Michael's Fabulous Chocolate Mountain Ice Cream Cake

This is a fabulous cake for children (and adults) of all ages. I made it for my brother's 21st birthday and he loved it. It's easy to make, tastes great, and leftovers store easy (if there are any). It's also so original and unique that it will astonish everyone you serve it to. It's impossible not to be impressed with a cake like this! -- posted by Lieutenant Ducky

Iced Oranges With Granita

A pretty little dessert! Great to serve on a hot day or after a summer barbeque.

I used navel oranges for mine - please note that if you use another type/size of orange, you may have to change the quantity of syrup/juice accordingly. You will probably end up with excess granita, but better too much than too little! -- posted by horseplay

Carrot Cake Ice Cream

This combines some of my favorite tastes - carrot cake with tangy cream cheese frosting & ice cream. This recipe is one that requires advance preparation of the nummy things to go into the Philadelphia-style ice cream base (named for the uncooked base not because of the cream cheese). With good mise en place this should come together nicely & be a star dessert. Found in the LA Times Food & Drink Weekly Guide.
***Assemble this to freeze several hours before serving. Take from freezer 15 minutes before scooping (gauge based on how warm your room is of course)****prep & cook time do not include chill & freeze time. I plan to chill base overnight to make life better. -- posted by Buster's friend

Tangy Frozen Lemon Yogurt

Found the secret to that special tangy twang that is hard to get at home - citric acid! Just a bit. The stuff in Fruit-Fresh. I know this recipe will be appreciated when it is just too danged hot to eat a rich ice cream but really, really want something frozen & decadent but refreshing. And I LOVE Greek yogurt & just about anything lemon. I plan to try this one with Splenda instead of the sugar as no cooking is involved. Cook time is freeze time. -- posted by Buster's friend

Roquefort Ice Cream With Pears

(Helado de Roquefort con Peras) Combining the cheese and dessert courses into one delicious package, cheese ice creams are featured on many modern Spanish menus. Blue cheese ice cream in particular is a tasty and terrific idea. While pears make perfect senes, the ice cream can also be paired with other fruit, especially figs, either fresh, roasted, or in a quick compote. Instead of Roquefort, you can substitute Gorgonzola. And try making the ice cream with a mild or aged goat cheese, too.
Sinfully Rich Fresh Strawberry Ice Cream

When my girls were little, we used to have "Ice Cream Parties" where the two little boys down the street would come over for fresh ice cream. This recipe is full fat...full calories...and tastes ever so good! You need a ice cream machine for this recipe. I used to keep my ice cream canister always in the freezer and have the right amount of strawberries chopped and placed in freezer bags for the winter months... when we wanted to pretend that it was summertime! I would take this strawberry cream mixture to dinner parties and curn up fresh ice cream for dessert...then have everyone moaning in bliss!!! This makes up alot of ice cream, so the whole recipe might not fit in some of the smaller canisters -- posted by Abby Girl

These cookies are a light thin snack. Since the dough needs to be refrigerated, you can prepare other food items or clean the house at the same time. Prep time includes refrigeration.

Caribbean Spice Islands Marinated Chicken by Clean Eating

Entered for safe-keeping for ZWT5. From Clean Eating, May/June 2009 issue. This is a more complex mixture of Caribbean spices and ingredients than "knock-your-socks-off" hot peppers and "suicide-spicy" jerk chicken.
The preparation is geared toward advance preparation and freezing of the marinade and marinated chicken (for 3-4 months), but I did not include freezing/thawing time in preparation time. For tropical fruit, use any combination of tropical fruit: pineapple, mango or papaya were suggested by Clean Eating. -- posted by KateL

Here is a recipe I found for a simple ice milk that can be tweaked with variations (add your favorite fruit, nut, etc.) This originally had more sugar, but I found it too sweet, and now the sugar matches this similar recipe for "Tahitian Vanilla Ice Milk" on this site. Cooking time is freezing time. -- posted by Ames Shaps

Easy Meatball Kebobs

I always have some cooked meatballs in my freezer so this is an easy recipe for me to make!. They look quite elegant and could be served to company any time. You will neeed 8 1" pieces of green pepper and 8 1" pieces of red pepper and 8 pieces on onion. I have simple said !/2 pepper and 1 onion to keep the ingredient list simple. If using Bamboo skewers soak for 45 minutes in water to prevent scorching. The cook time is apprx depending on your method of cooking and the size of your meatball. I used a griddler and it took 7 minutes, BBQ perhaps 15 minutes and broiling about 15 minutes 6" from the broiler. The meatballs are already cooked so it is just a matter of heating them through and getting them golden. The peppers will still be crunchy but hot through -- posted by Bergy

Frozen Layered Vanilla Raspberry Cake

From Taste of Home site, this was a huge hit when I served it to friends. Everyone loved it, but someone suggested it would be "over the moon" with a little chocolate. So next time, I'll probably replace one of the sorbet layers with chocolate ice cream or sorbet. Either way, it's easy and delicous as it stands. As written, it's 5 WW pts per serving.

