Vegan Sweet Potato Souffle

This recipe is a family favorite. I'm the only vegan in my family, but I always have this requested for holidays and birthdays alike. It's really almost like a sweet potato cheesecake filling. I've found that fresh sweet potatoes result in a highly superior product than with canned sweet potatoes. If you love pumpkin pie or sweet potatoes give this recipe a try- trust me one bit and you'll be hooked! -- posted by Sinarei

Cranberry Chutney

When you have people skipping the turkey seconds and going back for the chutney by itself, you know you have a winner. I find regular cranberry sauce much too sweet, but this is a nice balance of sweet and savory, and not overly tart or spicy. The original was from an old Gourmet magazine, but I have made substantial modifications. This recipe makes a lot, but it keeps well in the fridge or may be canned using the water bath method. -- posted by graffeetee

Roasted Pumpkin Bites

Gluten-Free Dressing / Stuffing With Dried Fruit - Kosher

Here's my dad's recipe for stuffing, adapted to be kosher and gluten-free. I suppose it is technically "dressing" but we've never called it that. We used Kinnikinnick White Sandwich Bread, which worked well. Stick to a gluten-free bread that runs on the dry side. It was delicious and just like I remembered it from my childhood. -- posted by What's Cooking?

Cranberry Applesauce - No Sugar Added

This is a vividly pink, wonderfully tart cranberry applesauce. Makes a great condiment for savory foods such as meat or potato pancakes, and also wonderful when eaten alone. It has no sugar added, thus it is VERY tart (which I love) - If you prefer a sweeter sauce, add 1/2 cup of sugar. I recommend using 1/2 sweet apples (I like Braeburn) and 1/2 tart apples (Granny Smith, for example). -- posted by What's Cooking?

Lemony Green Beans

Every summer, Pop raises green beans and I love them. I'm always on the lookout for other ways to fix them in place of cooking them with bacon until soft, even though that is my favorite. Gotta have something different every once in a while. Lemon goes so well with green beans and this recipe sounded like a wonderful way to use fresh green beans.
Garlic Coconut Mashed Yams (Sweet Potatoes)

This flavorful vegan side dish is ever-so-slightly adapted from a recipe in The Millennium Cookbook. These yams are truly addictive. They are a beautiful bed for a filet of fish, and a perfect complement to Caribbean-inspired dishes such as jerked meat or tempeh. I've even been known to eat the leftovers cold, straight from the refrigerator! This is a savory sweet potato dish, rather than the traditional sweet ones - It emphasizes the flavors of garlic and thyme. -- posted by What's Cooking?

Once again, a fantastic recipe from the Chicago Diner cook book. Is there anything they can't do? I did alter this a bit from the original and found it to have a lot more flavor.
Vegan Green Bean Casserole

This recipe is kind of a mix of ideas I got from several recipes and I love it! I made it for my family for Thanksgiving and they ate the entire dish. This is by far one of the simplest recipes you can find. And it's cheap and easy to make! Definately let this sit for a while after you take it out of the oven. It won't look done, but once it sits and cools, the sauce will thicken up, and it stays hot for a really long time. -- posted by tendollarwine

Vegan Gravy

This recipe is from the Chicago Diner cook book. It's easy, tastes great and the mix makes up to 3 cups at least, so it lasts a long time. I love using this with their Tofu Loaf recipe as well as a brown sauce in Asian dishes, like Tofu Yung or my Pepper Fake recipe which you can find in my profile...just add more tamari to the finished product. The recipe for the spice mix is a bit different cause these are the only ingredients I had on hand. -- posted by tendollarwine

This is my second experiment using the vegan meatloaf generator found here.. http://www.veganlunchbox.com/loaf_studio.html This is a doubled recipe, so if you want to make a smaller batch, just cut this in half and bake it in an 8x8 dish.
Lentil and Wild Rice Loaf

We frequently make this for Thanksgiving or Christmas for the vegetarians in the family. It's very nutritious and yummy and it goes great with the rest of the traditional holiday meal. You can make it ahead of time and then just pop it in the oven to heat up before the meal. Always serve it with the cashew gravy recipe I'm about to post separately. I'm not sure of where this recipe originated, but I got it from my sister years ago. I apologize for the some of the amount guestimates on the broth and spices as it's been a while since I've made it and we never had a real recipe, it's just scribbled on a piece of paper. -- posted by Sandy in California

Vegan Pumpkin Pie and Crust

I got this recipe from vegan.org and I altered the ingredients slightly. I was nervous about the crust because I never work with dough, but my friends said that the crust was actually their favorite part of the pie because it had such a nice, crumbly texture and a delicious, light taste. The filling was awesome. Exactly how I remember "real" pumpkin pie tasting. The freshly ground cinnamon and nutmeg really make the difference, so don't use any pre-ground stuff! -- posted by tendollarwine

Vanilla Cranberry Sauce

Now THIS is worth writing home about, so here I am! I wanted to do something different with my cranberry sauce this year. Enough of the citrus, no shallots for making compote...vanilla! I have a few dried out beans that I've been hoarding! Now that we have a supply of fresh beans, time to use the old - why not drop one in the cranberry sauce? How bad could it be? OMG.....it was divine!!! Vanilla sugar adds extra vanilla flavr but you can certainly use regular sugar. -- posted by Elmotoo

Delicious Vegetarian Gravy

Honestly, this tastes better to me than the real thing. And, it is much better for you with less saturated fat and no cholesterol. The flavor will greatly depend on which broth or bouillon you use, so experiment a bit until you find one you like.

It is great with mashed or roasted potatoes and goes well with a Tofurkey. This also works really well as a stew base--just add the cornstarch at the end when the veggies are cooked.

