Another composite recipe sewn together of recipes from my grandmother, mother, celebrity chefs, dear friends, and random dips into the online well. Finally years of baked failures and "pretty good" recipes has come together into a Cheesy Mac that can only be described as "Magnificent." -- posted by AlmightyMooX

Family Favorite Beef Goulash (No Tomato)

This is what my French Canadian Mom used to call Goulash, no tomato, just lots of beef & veggies in a beef gravy base. My Mom always served it with elbow macaroni, but I like to use egg noodles. Its a simple recipe, but everyone I've ever made this for just loves it! -- posted by bakedapple42

Vegan Spaghetti Casserole

This is a nice change from the typical burger or parmesan topped spaghetti sauce. Easy, tasty and the kids like it! I also like that it is a one dish meal. You can use any small pasta in place of the wheat. I use home canned tomato puree but you can replace that with two 28 ounce cans of tomato sauce and 2 cups of water. Serve on top or on the side with frozen corn that is steamed. -- posted by RussianMama

Fideo

A favorite lunch dish at our house. I started with Debbwl's Recipe #366582 and made some adjustments to suit our tastes. We think it tastes very similar to spaghettios. Stewed tomatoes with sugar is necessary for the slightly sweet taste - if you substitute diced tomatoes, add a bit of sugar. I usually buy fideo in the ethnic food section (it's a popular pasta in Mexico). I have also substituted the tiny ABC pastas, but they take just a bit longer to cook. -- posted by appleydapply

Cheesy Pasta Bake

Didn't have much in the house, and wanted something with pasta, so I invented this. My 15 month old loved it, as did my husband! I made this with rotini as that was all I had on hand, you can use whatever pasta you prefer. You can also add more tomatoes if you like more of a chunky sauce. This could also be made with a Jar of spaghetti sauce, or whatever your favorite sauce is. Can also add in ground beef. -- posted by jkm.11.18.

Mimi's American Chop Suey

When I was little my mom made this recipe a lot. It was during World War II and it was very inexpensive to prepare. I loved it. I guess you would call it a comfort food for me as I was always so happy when I asked, "What's for supper" and Ma answered, "Chop Suey". She never called it "American Chop Suey" except on her recipe card. It was always "Chop Suey". I can't believe that I haven't posted this as I still make it often. I guess I figured it wasn't fancy enough and everyone knew about it, but because I don't want to lose it, I am posting it now. You will have most the ingredients in your pantry and freezer--there are only five plus salt and pepper. -- posted by Mimi in Maine

Marilyn's Mac and Cheese With Tomatoes

This is different from most mac and cheese with tomatoes recipes, as it does not use flour or milk. It's good for potluck suppers. My boyfriend made this with no low-fat adjustments, and it was pretty darn good. I personally would have used low-fat cheese and yogurt instead of sour cream. This was from the October 2009 edition of Country Living magazine. It's really easy to make too. -- posted by Kumquat the Cat's friend

Basic Garlic and Oil Sauce for Perfect Pasta (Rachael Ray)

If you like pasta, you're going to LOVE this recipe from Everyday With Rachael Ray's magazine (Oct '09). She has a "secret ingredient" that adds an unexpected zest to the ordinary ingredients: anchovies. She notes in her recipe that " even if you think you don't like anchovies, you should try this recipe--it'll change your mind." Further, she points out that "once you heat anchovies, they stop tasting like fish and start tasting more like salted nuts." So: try it, you'll like it! If you must, don't say anything to the diners--and ask them if they like it, before you reveal the "secret ingredient." -- posted by Debber

I received this wonderful recipe from my sister. I love that the only preparation needed is to chop up some garlic and herbs. I really like flavor of this soup's base as it is seasoned with garlic, herbs, tomatoes and chicken. This is a great meal to make when time is short. Lastly, I do not care for red peppers. In most recipes, I won't include them. Thankfully I tried this with the red peppers included, and I can't imagine this soup without them. -- posted by Leilani

Easy Baked Ziti

This must be easy, since I make it almost every week. I replace regular pasta, with whole grain, such as Tinkiyada Brown Rice pasta, or Barilla plus. I used to add spinach for added nutrition, but hubby complained about having too much fiber in one dish, so I leave it out. This dish freezes very nicely, and is great for a repeat performance the following week. -- posted by SandyBear

If you love calamari, you will LOVE this one! Light, flavorful and super delicious! I sub 1/2 and 1/2 for the cream and still love it as much! The original recipe was for 1/2 pound of pasta but I increase the pasta to 1 pound without increasing the other ingredients because my family doesn't like things as "saucy".
Momma Pauline's Baked Mac and Cheese

My mom used to make this all the time for us growing up. The simplicity of the recipe compared to the end product results in pure comfort food.
Shrimp Cacciatore

