pot. I got this recipe from a crockpotting blog and tweaked it to suit our tastes. Now I'm addicted to falafel. It's a middle eastern dish that is usually served in a pita with a cucumber/yogurt sauce but we prefer it wrapped in a corn tortilla with lettuce, tomatoes and a tangy ranch dressing. Even the kids eat this one up. -- posted by Grace4Gayle

Sloppy Joe Lentils (Slow Cooker or Crock Pot)

This is a semi-homade version inspired by the other sloppy joe lentil recipes here (thanks, guys!). This is for the 5-6 qt. slow cooker too. Hubby tried it and liked even though he's a carnivore. I made this one afternoon and froze half of the batch for another time. With a 6 qt. slow cooker, you can probably double the recipe easily (I ended up adding extra lentils to the recipe because I used too much water at first...ended up with 1.5lb. lentils and I still had plenty of room in my crock pot). -- posted by Honeywine

Crock Pot Apple Pie

Probably more cobbler than pie, but whatever it is.....it is AMAZING. I love making this when we have company, because it makes the house smell wonderful. It is a great dessert at the Holidays, because it doesn't take up oven space when you have so many other things to cook. It is great with fresh whipped cream or vanilla ice cream. -- posted by LizP

No Mess Crock Pot Steel Cut Oats

After being a zaar lurker for years, I finally am posting so I can find this recipe again. My husband gets up early for work and likes steel cut oats, but I don't want to be slaving over the stove or have a nasty crock pot mess. So I found this method on a blog (I don't know where exactly), and tried it last night. It worked perfectly! The oatmeal brulee came off a different blog and I haven't tried it but it sounds absolutely yummy! -- posted by Jonesy

Crock Pot Black Bean Burritos

This recipe is insanely high in fiber and protein, but very low in fat. It has become a family favorite and we have it almost every week! We love this on warm flour tortillas (high fiber if you can find them), and serve it with fresh avocado, shredded cheddar, sour cream and lime wedges for squeezing.
It's also great over brown rice, or with diced chicken breast added. Have fun with it, I do! :)
Updated to add: This recipe relies heavily on the salt and pepper. The ingredients all have incredible flavor but it won't pop unless you properly season the dish. PLEASE don't omit the s&p. With proper seasoning you will not possibly find this dish to be bland. :) -- posted by Melissa and Her Pants

Tomato Taco Soup for the Crock Pot

This is truly a "dump it in" recipe using canned veggies, but it tastes fresh due to the lime juice, cilantro and avocado; semi homemade I think they call it these days!
Mexi Lentil Rice

this is an easy side or main dish. the cheese is optional. we eat it as a main dish. I can't remember where I got the beginning of this recipe but I have adapted it so much I don't think it would be recognized anymore. I make this in a crock pot but it could be made in an oven in a covered dish at 350 degrees for 1 1/2 to 2 hours.
Vegetarian Slow Cooker Split Pea Soup

Got this recipe online a couple years ago. I've tweaked it a little bit and will probably continue to experiment by throwing other vegetables in. It's a great soup for a cold day when I know I won't have time to cook dinner. I usually make a batch and freeze what we don't eat. It tastes the same when reheated after the freezer, but the texture does change slightly. Lasts a few days in the fridge as well. -- posted by whifflellama

Bavarian Cabbage Chowder

My daughter-in-law gave me this recipe about seven years ago. They came to visit us and she made it for a supper for the kids. Of course, we all loved it. You could use Kielbasa instead of the vegetarian hot dogs and that would be good too! I have made it that way a few times and it tastes so good that way! When we have vegetarian guests, I make it the regular way for them and we still love it that way too. Cook time does not include the time for cooking the vegetables ahead of time. -- posted by OceanLuvinGranny

This came from a cookbook I borrowed from the library and I am sorry I didn't write down the name of the book. We first made this in the dutch oven over the camp fire. Anything over a fire is good! But this is just as good done in the crockpot for 8 hours or on the stove for 35 minutes! can be assembled the day before and stored in the refrigerator overnight.

Wonderful Crock Pot Italian Tomato Sauce

This inspiration for this recipe was from my Italian relative. This is a very simple, delicious and authentic Italian tomato sauce, but instead of cooking it on the stove you prepare it in a crock pot.
Split Pea and Parsnip Soup - Crock-Pot

The parsnips add a creamy sweetness that complements the flavor of the split peas. If parsnips are unavailable, use carrots instead. Because the peas have a tendency to settle on the bottom of the pot, a quick stir midway through the cooking process is helpful. The Liquid Smoke adds a "bacony" flavor to the soup and is available in most supermarkets. While this is intended to be vegetarian, from Fresh From the Vegetarian Slow Cooker, I also made this with a ham bone instead of the liquid smoke and was delicious. -- posted by ~Jen~

Lentil Barley Soup

From fatfreevegan.com, adapted from NewCenturyNutrition.com

Based on a recipe by J. Raymond

Thick enough to be called a stew, this hearty soup is easy to prepare and cooks in a single pot. Add more water or stock if you wish to have a thinner soup.