However you decide to indulge in it, I hope you enjoy this wonderful mix just as much as I do.

Gazpacho Sorbet With Apple Aspic

Tomato Soup in an ice cream maker? This innovative twist on gazpacho would be an excellent first course in a tasting menu. The luscious coloured sorbet is served over a bed of diced apple aspic and is drizzled with high quality balsamic vinegar. This recipe is not for beginners or impatient cooks, however most of the work for this dish can be done ahead of time. The sorbet can be made 3 days ahead and stored, covered in the freezer. The aspic can be prepared up to 2 days ahead of service, covered and stored in the refrigerator.
Creamy Lemongrass Ice Cream

I came up with this recipe because I am constantly unsatisfied with the ice cream recipes out there. They are either to rich, to egg-tasting, or too grainy. This recipe has none of those undesired qualities. This smooth and creamy ice cream combines the exotic flavor of lemongrass with the familiar texture and sweetness of ice cream. The ice cream is neither to eggy, nor too buttery in part because of the use of non-fat condensed milk and regular cream. -- posted by Timothy Sakhuja

"just Plain" Vanilla Ice Cream

Although this is just plain vanilla ice cream, it will put any ice cream lover over the edge. It is an American style, meaning no eggs, which also means no cooking and a shorter prep time. But don't let the simplicity fool you. The secret to the exceptional vanilla flavor is the Pure Vanilla Bean Powder. Extract does not even come close, that is why I don't bother with mentioning it as a substitution. This is pure vanilla bean that has bean ground into a powder. It can be hard to find so here is the link for the Madecasse, the brand I use:

Homemade Soy Vanilla Ice Cream

Need a healthier alternative to regular ice cream that is easy to make? My family (including the meat and dairy lovers) loved this ice cream, and no one would have known that it didn't have milk or eggs!

You can top it however you want, and experiment with the ingredients (we've made blackberry ice cream, strawberry ice cream, healthy chocolate chip cookie dough ice cream, healthy or "fake" butterfinger ice cream), etc.! You can make blizzards (aka Frosty or shake) by briefly blending it a bit in a blender.
Ultimate Taquitos OAMC

These taquitos are perfect for a healthy lunch, snack, appetizer, or dinner. I love that you just pop them from freezer to baking pan for a last minute meal. They are our favorite OAMC meal and they disappear very soon after I load the freezer with them! The hot-oil dipping step makes the tortillas very easy to work with and also makes it so when you take them out of the freezer, all you have to do that night is toss them in the oven to heat -- no frying mess on eating night. I have learned to have extra tortillas and extra oil on hand so I don't have to run to the store to get more in case the batch goes further than I planned! -- posted by StephanieZ

Deep Freeze Latte

This is a copycat recipe of an outstanding coffee drink served in a famous bakery in Langkawi, Malaysia. Frozen coffee cubes melt in warm milk, chilling it up slowly, leaving you highly caffeinated and yet mellow. It's an excellent way to drink coffee in humid, tropical weather typical of South-East Asia. Preparation time is for freezing the coffee. I have found that coffee takes longer to freeze than water. -- posted by Hani Selamat

Frozen Garden Tomatoes for Winter Soups and Sauces

This is absolutely the easiest way to preserve all those tomatoes from your garden. You don't even need to peel them before freezing. Family friends in Northern Ontario used to do this but this method was found in Chatelaine Food Express Quickies. The servings depend on how many tomatoes you're freezing. Preparation time also depends on how many tomatoes you intend on freezing. -- posted by Dreamer in Ontario

C T's Ice Cream Cake -- Much Like D Q

A true-to-DQ version of the pricey ice cream cakes. This is more of a method, really, than a recipe. This is a close copy of the DQ cakes we enjoy, at a fraction of the cost, and with ingredient control. Feel free to substitute your own cake and icing. Make sure you have room in the freezer before starting assembly. I keep round cake layers on-hand in the freezer; you may need to make yours fresh.
