Sour Cream Burgers

Dug this one out of the old recipe file to make for lunch today and decided it was well worth sharing...I believe I originally found the recipe in a local newspaper's now defunct cooking column...I've also tried to make it more heart healthy by using ground turkey breast, a light sour cream and a lower sodium worcestershire...One proviso: Prepare the mixture 24 hours in advance and chill thoroughly in the refrigerator or the burgers may fall apart during the cooking process... -- posted by Cookin'withGas

Peppy Burgers

I love making burgers on my George Foreman Grill, so I'm always looking for new burger recipes...After using many, I found there were certain ingredients that I always tended to gravitate towards...As a result, I decided to create a new recipe geared towards those things I liked the most in my burgers...I've also tried to make it a bit more heart healthy by using ground turkey...Serve with oven fries and a tossed salad for a complete meal! -- posted by Cookin'withGas

Cran-Rosemary Grilled Chicken Thighs

I had a bottle of Mike's Hard Cranberry Lemonade that got opened but didn't get drunk so I got creative with this marinade. The tang of the cranberry complemented the rosemary beautifully and the sugar in the drink made for a beautiful color on the skin. The slow cooking will draw a lot of grease out of the meat and the skin -- leaving you with meat that is juicy without being fatty. Prep time does not include marinating time. -- posted by 3KillerBs

A Kiwi Warrior Burger for the Barbie - Barbecue!

I have no idea why this burger recipe from New Zealand is called a warrior burger - maybe because you need to have a "fighting" appetite to eat this amazing burger or have an asbestos tongue?! A meal and a half in a bun - and with MORE than a bit of a kick as well!
Spiced Potatoes on the Grill

Need a side for the BBQ ribs on a day too hot to cook in the kitchen? A little olive oil makes these heart-friendly potatoes brown up like french fries. They are flavorful rather than hot but if you like hot add some red pepper flakes. Consider serving a little sour cream on the side for dipping. Note: seasoning mix makes enough for 2 batches. The proportions worked out better for the larger batch. -- posted by 3KillerBs

Corn on the Cob With Horseradish-Dijon Butter Sauce

Mmmmm! From a flyer included with our organic produce delivery. I was hoping to test this recipe substituting fresh horseradish for jarred but for some unknown reason couldn't find any at the store. Prepare the corn on the cob using your favorite method. For this particular recipe I cooked the corn in a large pot of water, but grilling the cobs would work wonderfully, I have no doubt. -- posted by Cookgirl

My Favorite Burgers

I finally figured out how I like my burgers best. Give 'em a try and see if you like them this way, too. Tip: If you make the mixture ahead of time, make sure to put the burgers on the counter for about 10 minutes so you're not putting them on the grill ice cold. They cook better that way. -- posted by KissKiss

Grilled Taters

I can't think of a better way to make potatoes. These are buttery, a little crisp, and perfect with My Favorite Burgers (also on Zaar). They require Paula Deen's House Seasoning (I have provided the recipe below). You will have way more seasoning than you need for this recipe, but it's great to keep in a shaker next to your stove (it's a perfect seasoning on everything!). -- posted by KissKiss

Bastille Burger - Bearnaise, Blue Cheese and Red Onion Burgers

A home-made burger with three of my favourite French elements included in the ingredients, Bearnaise sauce, French blue cheese and sliced red onions! I made these for a quick lunch on Bastille Day - 14th July, hence the name! I used our excellent local Charolaise beef, a salt marsh beef which is superb, with a good fat to muscle ratio, and a slight tang of herbs and salt. If you want to cut down on the carbs, just have this burger "Naked" without the bun! Likewise for low fat - omit the Bearnaise sauce and chop some fresh tarragon up and mix it with the minced/ground beef. I am not a great lover of commercial burgers, but I do like home-made burgers - and these are now a firm favourite with all my family & friends! This recipe is for 2 people - just increase the ingredients for more people. -- posted by French Tart

Fajita Steak Marinade

This one is the goods. I marinate my fajita beef steaks before grilling them whole over charcoal and then I slice them after they achieve medium rare doneness. This marinade provides the Tex-Mex flavor that you're seeking when making fajitas. I use both sirloin steaks (cut 2" thick) and flatiron steak for fajitas -- both are really tender and the marinade makes them even moreso. If you don't have rice vinegar, just use either plain white vinegar or white wine vinegar. This recipe will generate enough marinade for 4-5 pounds of meat. I hope you enjoy the flavor as much as we do! -- posted by Bone Man

Rocky Mount Hot, Sweet, and Spicy BBQ Chicken Sandwiches

This is a wonderful recipe made in parts of eastern NC where Bird lived in the 90's. BBQ Chicken leg quarters (or legs and thighs) grilled outdoors with a kick of crushed red pepper and vinegar that is eaten between two slices of white bread, eating around the bone to keep your fingers clean, and no worries about biting into a napkin! Be sure to grill this outdoors as the amount of vinegar in the air can be a choking experience. -- posted by 2Bleu

