Lightly grilled ham on this burger is a nice addition.  This is a favorite to grill because it is simple, quick and satisfying.  I purchased a 6oz burger press for $6 and found that my burgers don't fall apart anymore and are perfect size everytime, making it quick and easy and delicious!  TIP: let your grill do the work, keep the lid closed while cooking and don't mess with the burgers while their cooking unless it's time to flip or remove. 			<description>Another fantastic Gary Rhodes recipe. Light and delicious! Perfect for a starter course but fantastic for a summer lunch as well. I have made this several times when cherry tomato season comes around. I have also frozen this with great results. NOTE: A basic passata is a sauce made of tomatoes, basil, water, preservative, however some types have more herbs and spices in them, so make sure you like what is in your passata as it will be a main flavour in your soup. You can substitute tomato sauce (not ketchup!) or canned tomatoes (put through the food processor). Sometimes I dont have passata on hand so I put a can of chopped tomatoes in the food processor (enough to equal the recipe equivalent) and add a bit of basil to it to taste. I don't add water because the canned tomatoes are already in liquid. 			<description>Check out this trick - a whole, unpeeled tomato goes in the pot, and a tasty, seed-free, peel-free tomato sauce comes out!  Okay, well, maybe it's not really magic, but it's a great trick to save you from having to peel, chop, and de-seed all those tomatoes (which is the reason I almost never made sauce from my garden tomatoes until now).

We'll take care of the peels and seeds with a blender/food processor and a fine mesh strainer.  Yes, a couple of extra things to clean, but it's still faster than all that peeling and chopping!  Also, because the peels are cooked in the sauce, you preserve more of the nutrients in them.

This is a highly customizable recipe (really more a framework than anything else) - make it smooth or chunky, with meat or vegetarian, regular or low-sodium, or even use it to hide a few extra veggies (a tip for you parents of picky children - you can make them completely undetectable).  The quantities are inexact because there's so much variation in the size, taste and texture of fresh tomatoes, and anything else you add will change the flavor.  So you really have to adjust the seasonings and other ingredients to compensate.  This is part of the art of making tomato sauce, but don't be intimidated! You could make more than one serving, and serve with lemonade and ice in a punch bowl for a party if desired.
I haven't made this yet, as I don't have a juicer, but if I ever get one, this will be the first juice that I make.

I included the ketchup, but you can use sweet Ecuadorian tomato sauce as traditional or skip it altogether as I prefer!  Some also like it on the side and let the guests choose.  You can also place a dollop on the side of the martini glass as some restaurants do.

You can flash cook the shrimp if preferred by placing in boiling water for 2 minutes before peeling and deveining them.  You can make this with only an hour or so of &amp;quot;cooking&amp;quot; in the citrus juices, as you prefer.

Also...I use 2-3 jalapenos and occasionally habenero for extra pep!

			<description>While this recipe calls for summer vegetables, my brother and SIL prepared it for Christmas dinner 2009 and I loved it.  Good as a vegetarian main dish or a side.  It's not quite the same as other vegetable gratins already on RecipeZaar.  Personally, I would make this with less olive oil, the amount of which I specified in the ingredients, but you can use the original amount if you prefer (just convert teaspoons to tablespoons).  This can also be made ahead after assembly and before baking.  Just pre-heat the oven.  Try to buy the zucchini and squash of roughly the same diameter.  I might serve this with bread to soak up the juices.  To make this vegan, omit the parmesan cheese.
