Sicilian Spinach Sauce

One of our favorite vegan pasta sauces (also good over baked potatoes, leftover lentils, cooked grains, etc); from the Lean, Lucious, and Meatless cookbook. I usually add flax (sometimes ground, sometimes whole) for extra nutrition that goes unseen. Especially good when fresh herbs and spinach are available in season (remember to increase amt of herbs if using fresh). -- posted by winkki

Cold Lychee, Mango Soup Garnished With Mint

Thanks to my Sister Theresa. I came up with this recipe. I made this as a dressing for a salad that was so good I just ate it cold. Great for those hot summer days when you don't want to cook. Just blend and drink! The fruit is oval shapped, heart-shaped or nearly round, 1 to 1-1/2 inches in length. The edible portion is white, translucent, firm and juicy. The flavor is sweet, fragrant and delicious. -- posted by ~Rita~

Pistou Sauce or French Pesto ( Vegan )

Very soft decadent, yet low-fat cupcakes. These do not contain egg and can easily be made vegan. Un-iced, they are still extremely good cake-like muffins. NOTE: these cupcakes had a VERY mild citrus flavour. I have since added orange zest to the recipe for a more prevalent citrusy flavour. -- posted by LUv 2 BaKE

Blackberry Brandy

Last summer was a wonderful year for blackberries (probably due to the rainy summer!) and the brambles at my local secret location produced a bumper crop. I found this recipe when doing a general trawl of the internet for blackberry recipes; it was on the BBC Food website (shown as a variation under a recipe for Sloe Gin!). As we had picked so many blackberries I thought I’d give blackberry brandy a go. I was so pleased that I did as the finished result was absolutely wonderful. There are a few recipes posted on Recipezaar that use blackberry brandy, so you can enjoy this brandy in one of these or simply drink it on its own (slowly and savouring every drop!), as we do.

Although I used fresh blackberries, I reckon that frozen ones will work just as well. Cooking time is steeping time! -- posted by Mrs B

Judgment Day Cocktail

I invented this cocktail for people who generally do not drink alcoholic beverages, except on special occasions. It offers a bright, pleasant, and fruity (orange) flavor but without the alcohol "bite." But, my friends, the G-forces are certainly hiding out in there, so BEWARE! Three of these and you'll get to thinking that YOU'RE in charge of Judgment Day!
Actually, I named this unique cocktail in honor of the spectacular 1969 GTO which got dubbed as "The Judge". This early and beautiful muscle-car was only offered in the brilliant Carousel Red (which was actually bright orange) for the lion's share of it's first season and, its 400 cubic inch Ram Air engine made it a real Dreadnought of its day. And I said all that just to say this: The Judgment Day Cocktail thus shares many characteristics with its namesake, The Judge!
I think that you'll love it! -- posted by Bone Man

Perfect as a party drink, mock champagne is also nice around the holidays for those not wishing to imbibe too much alcohol. Use diet ginger ale to cut calories without cutting flavor. Make sure everything is chilled before you start. For a festive look, add a maraschino cherry to each glass.

Roasted French Vegetables in Hot Balsamic and Olive Oil Dressing

A fantastic medley of French vegetables - Fennel Bulb, Onions, Garlic, Red Peppers, Aubergines & Tomatoes; oven roasted in a Balsamic vinegar, Caper & Olive oil dressing! Simple yet impressive and adds a real splash of colour to any meal. I make loads of this, usually with the vegetables listed, but you can add anything you like which is in season, such as Courgettes; It freezes very well and is used in numerous recipes of mine, such as Vegetarian Lasagne, Vegetarian Shepherds Pie, Pasta Bakes, Hot Vegetable Salad and also a great recipe which I will post, called French Roast Chicken & Vegetables in Wine! Great ALL year around, the only proviso is what vegetables you have in season.......however, the Fennel Bulb & Capers really adds that oooh la la!!! -- posted by French Tart

Isaiah's Vegetarian Paella [ Kosher ]

This kosher, vegan paella recipe owes its inspiration to Studentchef's "Recipe #175908" (Thank you, Studentchef!) This is a variation of that recipe that contains more traditional paella flavors and is made in such a way that creates a "socarrat", the crusty layer of browned, caramelized rice at the bottom of the pan which adds a certain je ne sais quois to paella. The wider your pan is, the thinner the layer of rice will be and the more flavorful, chewy socarrat you will be able to create. You can also try replacing some of the broth with a splash of white wine, and using marinated artichoke hearts in addition to the other vegetables. -- posted by What's Cooking?