Pearl barley is the variety most commonly sold in supermarkets. Natural food stores offer hulled barley, which is slightly less refined and cooks in about the same amount of time. -- posted by Chef #1109421

Veggie Chili

This is a recipe in development.
I've made it for years without a recipe, but now I'd like to start perfecting it. This last time was the first I've used dried beans, but because we know that it takes more energy and fossil fuels to ship canned beans, my husband and I are learning how. In order to capture what we ACTUALLY did in order to perfect the recipe, I'm including the days between initially boiling them and cooking the chili... this was necessity, and I'll edit the recipe when I make it next.

This is a spicy, vegetarian chili that freezes VERY well. I like to serve it with cornbread or spoonbread and some cheese. -- posted by Kendra PeloJoaquin

Crock-Pot / Slow-Cooker Cheesecake

This is an easy recipe for a cheesecake with an unbelievably silky texture because the machine steams the cake as it bakes. Recipe is from Beth Hensperger and was printed in "Food & Wine" (November 2007). You must resist the urge to peek inside as it is cooking—the lid must stay closed to retain heat. Cake must be chilled for at least 4 hours. -- posted by blucoat

Quinoa and Lentil Soup

I have been living gluten- and soy-free for a year now and, being a vegetarian, I am finding it a bit difficult to find interesting recipes to make. I often save recipes I find and then try to adapt them in my spare time. I found this recipe on AOL and swapped beef broth for vegetable broth and barley for quinoa. Hopefully, I will get the opportunity to try this soon. -- posted by Chef #440984

Threw this together one day when I had nothing in the fridge (save condiments). Lentils cook much, much quicker than dried pintos, and have more protein and fiber. I used my mini-slow cooker, but can be made in a pot on the stove top.
Easy Slow Cooker Applesauce

I came up with this recipe after I had bought too many apples for me to eat before they started getting soft. I didn’t want to waste them or my money so I used what I had in my house for spices and poof! Out came this recipe. You can really use any kind of apple you want, Mac’s are usually less expensive than most other kinds of apples. The coriander and lemon juice add great brightness to the apples.
I like to eat it plain, but it’s great stirred into hot cereal, or on top of your favorite vanilla ice cream with a little caramel sauce on the side, it tastes like an apple turnover! I know that the spices seem minimal, but they add such a great flavor that’s not overpowering. -- posted by nicolygoay41

Rice Cooker Chocolate Cake

This dark, rich, chocolate cake is perfect with coffee on a lazy afternoon or as a special treat for a birthday cake. It has no eggs or milk so is ok for Vegans. Top it with your favourite frosting, or just sprinkle powdered sugar on it to 'finish' it for the table.I love the recipe as I alway seem to be out of milk and eggs, so this recipe suits my house!
I do not have an oven so need something that works in rice cooker. Rice Cookers vary but this recipe seems to work just fine in most. Set the cooker for slow cook if you have that function. -- posted by circle3

Vegan Baked Beans a La Crock Pot

At the time I'm posting this there are two other vegan baked bean recipes on the Zaar, both look really good. I didn't find one for the crock pot however, using dried beans and no tomatoes.....so hopefully this fits that bill for someone else out there! I found the recipe online - http://www.beanbible.com. There are only a few things I tweaked, one being Bakon yeast. Unfortunately not something I'm at all familiar with or have ever seen in the stores, but I found out a little more about it and replaced it with some nutritional yeast & liquid smoke. Adjust the heat as you wish. NOTE: Soak the beans ahead of time (night before). The cooking time doesn't reflect the overnight soaking of the beans, but it does reflect the crock pot cooking time if set to low. Hope you enjoy! -- posted by magpie diner

Slow Cooker Garbanzo Bean and Potato Soup With Pesto

For extra nutrition, leave potatoes unpeeled. To boost nutritional value further, add 2 cups chopped kale (chard, baby spinach, baby beet greens, etc.) to the slow cooker *just*before serving -about ten-fifteen minutes. Kidney beans can replace garbanzo beans if you prefer and for additional color. A sun-dried tomato pesto would be an interesting change in place of traditional pesto.