It is very easy to prepare, and freezes perfectly, so we make huge batches so some is always ready. When you reheat from frozen, either run it through the blender or use a hand blender after thawing to regain a creamy consistency. -- posted by Yobittles

Punkrock Chickpea Gravy

Deliciously AMAZING vegan gravy from Vegan with a Vengeance. Perfect for smothering mashed potatoes. I made this for our Mother's Day meal, and I fell in LOVE with it. They mention in the cookbook that you will be tempted to make this once a week, and I think they are right. There were no vegetarians present at dinner, much less any vegans, but the gravy was well received by everyone!
Carrot and Coriander (Cilantro) Soup

One of the trendiest soups over here in the UK at the moment is carrot and coriander soup. Coriander is the same thing as cilantro only by a different name. I have enjoyed this soup but because of my dietary requirements have avoided it because creamy soups like this so often use a lot of cream. So, I was happy to find this version of the soup in the August 2008 copy of BBC Good Magazine because it doesn't use any dairy at all. I have now tried the recipe and think it is fantastic. It is very rich and creamy tasting without any at all. -- posted by Sarah_Jayne

Olive Oil Mashed Potatoes

With only three ingredients salt, potatoes and extra virgin olive oil, and you are rewarded with a divinely creamy and buttery dish of mashed potatoes. Yukon Gold potatoes have a naturally unique buttery flavor with no butter added! Ordinary salt is one of the ingredients here. Use any salt you like, but (imo) great salt will give even more great flavor! I can't wait to try this with different varieties of salt to discover the differences. I think this recipe leaves lots of room for experimenting with flavored or infused extra virgin olive oil and various salts. Experimenting is half the fun! Let me know what you use please. I am so interested! I do not know much about Kosher or Jewish food and cooking but I think these might even work well there as well.
Vegan Cranberry Sauce With Orange and Cinnamon

It's best to make this the day before you plan on serving it. I made it fresh last year for Thanksgiving and it was too tart and just awful. But when I tried it the following day, it was the best cranberry sauce I've ever had. Just heat briefly over the stove before serving (after the day of resting!). This also makes an amazing spread for toast or bagels. -- posted by tendollarwine

A savory wild rice and apple stuffing fills these golden squash rings. Delicata are oblong green and yellow striped squash; sliced crosswise they make beautiful scalloped rings, or use any other winter squash. You can also make the wild rice stuffing without the squash for a side dish. Serve with Shiitake Mushroom Gravy.

Penzey's Tomato Basil Green Beans

This recipe is from a Penzey's catalog from several years ago. It is also very good with dill instead of basil, and I plan to try with oregano next time. Be sure to use plum (roma) tomatoes which are meatier than other types. Also, the cooking times are for whole green beans; I buy a big bag of frozen whole tender young beans at a warehouse club or Trader Joes.

I have reduced the amount of oil to 1/4 cup from 1/2 as originally written, based on a review and my own preference also. -- posted by appleydapply

This is a light recipe from Martha Stewart which I have changed slightly. The addition of the cherries, pears and fruit juice adds natural sweetness which allows you to decrease the amount of sugar from the traditional cranberry sauce recipes.
This is a wonderful recipe. its a kid and adult pleaser. Crispy on the outside and nice and soft on the inside. Every one at the table fights over these when i make them.
I've had sweet potatoes fries at restaurants several times. but i tried to come up with a baked/roasted version... reduce the fat increase the taste.
I like to cut up the potatoes length wise... so my fries are nice and long. also i like them to be about a 1/3 of an inch thick. -- posted by Maya's Mama

I found this recipe on VegWeb: So far I have found no complaints!
"This is meant to be a vegan version of the traditional green bean casserole served at holidays, etc., for those of you who loved it and were sad to not have it at the holidays once you went vegan. Many of my non-veggie friends like this better than traditional green bean casserole because it has more veggies and more herbs and spices." - from the website

Roasted Acorn Squash With Wild Rice Stuffing

Acorn squash is a satisfying side when roasted and topped with a pat of butter and a drizzle of maple syrup, but filled with a hearty stuffing of wild rice, pecans, and cranberries, it’s a meal in itself. Loaded with comforting flavors, this dish brings fall home, but it can be made any time of year.
The wild rice mixture can be made up to 2 days ahead; keep it refrigerated in an airtight container.
You can make the stuffing up to 6 hours ahead; keep it covered in the refrigerator.

Flaky Pie Crust

This recipe makes two (2) pie crusts, and freezes VERY well. This recipe can be made by hand, or using a food processor. (I make mine by hand since I do not own one). Please make sure not to overprocess the ingredients, as this will result in a very tough crust, not tender and flaky as it should be! The key to a flaky crust is to have all the ingredients COLD when you start. I like to put everything (flour and all) in the freezer for up to 30 minutes before I start. You may also use 1 cup of vegetable shortning, or 1 cup of non-dairy butter, instead of 1/2 cup of each. I prefer using a mix of the two! -- posted by Kozmic Blues

Packed with spicy goodness and flavors, this is healthy and indulgent, especially with cream cheeze frosting(see below)!
Cranberry Relish or Compote

I'm sure there are infinte varieties of cranberry relish on our Thanksgiving and Christmas tables. With this one I wanted to evoke a traditional New England flavor. Fortunately I can buy cranberries fresh from Cape Cod. If you freeze cranberries upon purchase they will work fine. Raspberries were added for sweetness, without overpowering the cranberry, but you could substitue other berries. The flavor of this relish is intense so adjust the sugar to your taste. -- posted by yankeeecho