Olive Oil and Balsamic Bread Dip

A distant but lasting memory popped into my brain of a meal I had at a restaurant years ago-after hours. The owner had just returned from Italy and brought back a bottle of private reserve olive oil. The following "recipe" was how the dip was presented. This was my first time tasting this glorious, much celebrated combination and I've been hooked ever since. Your assignment: find the best Italian bread, olive oil and balsamic available. Whatever you do, NO dried Italian herbs; no "lite" olive oil are allowed. The only thing I could possibly think of that would make this sublime is to float a few fresh basil leaf ribbons on top....but that all depends on what you plan to serve with this appetizer. A bottle of good Italian wine would bring it all together nicely, rhetorically speaking. -- posted by Cookgirl

Warm Beet Juice Vinaigrette

The bright colour of the beets makes for a beautiful presentation. You can create a design on the plate and then place the food on top of that. -- posted by blucoat

Cranberry Cornucopia Sangria

Adapted from "Peterson's Holiday Helper," by Valerie Peterson (Clarkson Potter, 2008). This is a blend of all the favorite holiday flavors, not really a true sangria. You can use a sparkling cider or grape juice, or even a champagne if you'd like to. Cherries are an excellent addition to this drink as well. This is best left to sit for overnight to let the flavors blend well. -- posted by Jess4Freedom

Coconut Lemongrass Vegetable Ecstasy Soup

Seriously, this Thai-style soup inspires your consumers to vocal joy. I made it for my parents, husband, sister, brother-in-law and their kids. Although my unadventurous dad’s palate could do without, the remainder (none vegan) LOVED it and moaned happily, reminiscing about the restaurants where they’d had similar soups. Have also made for non-vegan friends, to rave reviews. You are, more than likely, going to need to go to an Asian market for the lemongrass, veggie fish sauce, curry and tamarind pastes. If you’ve never been, just take your time getting acquainted with the store, and ask for help if you can’t find these things. While you’re there, you might as well get the basil (Asian-style is different & more potent than Italian-style), coconut milk, soy sauce, ginger and dry shitakes: you’ll have more choices and likely better prices than your standard grocer. And get some Sriracha hot sauce too. (Plastic bottle, bright orange sauce, green top.) -- posted by Lindsaybean

Choc Cherry Christmas Puddings (Vegan, Wheat Free)

You will not find a yummier chocolate dessert let alone one that is vegan and wheat free with no added fat or oil. I sell these to a local health food store. They are magnificient straight out the oven and also reheated for 20sec in the microwave once cooled. Alternatively they double as a cold brownie type treat which is equally delicious. The result of this recipe depends highly on using a good quality dark chocolate. I reccommend a 70% cocoa blend and chop it by hand or a food processor. -- posted by canthelpmyself

Whipped Coconut Cream

This is the perfect topper for waffles, soy ice cream sundaes, cupcakes, desserts, or pretty well anything else that calls for a little something extra! It uses agave nectar or Maple syrup instead of sugar, making it a little less of a sugar shock for some diabetic fols. This is a Vegan whipped cream so good, it will even please the non-vegans at the table.

For this recipe, you will need to create a cold version of a double boiler. Fill a small pot about half way with cold water and ice cubes, and place a bowl on top of the pot ( you may want to do some measuring first, because you do not want the bowl to fall into the pot). This is a great way to make sure the whipped cream stays chilled while you give it a good whip!

Feel free to play with it, add some spices or flavors to it to enhance the flavour of your dish. -- posted by Big Fat Vegan

Ruby Relaxer - Ruby Tuesday Copycat

This light and fruity drink is perfect for sipping on a summer afternoon. An undeniable girly drink (not to say that guys should not enjoy it as well), it has no taste of alcohol, nor the cloying aftertaste that some overly sweet drinks have.
Candle 79's Seitan Piccata

This is the signature dish at Manhattan’s famed vegetarian restaurant Candle 79. It is bright & fresh and perfect for spring! Recipe was printed in "Vegetarian Times" when it won in their 2008 Restaurant Poll for the most requested recipe.
Eggless Semolina Pasta Dough (From Bob's Red Mill)

Will be attempting this tonight. Per the Bob's Red Mill website:This recipe can be made without the unbleached white flour, producing a very good pasta, but it is harder to work with. To create an eggless pasta with any type of flour, substitute about 2/3 cup water for every two eggs.

Personal note: the olive oil in this makes it more workable for filled pastas than would be a fat-free dough. -- posted by ZoeB