If you are looking for a KILLER pasta dish, this is the one. This was my mother's signature dish when I was growing up. It is like something you would get in a Italian fine dining restaurant. Since I have adopted my husband's family traditions for Christmas Eve of doing seafood and no meat, it is our traditional Christmas Eve recipe. I hope you enjoy it. It is also delicious as Chicken Cacciatore or if you just use the vegetables. It seems like a long recipe, but it is actually very, very easy, especially if you make the sauce base ahead of time. The tomato sauce base is delicious on its own, so I make a huge batch and keep it frozen in the freezer to use over pasta in other preparations. -- posted by LizP

The Realtor's Shrimp Scampi W/Spaghetti

This will blow you away. The first time you serve this, you'll be ok because they don't know how great it's going to be. The second time you serve this, you better put it on the table and get out of the way FAST cause they are going to knock you down trying to get to it. It's a recipe that I have developed through years of making it over and over and over. This is the best version I have been able to create. NOTE: This recipe is to be used with 1/2 pound of spaghetti. If you are using 1lb of spaghetti, double the recipe because there won't be enough sauce for a full pound. If you are doubling it, don't double the lemon juice or it'll be too tart, just bump it up to 3 Tbsp. and only bump the lemon pepper up to 3/4 tsp or it will be too salty for some people.
This is just good 'ol mac and cheese- rich, creamy and satisfying.
Snobahr's Baked Mac 'n Cheese

My family adores this, and it reheats quite nicely. This is *NOT* a low-fat recipe. I use cream when I have it on-hand, or a combination of cream and milk. I use whatever cheese I have on-hand, or I will pick up blocks of cheddar and/or Monterey jack, basically anything that will melt nicely. I avoid using the pre-shredded cheese, because they have a dusting of flour to keep them from clumping in the bag, and throws off the recipe in use. Tool cleanup gets interesting, too. I also use whatever small pasta I have onhand - macaroni, rotini, shells, etc. -- posted by SnoBahr

Jamie Oliver Mac N Cheese

Jamie: ''Mac 'n' cheese' is a classic American pasta dish - everyone loves it. Sometimes it's done so badly in the convenience area, it's almost become famous for being horrible, but when you do it properly, trust me, it's an absolute killer. Feel free to use any tubular pasta you want. I've made this dish my own by lightening it with sweet tomatoes and given it some crunch with delicious breadcrumbs. Just you wait till you try it!

This dish isn't going to win any prizes in the nutrition department, but you can, and should, balance it with a nice salad. If you only have it once in a while as a special treat it'll do you no harm."

Haven't tried it yet but it sounds so good so posted for safe keeping.. Preperation and cooking time are estimates -- posted by mamaDlicious

My son has become a vegetarian, so we have been eating more meatless meals of late. He loves lasagna, but doesn't care too much for the ricotta/cottage cheese additions, so I came up with my own version. The basil paste I use is Gourmet Garden brand, found in the refrigerator section in the produce department..

Creamy Chicken and Kabocha Squash Shells

Don't be deceived by the lack of added seasonings. It is full of flavor! Adding the squash makes the whole thing rich and smooth, with a color and consistency similar to Kraft Mac'N'Cheese! Delicious! Even my daughters loved it! (3 yrs & 7 mos) I just took the chicken out for my baby girl, mashed it up, and she couldn't have enough!
This recipe makes a whole stock-pot full, and it's super easy to make, so it's a great one to make and freeze the leftovers. I was going to, but it we scarfed it all up in 2 days! -- posted by Chef #1459874

Boxing Day Festive Roast Pumpkin and Cheese Lasagne - Lasagna

Roasted pumpkin and creamy cheese lasagne (lasagna); a Boxing Day special - although I have made this for Christmas Eve too! This is a wonderful addition to the festive vegetarian table, but is ALSO hugely popular with meat eaters. This is my adapted version of Nigella Lawson's pumpkin lasagne; I have changed a few of the methods and added (as well as omitted) a few ingredients! Boxing day is the day after Christmas day, also called St Stephen’s Day – the 26th December; it is a public holiday in the UK and most Commonwealth countries……….generally a turkey curry day, or a turkey-free day, one of the two! Serve this with a large bowl of salad and some crusty bread for mopping up the delicious sauce. -- posted by French Tart

Pierogie Casserole

This is one of the first recipes I learned while away at college. Its a very simple side dish or main course. And great to take for a potluck dinner. This recipe freezes nicely and the leftovers are wonderful the next day. If you want, you can sauté onions in some butter and serve on the side. I would recommend using an 8x8 casserole dish and trimming the lasagna noodles to fit, but you can certainly use a 9x13; just add an extra sheet of lasagna to each layer. Enjoy!! -- posted by coffybean

Cauliflower and Shells With White Cheddar Dill Sauce

There is an amazing website here in Richmond, VA called Black Sheep (MUST GO IF YOU'RE LOCAL!). They currently have seasonal side dish that inspired this copy-cat recipe for my family's Christmas dinner - with no baking necessary. I have pretty exotic taste buds, but my two brothers and father have a diet that consist of tacos, hot wings, pizza, burgers and steak - NO VEGGIES.
