The Raffles Hotel Original Singapore Gin Sling Cocktail

The Singapore Sling is one of those wonderful drinks that we probably have all heard of, but perhaps have never had. And because this recipe is often incorrectly recorded in most recipe books, even if you've think you've had it, you probably haven't.

One of the key, and often overlooked ingredients in this drink is Benedictine. While the resulting flavour is not overly predominate, it does add a certain taste profile that would be totally missing without this secret ingredient.

None dispute that the Singapore Sling was originally created by Mr. Ngiam Tong Boon for the Raffles Hotel in Singapore. However that is where the agreements end. The exact date is in question, with some people claiming it was in 1915, some 1913, while the hotel itself claims that it was created sometime prior to 1910. There is also plenty of disagreement as to how closely the current version of this drink that is served at Raffles is to what was originally served. Apparently the original recipe was lost and forgotten sometime in the 1930's, and the drink that they currently serve at the hotel's Long Bar (see recipe below) is based on memories of former bartenders, and some written notes that they were able to discover. Whatever the truth may be, this "iconic" drink is still enjoyed today, as much as it was back in the early 20th century! Maybe, the only way to really appreciate this cocktail, is to sip it slowly whilst sitting in a rattan chair, under the ceiling fans in the Long Bar at Raffles Hotel! -- posted by French Tart

The Original Shannon Airport Irish Coffee

The original recipe as per Joseph Sheridan should be: "Cream, rich as an Irish brogue; Coffee, strong as a friendly hand; Sugar, sweet as the tongue of a rogue; Whiskey, smooth as the wit of the land." An After Dinner classic and with a rich history - use good Irish Whiskey, freshly brewed coffee and pouring cream (Double cream) - NOT whipped cream for this authentic and delectable boozy coffee!

History: From 1939 to 1945 Joseph Sheridan was the head Chef of a catering company based at the Shannon airport (20 miles north of Limerick , Ireland ). Joseph Sheridan was taxed with trying to find a suitable drink for passengers who had traveled for eighteen hours by seaplane and then had to travel by boat to the terminal. Hot coffee and tea was obviously not enough to take the chill out of the passengers so Joseph began to offer an alternative. His mix of Irish whiskey and coffee became known as Irish Coffee, and Joseph had secured his place in drink history

To this day if you travel through Shannon Airport you will find the “Sheridan Bar” in the departures lounge, and a plaque that has been placed there in honour of Joseph’s great warm libation. (and yes, they do serve his original Irish Coffee recipe.) Sláinte! -- posted by French Tart

Black Velvet - Irish Guinness and Champagne Cocktail

Add some sparkle to your Guinness this St Patrick's Day with a splash of Champagne.........this is the perfect way to enjoy your Guinness with a touch of sophistication! This cocktail is also well known in England, Scotland and Wales, as well as Ireland of course! It's easy to make and slips down just like velvet, as the name suggests.
Tahitian Mojitos for Two

Til today I had never had a mojito, but I had saved many recipes for them into my books thinking they looked delicious! After looking through the ingredients for each I realized I didn't quite have all the ingredients for any certain one so decided rather than search all night for one to use what I had on hand I would create my own. So this is the result and it turned out amazing! The name came from the simple fact that I used a very special bottle of coconut vanilla rum we purchased on our honeymoon in Tahiti. I am sure any coconut rum would suffice and maybe you can add a bit of vanilla as well to get the same flavor. Since I don't have a lot to compare it to, I will let you be the judge..... -- posted by CulinaryExplorer

Chasen's Shirley Temple Cocktail

In it's 59 years as a Hollywood celebrity hangout, Chasen's had ample time to develop recipes for special clients. However, Shirly Temple was one of only two people who had a recipe from Chasen's named for her. The story behind the drink is that Shirley, at the height of her fame as a child star, came to the restaurant with her parents, who were having a before-dinner cocktail. Shirley wanted one of her own, so the bartender concocted this one for her. Non-alcholic cocktails have been named "Shirly Temples" ever since.
This drink is served in a highball glass with ice, and garnished to look like a cocktail; and served with a straw. Other sodas can be substituted, such as a lemon-lime soda. Information from the archives of the Los Angeles Library. -- posted by lynnski / LA

Galliano Twist

After searching high and low for ways to drink my Galliano without running out to the store (unsuccessfully), I decided to get creative. I like using the Freshies brand sweet and sour anyway, but because it has Lemon juice, and Orange juice, I thought it would complement the Galliano well. Not to mention that it's all natural, no preservatives, etc. I imagine that Stirings Lemon Drop would be good, since it is also all natural, but Freshies is lower in sugar, and less than half the price. And even though 1 drink contains so little of the mix, I think that to keep the digestif properties for which Galliano is so popular, keeping natural/quality ingredients is important. -- posted by Karetha

A crisp, Spring and Summer drink using Cachaca (a Brazilian style liquor similar to rum made with sugar cane - yummy!) from RR. **Cachaça is often said to differ from rum in that it is made from sugarcane juice while rum is made from either molasses or sugarcane juice then aged in oak barrels.** Updated per reviewer response. :) Thank you! -- posted by Mommy Diva