Beer Marinated Chuck Steak for the Grill

The Women's Day Encyclopedia of Cookery was my main resource as a teen learning to cook. This marinade from that book was my Dad's favorite marinade for steak -- almost always bone-in chuck steak. Every time I use it I think of Dad and remember how he taught me to grill on the little hibatchi that perched on the side of the useless, brick fireplace some previous owner of the house had built. Come taste a memory with me. -- posted by 3KillerBs

Rosemary Lemon Twin Roast Chickens for the Grill

I've been without an oven for a year and a half and I'm getting pretty good at roasting meats in the propane grill. Try something different for your next cookout or camping trip by roasting a pair of chickens this simple way. It takes less attention than grilling and you don't get any grease flares. This will work best on a grill that has 3 burners running front to back so that you can turn on the side burners and leave the center unlit. Note: Prep time does not include marinating time. -- posted by 3KillerBs

Owens Sausage and Ground Beef Backyard Burgers

This recipe was included in an ad in my local paper. It sounded so good that we had to try it. We used Owens rolled sausage since I had the coupon. It was great, but I'm sure other sausage brands would work too! The recipe originally said to make 8 patties, but they ended up so small that I decided next time I will make 6 larger patties. We used regular flavored sausage, but my husband and I love spicy food, so I can't wait to try this recipe using hot flavored sausage. Be sure to have all your favorite burger toppings on hand like lettuce, tomatoes, pickles, etc.**Update - made these patties for the 4th of July and used 96/4 extra lean hamburger since the sausage is so "fatty". Doubled the recipe and made 12 patties. They came out just the right size. Huge hit with all the guests! Many tried to guess the "secret ingredient" and were amazed when I told them it was breakfast sausage mixed with the beef. -- posted by Texas Aggie Mom

Caribbean Spiced Corn-On-The-Cob

A spicy summer time treat that adds a different approach to your average corn on the cob. I found this recipe in "Woman's World" Magazine with a little of my own changes, and use it almost every time I make corn. Very adjustable, quick & easy to make. Great for picnics or BBQ's, and gives you that "your-on-vacation" feeling. If you know someone who doesn't like corn-on-the-cob, this just might make a believer out of them. Enjoy! =^_^=
P.S. This is even good drizzled over microwaved frozen or canned corn if you don't have time to cook cobs. -- posted by SailorVive

Spiced Lamb Kebabs

Adapted from a recipe in Michelle Trute's 'cooking with conscience'. All the recipes in this book are low fat, low-moderate GI and easily prepared. This recipe is moderate GI and low in fat. She includes no salt in this recipe but I have included sea salt below as optional as I know for many this is an essential ingredient. If rosemary branches are unavailable, use wooden skewers soaked in water and add rosemary to the lamb just before threading it onto the skewers. I have also included sage as I love rosemary and sage together. Michelle Trute recommends marjoram, mint, rosemary and sage with lamb and recommends using herbs rather than salt. I have also posted Michelle Trute's Recipe #349024. 800g = just under 26 ounces. -- posted by bluemoon downunder

Country Caramel Apples Around the Campfire

Here's a recipe that is sure to draw some oohs and aahs from your favorite diners! An easy-to-make, simple way to end the day while camping or on the back deck. The hardest part is coring the apples. Try stuffing the core with other melty sweet treats: chocolate caramels, cinnamon Red Hots, Lemon Drops, Gummy Bears. Oooohh...! The original recipe came from the Lutheran Girl Pioneer Camping cookbook. COOKING TIME DOES NOT INCLUDE getting the fire or grill coals going. This is a good recipe to put on as the fire is dying down---or AFTER you've pulled the meat off the grill--while you're eating supper. These will cook all by themselves while you're eating! -- posted by Debber

Campfire S'mores (Aka Robinson Crusoes)

If you like regular S'mores, you're going to LOVE these! Start with chocolate graham crackers, smear on some creamy peanut butter, add the chocolate candy pieces, the melty marshmallow; then top with the other square of graham cracker. THE TRICK to making these perfectly is being patient while the marshmallow is roasting....don't stick it into the fire, twirl it slowly over the warmth, so that it starts to swell up. That's your signal that the inside is getting all soft and smooshy--just right for perfect s'mores. I first made these back in the early 90's when taking 10 girls on a church youth camp-out in eastern Washington State. We cooked all our meals over the open-fire (no campstove!!) including chocolate chip pancakes MADE FROM SCRATCH, pioneer hotdogs (yum, yum!) and caramel apples roasted in the coals. I guess I need to post those recipes too. After all...it's summer-time and people are camping!!! -- posted by Debber

Thanks to the wonderful cooks at Taste of Home (Aug/Sep '09) for another great one! If you'd like your sammie to be a bit heartier, add another egg (2 per person then). How easy can this be? :-) -- posted by Debber

Summer Camp Gorp

I used to work in the kitchen of a summer camp back in the day and we would always make this recipe for the kids at snack time and set some out for breakfast. During the breakfast hours I would see some kids pour milk over it and have it as a kind of makeshift cereal. Of course we would make this in tremendous quantities so I've had to do some math and lessen the ingredient amounts needed. So just a quick tip: if you decide to double this recipe, please use 3 large eggs instead of 4 small eggs. Also keep an eye on the oats as they're cooking, as all ovens are different, so they don't burn. -- posted by NapalmFairy