Authentic Cypriot Taverna Brandy Sour Cocktail

These were without doubt the most popular drink that we served in the restaurant I ran in Cyprus! They are known as the National Drink of Cyprus, and are delicious as well as being very refreshing. We used to make these with the local Cypriot brandy, which is not as strong as normal French brandy or cognac and has a delectable caramel taste to it. We also used the local angostura bitters, known as "Cock Drops", which as you can imagine, brought raised eyebrows and howls of laughter from overseas guests and tourists! A little history behind the cocktail: The Cypriot Brandy Sour style was developed following the introduction of the first blended brandy made on Cyprus, by the Haggipavlu family, in the early 1930s. The cocktail was developed at the Forest Park Hotel, in the hill-resort of Plátres in the beautiful Troodos Mountain range, for the young King Farouk of Egypt, who often stayed at the hotel during his frequent visits to the island. The Brandy Sour was introduced as an alcoholic substitute for iced tea, as a way of disguising the Muslim monarch's preference for Western-style cocktails. The drink subsequently spread to other bars and hotels in the fasionable Platres area, before making its way to the coastal resorts of Limassol, Paphos and Kyrenia, and the capital Nicosia. With increasing numbers of tourists visiting the island in the last thirty years, and the large garrison of British servicemen stationed on the island, the Cypriot Brandy Sour is now known around the world. This is how we used to make them in our restaurant - a trade secet shared!! -- posted by French Tart

Minty Fresh French Aperitif and Appetiser Charentais Melon Bowls

An appetiser and aperitif all in one sunny melon bowl - I use the local Pineau des Charentes to fill up these charentais melon starters, but white port, fino sherry or any fortified wine would be just as good. Charentais melons are grown mainly in SW France and Spain and have a smooth pale green to creamy yellow skin. The very juicy flesh is deep orange in colour and it is one of the best dessert melons; they are also great in fruit salads, as well as being used as a refreshing starter course - as in this recipe. Preparation time includes the 4 hours to chill prior to serving them. If you cannot get fresh mint sprigs - use any attractive, edible leaves or herbs - maybe even a flower. -- posted by French Tart

Vanilla Sea Cocktail

Based on the sensuous flavors of vanilla, with a light ginger twist and citrus notes, “Vanilla Sea” was specially created by Damian Sim of Provocachic™ for the Gilded Fork to pair with our ocean gem, the lobster. The aroma of the sage leaves teases the rich flavors in this cocktail, and overall, the bubbly cocktail offers a light yet provocative experience.
Cranberry Cornucopia Sangria

Adapted from "Peterson's Holiday Helper," by Valerie Peterson (Clarkson Potter, 2008). This is a blend of all the favorite holiday flavors, not really a true sangria. You can use a sparkling cider or grape juice, or even a champagne if you'd like to. Cherries are an excellent addition to this drink as well. This is best left to sit for overnight to let the flavors blend well. -- posted by Jess4Freedom

In the bottom right corner of the pg, there was an ad from HGTV that said *Dream Home 2009 is open* so I went to look at it. While taking their virtual tour of the home & on Pg 10 of 20, an ad appeared in the top right corner that said *HOLIDAY COCKTAILS* (10 Recipes for Merry Drinks). This 1 captured so much of my attention that I did not even bother to look at the rest.
Pomegranate Mimosa (Mocktail)

Perfect for Valentine's Day or any special occasion, this very simple yet elegant non-alcoholic cocktail comes courtesy of the folks at Pom Wonderful. The amount of the cider is approximate -- the original recipe simply calls for "1 glass sparkling cider", which I've estimated at 6 ounces so as to better fit into a standard champagne flute. Feel free to adjust to your tastes. Using a champagne flute will allow the beauty of the drink to come through, with the dark red of the pomegranate juice filling the stem portion as the cider sparkles above. -- posted by Lynne the Pirate Queen

Ruby Relaxer - Ruby Tuesday Copycat

This light and fruity drink is perfect for sipping on a summer afternoon. An undeniable girly drink (not to say that guys should not enjoy it as well), it has no taste of alcohol, nor the cloying aftertaste that some overly sweet drinks have. This recipe can easily be multiplied to make a crowd-pleasing punch for your next shower, party, brunch, etc. The brands listed are those that Ruby Tuesday lists on their drink menu (how nice of them to tell us what is in their drink so that we can come home and make it ourselves!) -- posted by Oenophilly

Tropical Passion Rum Punch

This recipe came about one day when we had an interesting juice in the house, a great thirst and a desire for something a little different.
This is definitely not for the kids.
The name came from the location...we live in Jamaica (Tropical), and the colour...sort of a purple which comes from the pink of the Juice and the blue in the curacao (Purple passion) and the possible outcome....
This is a no fooling around Rum Punch..approach with caution and enjoy.

Please note: I used Guava-Pineapple Juice which has a pink colour, but any combination of tropical juices Mango with Pineapple etc. will work. The pineapple seems to be key. I use Appleton's Rum because it is Jamaican and great Rum. -- posted by Donalda
